Homemade peach or pear jam. Recipe taken from the Ball Blue Book of Preserving. Yields about 8 half-pints (I got slightly more).

1 quart peaches (peeled, pitted or cored, and finely chopped, 4 cups equals 1 quart or about 5 pounds peaches or pear) or 1 quart pear (peeled, pitted or cored, and finely chopped, 4 cups equals 1 quart or about 5 pounds peaches or pear)
7 1/2 cups sugar
1/4 cup lemon juice
1 (3 ounce) envelope liquid pectin

Steps:

  • Combine fruit, sugar and lemon juice in a large saucepan. Bring slowly to a boil, stirring until sugar dissolves.
  • Stir in liquid pectin. Return to a rolling boil. Boil hard 1 minute, stirring constantly.
  • Remove from heat. Skim foam if necessary.
  • Ladle hot jam into hot jars, leaving 1/4-inch headspace. Adjust two-piece caps.
  • Process 10 minutes in a boiling-water canner. (Note: Add appropriate additional processing time for high altitudes).
  • Recipe variation:.
  • Add 1 teaspoon whole cloves, 1/2 teaspoon whole allspice and 1 cinnamon stick tied in a spice bag to jam during cooking. Remove spice bag before filling jars.

12-ounce New York strip steak
Salt and freshly ground black pepper
Rosemary Infused Olive Oil, recipe follows
2 peaches, halved and pitted
4 cups mesclun greens (avoid radicchio)
2 tablespoons chopped fresh chives
3 tablespoons chiffonade basil
1 tablespoon chopped tarragon
Creamy Blue Cheese Dressing, recipe follows
2 1/4 cups extra-virgin olive oil, divided
3 fresh rosemary sprigs
1/2 pound crumbled blue cheese, plus 1/4 pound for garnish
3/4 cup sour cream
1/2 lemon, juiced
2 tablespoons red wine vinegar
Pinch cayenne pepper
1 tablespoon minced chives

Steps:

  • Pat-dry the steak, season with salt and pepper, and place in a shallow glass pan. Pour 2 cups rosemary oil over steak, cover, and refrigerate for several hours. Turn the steak occasionally to coat both sides. Allow steak to come back to room temperature before grilling. Reserve 1/4 cup oil. Place a ridged grill pan over moderately high heat until very hot. Season the steak again and grill steak about 5 minutes per side for medium rare. Remove steak to a cutting board and let stand 10 minutes before cutting in slices.
  • Brush the flesh of the peaches with remaining rosemary oil. Place cut side face down on the hot grill pan for 3 minutes. Turn over and grill the other side just for 1 minute to soften. Remove and slice peaches into wedges. Toss the greens and herbs together and divide among plates. Fan the steak slices and peach wedges on top. Drizzle the dressing over steak and peach salad, garnish with remaining 1/4 pound crumbled blue cheese. Season with freshly cracked black pepper and serve.
  • To prepare the rosemary infused olive oil: Warm oil and rosemary over low heat in a small saucepan. Allow to steep for 8 minutes. Remove from heat and cool to room temperature.
  • To prepare the creamy blue cheese dressing: Whisk together 1/2 pound blue cheese with sour cream, lemon, vinegar and cayenne until smooth. Fold in chives, cover, and chill until ready to serve.

6 firm peaches, pitted and quartered
1/4 cup plus 1 tablespoon extra-virgin olive oil
1 clove garlic, minced
1/4 cup red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
Kosher salt
1/2 cup Marcona almonds
3 to 4 cups baby arugula
1 cup of your favorite blue cheese (I'm currently obsessed with the smoked blue from Wisconsin)

Steps:

  • Heat the grill to medium or the oven to 250 degrees F.
  • Add the peaches to a large bowl, drizzle with 1 tablespoon olive oil and toss to coat. Grill for 1 minute per side or warm for 2 minutes in the oven.
  • Meanwhile, make the dressing. In a small bowl, whisk together the garlic, vinegar, mustard, honey and remaining 1/4 cup olive oil. Season with salt.
  • Gently mix together the warm peaches, almonds, arugula and blue cheese in a large mixing bowl. Toss with the dressing.
  • Cook's Note: I love this served right on top of a steak but it is also great as a side salad.

2 tablespoons baking powder
1 teaspoon salt
1 pounds 4 ounces sugar
9 ounces, scant, non-hydrogenated vegan margarine (recommended: Earth Balance)
1/2 cup water
1 tablespoon egg replacer (recommended: Ener-G)
2 tablespoons ginger juice, commercial or fresh
1 1/2 cups plus 2 tablespoons soy milk
1 tablespoon vanilla extract
1/2 cup minced ginger, packed (about 6 ounces whole, unpeeled ginger root)
2 cups prepared peach puree, store-bought
3 tablespoons sugar
1 tablespoon water or brandy
1 tablespoon cornstarch
12 ounces non-hydrogenated vegetable shortening (recommended: Earth Balance)
4 ounces non-hydrogenated vegan margarine (recommended: Earth Balance)
6 ounces blueberry puree, store-bought
1 teaspoon vanilla extract
1 pound 13 ounces powdered sugar
2 tablespoons blueberry juice concentrate
Fresh blueberries, for garnish, optional

Steps:

  • For the cupcakes: Preheat the oven to 325 degrees F. Line standard cupcake pans with 36 standard cupcake liners.
  • Sift the flour, baking powder, and salt into a medium bowl. Set the bowl aside. In the bowl of an electric stand mixer, cream the sugar and margarine with the whisk attachment, about 5 minutes. Scrape down the sides and bottom of the bowl. In a small bowl or cup, combine the water and egg replacer and stir to dissolve the egg replacer. Add the egg replacer to the sugar and mix until combined. Scrape the bottom of the bowl. Add the ginger juice and mix until combined. In a small bowl, combine the soy milk and vanilla and set aside. Turn the mixer speed to low and slowly add the dry ingredients and the soy milk, alternating between the 2, ending with the soy milk. Fold in the minced ginger by hand into the batter.
  • Fill the cupcake liners 3/4 full with batter and bake until a toothpick inserted into each cupcake comes out clean, 19 minutes. Cool the cupcakes completely.
  • For the filling: In a medium, heavy-bottomed saucepan, stir together the puree and sugar. Heat on medium-high heat until the mixture begins to bubble around the edges. In a small bowl, mix the water or brandy and cornstarch into a slurry. Slowly add the cornstarch mixture to the puree while whisking. Cook for 2 more minutes while stirring. Let cool completely. Put the cooled peach filling into a piping bag and cut 1/2 inch off the tip.
  • For the frosting: In the bowl of a stand mixer, whip the shortening and margarine until completely combined. Scrape the bottom of the bowl to ensure that all the ingredients are mixed thoroughly. Add the blueberry puree and vanilla and mix until incorporated. Scrape the bottom of the bowl. On low speed, slowly add the sugar a little at a time. Add the blueberry juice and mix to combine. Scrape the bottom of the bowl and mix on medium-high speed until all the ingredients are combined and the frosting is fluffy, about 2 minutes. Put the frosting into a pastry bag and cut 1/2 inch off the tip.
  • To assemble: With a plastic drinking straw or a small paring knife, make holes in the center of each cupcake. Squeeze the peach filling into the center of each cupcake until filled but not overflowing, about 1 tablespoon per cupcake. Pipe a dollop of blueberry frosting onto each cupcake. Garnish with a few fresh blueberries, if using.

2 tablespoons fresh lemon juice
2 teaspoons honey
4 slices country-style bread
6 tablespoons olive oil, divided
Kosher salt
4 ounces blue cheese (such as Roquefort or Saint Agur), room temperature
2 cups (loosely packed) trimmed purslane or baby arugula
Freshly ground black pepper

Steps:

  • Using the tip of a paring knife, score an X in the bottom of each peach. Cook in a large saucepan of boiling water just until skins begin to peel back where cut, about 1 minute.
  • Using a slotted spoon, transfer to a bowl of ice water; let cool. Peel; cut over a small bowl into wedges, collecting juices. Add lemon juice and honey and toss to combine.
  • Toast bread, brush with 2 tablespoons oil, and season with salt. Spread cheese on toast and top with peaches, leaving juices behind. Whisk 4 tablespoons oil into juices. Toss purslane with enough dressing to lightly coat in a bowl; season with salt and pepper. Arrange over toasts.

2 turkey sausage patties, diced

1/2 tsp. kosher salt
1/2 cup diced fresh peaches
1/4 cup blue cheese crumbles

Steps:

  • Preheat oven to 400°F.

This recipe can be used with the fruit of your choice, with or without the crumb topping and/or the nuts. But I think the salted nuts really add a lot - they probably were the reason for the blue ribbon at this year's fair. Try apple pie filling with walnuts too!

1 can(s) 29 oz sliced peaches (storebought or homecanned) or about 6 fresh
1 stick butter
1 c flour
1 c sugar
1 Tbsp baking powder
1/8 tsp salt
1 c milk
CRUMB TOPPING
1/2 c flour
1/4 c brown sugar
1/2 stick butter
1/4 tsp ground nutmeg
1 tsp vietnamese cinnamon
SALTED NUT TOPPING
1/2 c raw pecans or hickory nuts
1/8 tsp coarse sea salt

Steps:

  • 1. Melt a stick of butter in a 9 x 13 pan.
  • 2. Prepare your basic batter - 1C flour 1C sugar 1T baking powder 1/8 tsp salt mix with whisk then stir in 1C milk. Pour this over the butter - Do not stir!
  • 3. Prepare your peaches any way you like. Canned peaches can be drained and used straight from the can, though fresh sliced (peeled) peaches are better. If you use canned peaches you can boil the syrup down (or add cornstarch) to thicken it and put that over the peaches when you add them to the pan on top of the batter. Do not stir the peaches into the batter!
  • 4. Put in a preheated 350 degree oven for about 20 minutes until it rises a bit, then sprinkle with cinnamon-sugar and continue baking about 20 minutes more for your basic cobbler.
  • 5. Or, for a blue-ribbon winning (President's Choice 2015) dessert, instead of the cinnamon sugar prepare a crumb topping and sprinkle the half-baked cobbler with that, then with nuts (your choice) and sea salt. Bake until a toothpick inserted in the center of the pan comes out clean.

I took my grandmothers recipe and tweeked it just a little.

3 can(s) peaches in light syrup drain 1 can (frozen peahes can be used but add more sugar to taste
1/2 stick butter
1 1/2 c sugar
1/4 tsp salt
1 tsp pure vanilla extract
1 tsp almond extract
2 tsp cinnamon (save 1 tsp for dusting the bottom of the pan
1/4 c flour
1 pkg refrigerated pie crust

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Pour all ingredients except the flour and 1 tsp. of cinnamon in a 2 quart sauce pan. Draining 1 can of peaches. Simmer on low until butter and sugar have melted.
  • 3. While that simmers, spray the baking dish with butter flavored Pam and lightly dust it with 1 tsp. cinnamon.
  • 4. Roll out 1 sheet of dough and line your pan. Be sure to stretch it to fit the shape of your pan.
  • 5. Remove the filling from the stove and pour it into your crust. It will be really soupy so sprinkle the flour into the pan and lightly stir. You will have small lumps but these will break during baking.
  • 6. Roll out your second crust and place it on top to close your cobbler. Pierce the middle with a sharp knife to vent.
  • 7. Bake for 35-45 minutes, or until top crust is golden brown.
  • 8. Glaze the top crust with melted butter. Let it cool for 15-20 minutes and serve!

Peel 1 small watermelon (about 3 pounds)
2 large ripe peaches
1 minced garlic clove
2 tablespoons sherry vinegar
salt and pepper
adding a few ice cubes
a few crumbles of blue cheese
Fresh tarragon
a drizzle of olive oil

Steps:

  • Peel 1 small watermelon (about 3 pounds), and cut the flesh into large chunks. Put them in a food processor along with 2 large ripe peaches, chopped, 1 minced garlic clove, 2 tablespoons sherry vinegar, salt and pepper. Pulse the mixture, adding a few ice cubes, one at a time, if necessary, to get the machine going. Chill in the fridge. After pouring the soup into bowls, top with a few crumbles of blue cheese. Garnish: Fresh tarragon and a drizzle of olive oil.

1/2 cup sugar
3 1/2 tablespoons quick-cooking tapioca
1 teaspoon lemon juice
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/2 cup pecan pieces
4 tablespoons cold unsalted butter
1 (9-inch) unbaked deep-dish pie shell

Steps:

  • Preheat oven to 450°F. Line a rimmed baking sheet with foil. In a large bowl, combine 4 cups peeled, sliced peaches (about 4 medium peaches), 1/2 cup sugar, 3 1/2 Tbsp. quick-cooking tapioca and 1 tsp. lemon juice. Let stand for 15 minutes.
  • In a small bowl, mix 1/2 cup all-purpose flour, 1/4 cup packed brown sugar and 1/2 cup pecan pieces. Using your fingertips or a fork, cut in 4 Tbsp. cold unsalted butter until mixture is crumbly. Sprinkle 1/3 of praline mixture over bottom of 1 (9-inch) unbaked deep-dish pie shell; cover with peach mixture. Sprinkle remaining praline mixture over peaches.
  • Place pie on prepared baking sheet and bake for 10 minutes. Reduce oven temperature to 350°F and bake until peaches are tender and topping is golden brown, 25 to 30 minutes longer.
