Blueberry Baked Brie -a quick and simple appetizer recipe for savory gooey melted cheese and sweet blueberries.

1 16 oz wheel of brie
1 cup blueberries (fresh or frozen)
1/4 cup honey
1/4 cup water
1 teaspoon lemon zest
crackers (french baguette slices or other fruit slices for serving)

Steps:

  • BRIE: Preheat oven to 350 degrees F. Cut the top off of your brie wheel (about 1/4' off the top) and place on a baking dish. Bake for 12-15 minutes or until the center is soft.
  • BLUEBERRY SAUCE: Combine blueberries, honey, water and lemon zest in a medium sized saucepan. Bring to a boil, reduce heat and simmer for 10 minutes. Pour over the baked brie and serve immediately with your choice of crackers, fruits and bread.

Looking for a quick and easy appetizer/snack made with minimal effort that will WOW your guests? These bites are buttery, creamy, cheesy, and balanced out with tart lemon curd and a sweet pop of flavor from blueberries. Finger food at its best!

cooking spray
1 sheet frozen puff pastry, thawed
½ (8 ounce) round Brie cheese, chilled
⅓ cup lemon curd
24 each fresh blueberries
confectioners' sugar for dusting
24 small fresh mint leaves for garnish (optional)

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a mini muffin tin with cooking spray and set aside.
  • Unroll thawed puff pastry sheet on a lightly floured work surface. Roll into a large rectangular sheet, and using a pizza cutter or knife, cut into 24 equal pieces. Press each piece into a muffin cup, and use a fork to prick the bottom several times.
  • Cut Brie cheese into 24 small cubes, and place a cube into each muffin cup. Top each with about 1/2 teaspoon of lemon curd.
  • Place muffin tin in the preheated oven and bake until the pastry is puffed and the corners turn golden brown, 12 to 14 minutes.
  • Remove from the oven and cool in the pan for about 5 minutes. Remove bites to a serving plate, top each with a blueberry, dust with confectioners' sugar, and garnish with a small mint leaf, if desired.
  • Enjoy warm or at room temperature.

I like having a baked brie at parties, always nice to find a new way to do it. This came via a demo table at my local grocery store a few years back. Dried blueberries can be quite expensive, I wonder if you could just dry your own in the oven. They should be easy enough to find in the bulk section and they do 'make' the dish so you can't leave them out. Nice for a special occassion (when calories don't count!). Serve with a selection of crackers or sliced baguette.

1/2 cup brown sugar
1 cup chopped pecans
1 cup dried blueberries
500 g brie round
water

Steps:

  • Preheat the oven to 375 degrees.
  • Combine the brown sugar, pecans and blueberries in a bowl. Sprinkle the mixture with just enough water to moisten.
  • Cut the top off the brie and score lightly in a criss-cross pattern. Place the brie in an oven safe shallow dish or bowl.
  • Place the blueberry mixture over the top of the brie. Bake uncovered for about 30 minutes until the cheese is bubbly and heated through (test in teh middle as you would a cake, it 'should' come out gooey.
  • Serve right out of the oven, lifting the brie onto a serving platter and surrounding it with crackers or bread.
  • Microwave option: microwave on high for 3 minutes, reheat as necessary.
