2 medium potatoes, peeled, cut into 1/4-inch dice
1 small onion, minced
1 celery rib, chopped
5 cups clam juice
1 cup water
1 tablespoon fresh thyme or 1 teaspoon dried thyme
1 tablespoon butter
1 tablespoon Worcestershire sauce
1/2 teaspoon salt (to taste)
fresh ground pepper (to taste)
2 cups clams, minced
4 cups whipping cream

Steps:

  • Combine potatoes, onion, celery, 1 cup of the clam juice, 1 cup water, thyme, butter, Worcestershire, salt and pepper to taste in stockpot or Dutch oven.
  • Heat to boil, stirring often.
  • Reduce heat, and simmer until potatoes are soft, about 20 minutes.
  • Stir in clams and cook for 5 minutes; add the remaining 4 cups of clam juice and cream to clam mixture.
  • Heat to simmer, about 10 minutes. Do not boil.
  • Serve with oyster crackers floating on top.

Number Of Ingredients 18

3 to 4 tablespoons olive oil
2 cups sweet Vidalia or yellow onions, peeled and diced small (about 1 medium/large onion)
1 cup carrots, peeled and diced small (about 2 large carrots)
1 cup celery, diced small (about 2 stalks)
4 garlic cloves, finely minced
1/4 cup all-purpose flour
32 ounces (4 cups) low-sodium chicken broth
3 cups milk, or as needed (I use Silk Unsweetened Cashewmilk)
3 cups Russet potatoes, peeled and diced into 1/4-inch cubes (about 3 large potatoes)
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon salt, or to taste
1 teaspoon pepper, or to taste
pinch cayenne pepper, optional and to taste
2 cups cooked shredded rotisserie chicken (use storebought to save time)
3/4 cup corn (I used frozen and added it straight from the freezer)
8 ounces extra-sharp cheddar cheese (grate it yourself, pre-grated cheese in plastic bags is resistant to melting)
1/3 cup fresh flat-leaf parsley leaves, finely chopped

Steps:

  • To a large Dutch oven or stockpot, add the oil and heat over medium-high heat to warm.
  • Add the onion, carrots, celery, and sauté for about 7 to 9 minutes, or until vegetables begin to soften. Stir intermittently.
  • Add the garlic and sauté for another 1 to 2 minutes.
  • Add the flour and whisk constantly until lightly browned, about 1 minute.
  • Add the chicken broth, milk, and whisk constantly until slightly thickened, about 1 to 2 minutes.
  • Add potatoes, thyme, oregano, salt, pepper, optional cayenne, and bring to a boil. Allow chowder to boil fairly rapidly for about 15 minutes or until potatoes are fork-tender; stir intermittently. At any time while the chowder is boiling, if the overall liquid level is lower than you like and the chowder is too thick, adding a cup of extra milk is okay. At the end you will adjust the seasoning levels.
  • After potatoes are soft, add the chicken, corn, and boil for 1 to 2 minutes to warm the chicken and corn through.
  • Reduce the heat to low, add the cheese slowly, and stir continuously until melted and combined.
  • Add the parsley and stir to combine.
  • Taste chowder and add salt to taste. I added another teaspoon but this will vary based on how salty the brand of chicken broth used is, how salty the rotisserie chicken and cheese are, and personal preference. Make any necessary seasoning adjustments (i.e. more salt, pepper, herbs, etc.) and serve immediately.

3/4 cup(s) diced onions

1/4 pound(s) smoked bacon
2 cup(s) vegetable broth
1/2 cup(s) butter
2 teaspoon(s) garlic powder
1/2 cup(s) flour
4 cup(s) milk
3 cup(s) shredded chedder cheese
3 cup(s) shredded mozzarella cheese
2 can(s) corn.
1/2 cup(s) sliced mushrooms

Steps:

  • I used a 4 qt cast iron dutch oven for this.cut bacon into 1/2 inch peices.Fry bacon in dutch oven for 4-5 min..Add potatoes,carrots,cellery,onions,a 1/2 cup of sliced mushrooms,salt,pepper,and vegetable stock or broth.cover and cook for 20 to 25 minutes.
  • In a bowl mix milk and flour until smooth...Add to vegetables and butter..Cook stirring until thickend..Now add cheese and stir until melted..Add corn and simmer for 20 to 25 minute.. serve with texas toast...

1 cup sliced celery
3 1/2 whole sliced scallions
4 cups diced red potatoes, peeled
1 can chicken broth (10 oz)
1/2 cup flour
2 cups milk
salt, pepper to taste
1 dash of fresh ground nutmeg
3/4 cup dry white wine
3/4 cup cheddar cheese, shredded
3/4 cup swiss cheese, shredded
cooking spray

Steps:

  • spray a dutch oven with cooking spray place over medium heat and add carrots, celery, scallions and saute until softened add potatoes and chicken broth bring to boil, cover and simmer for 25 minutes until potatoes are soft place flour in a bowl, add milk and blend with a whisk, add to pot season with salt, pepper, nutmeg add white wine cook for a minute to blend flavors.
  • remove from heat, add cheeses stirring to melt.

10 bacon strips, diced
1 large onion, chopped
1 cup diced carrots
3 tablespoons all-purpose flour
3 cups whole milk
1-1/2 cups water
2-1/2 cups cubed potatoes
1 can (15-1/4 ounces) whole kernel corn, drained
2 teaspoons chicken bouillon granules
Pepper to taste
3 cups shredded cheddar cheese
2 cups cubed fully cooked ham

Steps:

  • In a Dutch oven, cook the bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. In the drippings, saute onion and carrots until tender. Stir in flour until blended. Gradually add milk and water. Bring to a boil; cook and stir for 2 minutes or until thickened. , Add the potatoes, corn, bouillon and pepper. Reduce heat; simmer, uncovered, for 20 minutes or until potatoes are tender. Add cheese and ham; heat until cheese is melted. Stir in bacon.
