Warm Blueberry Brie...we have this every year at our work's Christmas party. It is so tasty, it's addictive! You can also make this with raspberry sauce or sun dried tomatoes, both of which taste excellent. This will cook in the microwave in about 3 minutes. Serve with warm French baguette slices!

This is from Arielle's Archives, but isn't on the site anymore, and it is wonderful to serve as an appetizer. I used dried onions and bottled grated ginger to save time and it is still very good. Enjoy!

1 cup blueberries (fresh or frozen)
2 tablespoons finely chopped onions (or 1 Tbsp dried onion)
1 1/2 tablespoons grated fresh ginger
1/4 cup brown sugar, packed
2 tablespoons cider vinegar
1 1/2 tablespoons cornstarch
1/8 teaspoon salt
3 inches cinnamon sticks
8 -12 ounces round brie cheese

Steps:

  • Combine all ingredients, except Brie, in a medium saucepan.
  • Bring to a boil, at medium heat, and boil for 1 minute, stirring constantly to avoid sticking or burning.
  • Remove from heat, discard the cinnamon stick and chill in a covered container until flavors are well blended and mixture is cold.
  • Preheat oven to 350 degrees.
  • Bake Brie on an ungreased cookie sheet for 10 to 12 minutes, or until soft.
  • Place on a serving plate and top with the cold blueberry chutney.
  • Serve with crackers.

Looking for a quick and easy appetizer/snack made with minimal effort that will WOW your guests? These bites are buttery, creamy, cheesy, and balanced out with tart lemon curd and a sweet pop of flavor from blueberries. Finger food at its best!

cooking spray
1 sheet frozen puff pastry, thawed
½ (8 ounce) round Brie cheese, chilled
⅓ cup lemon curd
24 each fresh blueberries
confectioners' sugar for dusting
24 small fresh mint leaves for garnish (optional)

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a mini muffin tin with cooking spray and set aside.
  • Unroll thawed puff pastry sheet on a lightly floured work surface. Roll into a large rectangular sheet, and using a pizza cutter or knife, cut into 24 equal pieces. Press each piece into a muffin cup, and use a fork to prick the bottom several times.
  • Cut Brie cheese into 24 small cubes, and place a cube into each muffin cup. Top each with about 1/2 teaspoon of lemon curd.
  • Place muffin tin in the preheated oven and bake until the pastry is puffed and the corners turn golden brown, 12 to 14 minutes.
  • Remove from the oven and cool in the pan for about 5 minutes. Remove bites to a serving plate, top each with a blueberry, dust with confectioners' sugar, and garnish with a small mint leaf, if desired.
  • Enjoy warm or at room temperature.

1 cup blueberry jam
¼ cup maple syrup
¼ cup water
3 tablespoons bourbon
½ teaspoon vanilla extract
⅛ teaspoon kosher salt
1 pinch freshly ground black pepper
2 wheels brie cheese
60 butter crackers
3 large eggs, beaten
1 cup all purpose flour
4 cups vegetable oil, for frying
kosher salt, to taste
Bacon Jam

Steps:

  • Make the blueberry maple bourbon sauce: In a small saucepan, stir together the blueberry jam, maple syrup, and water. Bring to a simmer over medium heat and cook until slightly thickened, about 5 minutes. Add the bourbon and continue simmering for 1-2 minutes, until the alcohol cooks off. Remove the pot from heat and stir in the vanilla, salt, and pepper. Set aside until ready to serve. If making ahead of time, cover and refrigerate for up to 1 month. Re-warm before serving.
  • Make the Brie sticks: Line a baking sheet with parchment paper.
  • Cut each Brie wheel into ½-inch-wide sticks. Transfer to the prepared baking sheet and refrigerate while you prepare the breading station.
  • Add the butter crackers to a food processor and process into fine, uniform crumbs. Transfer to a wide, shallow bowl.
  • Add the eggs and flour to 2 separate wide, shallow bowls.
  • Dredge each Brie stick in the flour to coat completely. Coat in the egg, ensuring there are no visible dry spots, then roll in the cracker crumbs to coat. Dip again in the eggs and cracker crumbs. Freeze the Brie sticks for at least 30 minutes, up to overnight.
  • Heat the vegetable oil in a wide, shallow pan over medium heat until the temperature reaches 375˚F (190˚C). Set a wire rack over a baking sheet.
  • Working in batches to avoid overcrowding the pan, fry the Brie sticks in the hot oil until golden brown, 1-2 minutes. Transfer to the wire rack and immediately sprinkle with salt.
  • Serve the Brie sticks hot with the warm blueberry maple bourbon sauce and bacon jam alongside for dipping.

These are easy and simple to make with store bought miniature phyllo tartlets. In a pinch, you can make your own phyllo cups using phyllo sheets and a mini muffin pan.

24 frozen miniature phyllo tart shells
1/4 cup blueberries or 1/4 cup blackberry preserves
1/3 cup coarsely chopped walnuts, toasted
1 (8 ounce) package brie cheese, rind removed cut into 24 chunks
fresh blueberries (to garnish)

Steps:

  • Preheat oven to 350*.
  • Bake coarsely chopped walnuts in an ungreased shallow pan for 6 to 10 minutes, stirring occasionally, until golden brown.
  • Grease or spray 2 mini muffin pans and place the phyllo cups inside.
  • Spoon 1/2 teaspoon of preserves into the tartlets.

Salad:
handful of organic greens per person
two handfuls of extra arugula
1 large avocado quartered and sliced
1 cup brie cut into 1 x 1 1/2" lengths
1 to 1 1/2 cups washed and dried fresh blueberries
1 cup coarsely chopped lightly toasted pecans
Dressing:
4 tablespoons grape seed oil (any light vegetable oil can be used but olive oil is too heavy)
2 tablespoons raspberry vinegar
1 medium sized shallot, very finely diced
1 teaspoon white sugar
1/2 teaspoon salt or to taste
freshly ground pepper

Steps:

  • Make the dressing by shaking all ingredients in a glass jar. To marry the flavors, make the day before. Layer the ingredients on a platter or a large flat dish in the order given above. Toss gently with enough dressing to lightly coat. Enjoy!

6 oz medium soft Brie

2 tablespoon extra virgin olive oil
pinch of sugar
1/4 cup fresh orange juice

  • Seperate and wash butter lettuce - put on towel to dry. Wash blueberries in colander or seive, let drain thorougly. Cut Brie into cubes, leaving rind on. Pat lettuce completely dry and put on two individual plates. If necessary gently pat blueberries dry and gently toss with the Brie cubes. Put this mixture on top of the lettuce.. In a measuring cup put orange juice, oilve oil and pinch of sugar and stir until blended. Either pour, sparingly, over the brie and blueberries or serve on the side.

The saying "The whole is greater than the sum of its parts" was written for this salad. It seems like a simple salad with very few ingredients, but something happens when they are all put together. I can't explain it so you'll have to trust me on this one. It is absolutely outstanding.

Number Of Ingredients 8

1 crusty French bread roll (about 5 or 6 inches long)
2 ounces Brie cheese
2 tablespoons honey
2 tablespoons white wine vinegar
1/4 cup canola oil
Salt and pepper
6 ounces spring greens
1/2 pint blueberries (about 1 cup)

Steps:

  • Preheat the broiler to high heat.
  • Cut the bread into eight 1/2-inch-thick slices and spread some of the Brie on each slice. Arrange on a baking sheet and place under the broiler for 2 to 3 minutes, until the cheese is soft and the bread is light golden brown on the edges.
  • Combine the honey and vinegar in a small bowl and slowly add the oil, mixing briskly with a whisk or fork. Season with salt and pepper.
  • Place the salad greens and blueberries in a large bowl and add the vinaigrette. Toss until the salad is thoroughly coated.
  • Divide the salad between four bowls or plates and serve with the Brie croutons on the side.
  • A little blueberry trivia: Blueberries have more antioxidants than almost any other fruit or vegetable. One of nature's few blue foods, blueberries are one of the few berries native to North America. Blueberries were an important staple food of Native Americans. They dried and added them to any food that needed extra flavor and made a strong tea from their roots to use as a relaxant during childbirth.
