2 cups fresh blueberries
2 bananas, mashed
2 large eggs
2 tablespoons flax seed meal
2 tablespoons wheat germ
1 cup all-purpose flour
1 cup rolled oats
1 cup whole milk
½ cup white sugar
½ cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ cup packed brown sugar
½ cup chopped pecans
2 tablespoons all-purpose flour
2 teaspoons ground cinnamon
2 tablespoons unsalted butter, melted
1 cup confectioners' sugar
3 teaspoons whole milk, or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Combine blueberries, bananas, eggs, flax seed, and wheat germ in a large bowl; mix by hand with a wire whisk until combined. Add flour, oats, milk, sugar, oil, vanilla extract, baking powder, baking soda, and salt; gently mix by hand for 2 minutes until thoroughly combined.
  • Combine brown sugar, pecans, flour, and cinnamon for the topping in a medium bowl; mix with a fork until combined. Add melted butter; stir well.
  • Pour 2/3 of the cake batter into the prepared pan and sprinkle with 1/2 of the topping. Gently ladle the rest of the cake batter over top, and sprinkle with remaining topping.
  • Bake in the preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until a toothpick inserted into the center comes out clean, 30 to 35 minutes more. Remove from the oven and allow to cool for 15 minutes.
  • While the cake is cooling, combine confectioners' sugar and milk in a bowl. Whisk to desired consistency, adding more milk if necessary. Drizzle over warm cake and serve immediately.

2 large very ripe bananas
1/2 cup dark brown sugar
1/4 cup applesauce
2 eggs
1 cup all-purpose flour
3/4 cup ground almond meal
1 tablespoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
2 large golden delicious apples, sliced
1/4 cup honey
1 tablespoon melted organic butter, for greasing
3/4 cup frozen blueberries

Steps:

  • Preheat oven to 400 degrees.
  • Arrange sliced apples on a baking sheet and drizzle honey over them. Bake at 400 degrees for 10-15 minutes until apples are moist and tender.
  • Remove apples from the oven and lower the oven temperature to 350 degrees.
  • In a large bowl, mash bananas and brown sugar until creamy, don't worry if there are a few lumps.
  • Add the apple sauce and eggs and beat with a whisk until well combined.
  • Add the flour, almond meal, baking powder, cinnamon, nutmeg, and ginger; use a spatula to fold together.
  • Grease the cake pan with melted butter and arrange one layer of apple slices on the bottom of the pan.
  • Pour half the banana batter into the pan, and arrange a second layer of apples around the outside edges.
  • Spoon frozen blueberries into the center area of the cake and gently cover with the remaining batter.
  • Bake the cake in 350 degree oven for about 1 hour; check it at 45mins.
  • Serve with natural yoghurt and a drizzle of honey.

HEALTHY BLUEBERRY AND BANANA CAKE

This is based on another recipe which I modified for our taste. It's very moist with a great banana flavour (as long as you use really overripe ones). Because there is not a lot of sugar, most of the sweetness comes from the bananas; it is not intended to be an overly sweet cake so please don't give this recipe a poor review simply because you are expecting it to be sweeter. Having said that, it still makes a really nice afternoon tea while being quite low in saturated fat for a cake and full of fruit. You can try adding more sugar if you like but of course then it won't be as healthy. :)

400 g bananas, very ripe
2 cups self-raising flour
1 teaspoon baking powder
1/3 cup brown sugar
1/3 cup sunflower oil or 1/3 cup low-fat butter
1/3 cup low-fat milk
2 eggs
1 punnet fresh blueberries

Steps:

  • Preheat your oven to 180°C Line the bottom of a 20cm deep round cake pan with baking paper, then grease it.
  • Mash bananas with a fork.
  • Sift baking powder and flour into a bowl and then stir in the sugar.
  • Mix the oil (or butter, if using), milk, bananas and eggs in another bowl, then mix with the flour-sugar mixture.
  • Pour half of the batter into the cake pan, spinkle half the blueberries over the top, then top with the rest of the batter.
  • Decorate the cake with the remaining blueberries and then bake in the oven for 50-55 minutes.
  • Allow the cake to cool in the pan for 10-15 minutes, then gently turn out onto a rack to finish cooling.

1 cup zucchini, shredded
1 cup blueberries
1 cup butter, melted
2 teaspoons vanilla

Steps:

  • Preheat oven to 350 degrees F. Grease an 11 x 7-inch square baking pan with oil In a medium bowl, stir together 2 1/2 cups of the pastry flour, sugar, baking powder, baking soda and salt. In a large bowl, whisk together the egg, buttermilk, 2 tablespoons melted butter and vanilla until smooth. Stir in the mashed bananas. Gradually add in the dry ingredients until just combined. 3 T flour
1/4 c butter

Steps:

  • Preheat oven to 350 degrees. Mash bananas in mixing bowl. Add sugar, eggs, vanilla and oil. Mix dry ingredients together and add to banana mixture, alternately with O.J.. Add blueberries. Pour in greased 8" x 8" well greased and floured pan. Mix brown sugar, flour and butter together, it should be consistency of coarse meal. Sprinkle on top of batter. Bake 45-55 minutes.

BANANA BLUEBERRY UPSIDE-DOWN CAKE

This is a story of I have three bananas that I need to use and I'm tired of banana bread. Was thinking hard about what I could do that would be completely different and avoid having to go to the store. It's blueberry season so I decided to combine the two and substitute for the pineapple in an upside-down cake recipe. The result is beautiful and delicious.

Steps:

  • Melt butter in a large (11 in.) cast iron skillet on medium heat. Add blueberries, 2 sliced bananas, 1 tsp vanilla and brown sugar and stir together until everything is coated and bubbly. Reduce heat to medium-low and simmer while you mix up the cake ingredients.
  • Preheat oven to 375 degrees. Whip together the mayonnaise, milk, 1 tsp vanilla, eggs and 1 mashed banana until it is smooth and there are no lumps. Add cake mix and whip on medium speed for 1 minute. Turn mixer up to high and whip for 2 minutes.
  • Mix one half cup blueberries with flour and stir until blueberries are coated. Add blueberries to the cake mixture and gently stir until evenly distributed. Do not be too vigorous, the blueberries will distribute more evenly if you keep it gentle.
  • Gently pour cake mixture over the blueberries and bananas in the cast iron skillet, being careful not to stir up the bottom. Make sure cake mix is all the way to the sides and even all the way around. Bake for 35 to 45 minutes. Remove from oven and cool on a rack. Loosen the sides and then Invert the pan on platter and let sit for a minute or two. Lift off the skillet.
  • Glaze: Stir together all ingredients till smooth. You can adjust the amount of cream till desired consistency. Drizzle over cake and it's ready to serve with some whipped cream.

BANANA, BLUEBERRY AND CHOCOLATE CAKE

My family love this cake and the actual mixture is so quick, baking time is longer but you can go off and do something else meanwhile!

Steps:

  • Set the oven to 140/120 c fan and grease your cake pan
  • Melt the milk chocolate for the cake and pour into a circle (smaller than your pan) onto a baking sheet and freeze until set (1 hour)
  • Whilst your chocolate is setting make the batter: cream the butter and sugar until light and fluffy
  • Add the eggs one at a time then mix in the flour
  • Now stir in the baking powder, vanilla and blueberries (dust the blueberries with flour so they don't sink to the bottom)
  • In a seller are bowl mash the bananas with a fork and then add to the batter
  • Mix in the white chocolate then cool in the fridge for the rest of the time your milk chocolate circle takes to set
  • Pour half the batter into your cake pan and then place the chocolate circle on top
  • Pour the rest of your batter on top of the circle and put into the oven
  • Cook for 1 3/4 hours or until your cake tester comes out clean (if your mixture is very heavy or wet place some foil on top of the pan as it might start to burn whilst baking if it takes longer)
  • Whilst cooling heat but DO NOT BOIL the measured double cream and pour over the remaining milk chocolate whilst hot
  • Place a plate over the cream and chocolate and leave for ten minutes
  • Stir the cream and chocolate until it forms a ganache and drizzle over your cake in any pattern (I chose zig zags)
  • Vigorously whisk the remaining cream if using double until stiff peaks form, if using whipped slip to step 15
  • Pipe or squirt your cream on top of the cake in little peaks around the sage then add a blueberry or banana slice if desired

1 1/2 c canola oil
2 1/2 c sugar
3 eggs
3 c flour (all purpose) or 2 cups ap flour and 1 cup oat flour
1 tsp baking soda
3/4 tsp salt
1/2 c buttermilk
2 ripe bananas mashed
3/4 c blueberries, frozen or fresh
1 1/2 tsp vanilla
1 c pecans , chopped, optional

Steps:

  • 1. Spray and flour cake baker. I used a bundt, but you could also do cupcakes, (will make 24), or make it in a loaf pan. It will take 2 loaf pans.
  • 2. In mixing bowl combine oil, sugar, eggs
  • 3. In separate bowl sift together flour, baking soda, salt
  • 4. Add buttermilk and flour mixture to oil mixture. Alternating 1/2 buttermilk then 1/2 flour mixture.
  • 5. Fold in bananas
  • 6. Add vanilla
  • 7. Toss blueberries with 1 tablespoon flour then fold into batter.
  • 8. Bake on 350* for 35-40 minutes (for bundt) or until a cake tester comes out clean.
