3 pounds ground turkey breast*
1 teaspoon poultry seasoning
4 (1-inch) chunks blue cheese
1 tablespoon olive oil
4 hamburger rolls (preferably whole-grain)

Steps:

  • In a large bowl, combine turkey and poultry seasoning. Mix well to combine. Shape mixture into 12 patties, each about 1 inch thick. Press blue cheese into the center of 4 of the patties, covering cheese with turkey. Heat oil in a large skillet or griddle over medium-high heat. Add turkey burgers and cook 4 to 6 minutes per side, until cooked through. Serve the cheese-stuffed burgers with this meal and refrigerate remaining burgers until ready to use. Serve burgers on rolls.;

1 lb lean ground turkey
1/2 teaspoon kosher salt
2 -3 garlic cloves, grated
8 slices hickory smoked pepper bacon or 8 slices regular smoked bacon
2 -4 tablespoons crumbled blue cheese
4 large hamburger buns, toasted (flour or whole wheat)
4 tablespoons mayonnaise
lettuce
sliced onion
1 large tomatoes, sliced
fresh ground black pepper

Steps:

  • Chop bacon strips into 1/2 inch pieces. Cook bacon pieces over medium to medium high heat, until evenly browned. Drain bacon pieces and discard fat. Set bacon aside.
  • In a medium mixing bowl, combine turkey, salt and garlic.
  • Divide turkey into 8 equal pieces and form into thin patties.
  • Layer four of the patties with blue cheese crumbles and bacon. Top with another turkey patty.
  • Press patties together firmly but gently. Be sure to seal the edges of the patties together to avoid burgers falling apart during cooking.
  • Cook burgers on a grill skillet, or grill pan until nicely browned and have reached a minimum internal temperature of 165°F Allow burgers to rest for about 5 minutes.
  • Place burger on a large bun and layer with mayonnaise, arugula, onion, and tomato. Garnish with fresh cracked black pepper.

I threw this together to use up some ingredients. It was good! I pan-fried these because I don't have a grill- I'm sure they'd be even better when grilled.

1 lb lean ground turkey
1/2 cup dry breadcrumbs
1 egg
3 tablespoons hot sauce (a buffalo-style sauce like Frank's RedHot)
1 teaspoon salt
1/4 teaspoon black pepper
3 ounces blue cheese, crumbled
2 tablespoons butter (if frying)
4 hamburger buns, sliced

Steps:

  • Combine meat with breadcrumbs, egg, hot sauce, salt & pepper. Mix well, and form into eight patties of the same size.
  • Divide the blue cheese into four equal portions. Place a portion of the cheese atop one patty, then top with another patty. Fold the patty's edges together so the cheese is hidden in the center. Seal well so nothing leaks out when cooking. Repeat three more times to make four burgers in total.
  • Heat the butter in a skillet of medium-high heat. Cook patties, flipping once, for about 15 minutes.
  • Serve inside buns and top with more hot sauce, if desired. Maybe some sliced red onions, tomato and lettuce as well. I served mine in pitas and topped with baby arugula and hot sauce.

I saw these on Rachael Ray's episode with Kristin Davis. She recommends serving them on kimmelwick (also spelled kummelweck) rolls, Kaiser rolls topped with lots of pretzel salt and caraway seeds. I reduced the amount of grill seasoning and increased from 4 to 6 burgers based on the reviews.

2 lbs lean ground turkey breast
2 -4 tablespoons grill seasoning
1/4 cup buffalo wing sauce
1/4 cup chives, plus extra chopped (to garnish)
1/4 cup parsley, chopped
2 garlic cloves, grated
2 tablespoons olive oil
3 tablespoons butter
3 tablespoons flour
3 cups milk
1 cup blue cheese
salt, to taste
fresh ground pepper, to taste
3 carrots, peeled and cut into sticks
3 stalks celery, cut into sticks
4 kaiser rolls (kimmelwick rolls) or 4 slices rye bread (thick slices)

Steps:

  • In a large bowl, mix the turkey, grill seasoning, hot sauce, chives, parsley and garlic. Form six patties.
  • Heat a large skillet over medium-high heat with two tablespoons olive oil, two turns around the pan. Sauté the burgers about five minutes on each side, until cooked through.
  • In a medium skillet over medium-high heat, melt the butter. Sprinkle the flour over the butter and cook it for about 1 minute. Whisk the milk into the roux and season with salt and freshly ground black pepper. When the milk comes up to a bubble and has thickened, take the pan off the heat and stir the blue cheese into the sauce in a figure-eight motion.
  • To serve, place the top of the roll or a slice of rye bread on a plate, top with the burger. Serve with celery and carrot sticks and a cup of warm, blue cheese dip garnished with some chopped chives alongside. You can also drizzle some buffalo sauce over the top.

1 1/2 cups broccoli slaw
1/4 cup skinny blue cheese dressing
1.25 lbs 93% lean ground turkey
2/3 cup grated carrots (grate in food processor)
1/4 cup seasoned whole wheat breadcrumbs
1 clove garlic, grated
1 tbsp red onion, grated
1/4 cup Franks Hot Sauce
salt and fresh pepper
oil spray
5 slices reduced fat cheddar
5 whole wheat burger buns (I used Martin's 100 calorie Potato Whole Wheat Buns)

Steps:

  • In a medium bowl combine broccoli slaw and skinny blue cheese dressing. Set aside.
  • In a large bowl, combine ground turkey, carrots, breadcrumbs, garlic, onion, hot sauce, salt and pepper. Makes 5 equal patties, 5.5 oz each.
  • Heat a large skillet on high heat. When hot, lightly spray the oil. Add burgers to the pan and reduce the heat to medium-low.
  • Cook on one side until browned 4-5 minutes, then flip. Cook another 4 minutes or until burgers are cooked all the way through (keep heat medium-low to prevent burning); top with cheese and place on a toasted burger buns topped with broccoli slaw.
  • If grilling, clean grill well before cooking and spray with oil spray to prevent sticking.Freezer Tip: To freeze raw, place them on a baking sheet with wax paper in between, when frozen transfer to ziplock bags.
  • To freeze cooked, you can fully cook them, then freeze in ziplock bags for quick meals; to re-heat you can microwave or thaw first then place on a skillet.

This recipe is super easy and a great way to serve turkey burgers! I do not put these on an outdoor grill as it tends to dry them out. The ciabatta rolls add so much but a regular hamburger bun would work just fine.

2 - green onions chopped

Steps:

  • Mix together the Ground Turkey, Dijon Mustard, Green Onions, Blue Cheese and Salt & Pepper
  • Do not over mix as this will make the burgers tough. Shape into 4- 1/4 pound burgers Add 1 tablespoon of butter to a preheated grill pan and add burgers. Cook for about 7-8 minutes on each side until no longer pink.
