SOFT BREAD TWISTS

My family loves eating these zesty bread twists with a spaghetti supper. Soft and light as a feather, they have a perfect balance of garlic and oregano. Be sure to snatch one before passing them around the table.

Yield 2 dozen.

Number Of Ingredients 13

1 package (1/4 ounce) active dry yeast
2 teaspoons sugar
1 cup warm water (110° to 115°)
1 cup warm milk (110° to 115°)
1 egg, lightly beaten
1/2 cup canola oil
1-1/4 teaspoons salt, divided
5-1/2 to 6 cups all-purpose flour
1/4 cup cornmeal
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 cup butter, melted
Pizza sauce or salsa, optional

Steps:

  • In a large bowl, dissolve yeast and sugar in warm water; let stand for 5 minutes. Add the milk, egg, oil, 1 teaspoon salt and 4 cups flour; beat on low speed until smooth. Beat 3 minutes longer. Stir in enough remaining flour to form a soft dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 8-10 minutes (dough will be sticky). Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Do not punch down. Divide dough into eight pieces. Combine cornmeal and oregano; sprinkle over work surface. Roll each piece of dough in cornmeal mixture and shape into a 15-in.-long rope. Cut each rope into three pieces. Twist each piece and place on greased baking sheets., Bake at 400° for 8-12 minutes. Combine garlic powder and remaining salt. Immediately brush twists with melted butter, then sprinkle with garlic powder mixture. Serve with pizza sauce if desired.

Onion jam, which is reason enough to try this sandwich, is simple to make (see the recipe for BLAAK Onion Jam at beekman1802.com, which also sells the jam by the jar). Although any blue cheese is delicious here, look for one that's sliceable or crumbly, not gooey. Stilton, Maytag, and Roaring Forties are good choices.

8 slices white or sourdough bread
6 ounces sweet onion jam
6 ounces blue cheese, sliced
6 slices Irish or Canadian bacon, cooked
Unsalted butter, for pan

Steps:

  • Preheat oven to 300 degrees. Spread each of 4 bread slices with 2 tablespoons onion jam. Top each with a quarter of the cheese, 1 1/2 slices bacon, and 1 slice bread.
  • Melt 1 to 2 tablespoons butter on a griddle or in a heavy skillet over medium heat. Add sandwiches in batches, and cook until golden brown on both sides, about 6 minutes total, flipping once and adding more butter as needed. Transfer to a baking sheet, and bake until cheese is melted, about 5 minutes. Cut in halves or quarters, and serve hot.

This lovely bread takes a bit of effort but it's worth it for that special occasion, or if you just really like a crusty bread with lots of flavour. Very yummy used as bread for an open sandwich! Remember to plan a day ahead, because the first stage involves leaving the mixture overnight.

Number Of Ingredients 6

2 cups white flour
1 cup cold water
1 (7 g) packet fast-rising active dry yeast (or about three tsp)
1 teaspoon salt
6 -8 slices bacon
1 cup crumbled blue cheese

Steps:

  • The day before you want the bread, make a sticky paste by mixing together 1/2 cup of the flour, 1/2 cup of the water and two teaspoons of yeast in a bowl.
  • When the ingredients are combined, cover the bowl with cling film and leave in the fridge overnight.
  • The next day, the mixture will have bubbles on top and smell fermented.
  • Add remaining flour, yeast and salt to the bowl, and start adding the remaining water a bit at a time, until you get a sticky consistency.
  • Flop the dough onto a floured work surface, sprinkle more flour on the dough and knead for 3-5 minutes or until smooth.
  • Put the dough in a large bowl, cover with cling film and leave to rise until doubled, between 1-2 hours.
  • Meanwhile, fry the bacon until crispy and then cut into small pieces.
  • Crumble the cheese into a small bowl and mix with bacon.
  • Take dough and turn onto a floured work surface again, working bacon and cheese into the dough this time and kneading for another 3-5 minutes until smooth.
  • Put back in bowl and leave for another hour to rise by about a third to a half.
  • Take dough and split into three equal pieces.
  • On a lightly floured surface, roll each piece into a sausage shape, about 20 inches long.
  • Take the three "sausages" and lay them out in front of you, each at a slight angle to the other.
  • This part is hard to describe, but just imagine you are braiding hair.
  • You will need to pinch the three pieces together at one end and then, once they are attached, take the piece on the left side and bring it over the centre piece.
  • Then take the right piece and bring it over the centre piece.
  • Repeat until all the dough is braided and pinch together at the end.
  • Lay bread on a greased and floured baking sheet, cover with cling film and let rise for one final hour.
  • Bake for 30-35 minutes in an oven at 200°C or about 350°F.

Sweet and Savory Cheesy Bacon Wrapped Puff Pastry Twists image

The holiday appetizer everyone asks for...year after year...quick, easy, and delicious!

1/2 cup light or dark brown sugar
1-2 tablespoons chopped fresh rosemary, using to your taste
kosher salt and black pepper.
2 sheets (1 box) frozen puff pastry, thawed
1 egg, beaten
1 cup shredded sharp cheddar cheese ((or a mix of your favorite cheeses))
1-2 teaspoons cayenne pepper ((optional))
24 strips thin cut bacon, or 12 sticks of thicker bacon, halved

Steps:

  • 1. Preheat oven to 375° F. Line 2 baking sheets with foil and place a wire rack on top. Lightly rub each rack with olive oil. 2. In a shallow bowl, combine the brown sugar, rosemary, and a pinch each of salt and pepper. 3. Place both sheets of pastry on a lightly floured counter. Brush the surface of each with a beaten egg. Evenly sprinkle about 1/2 cup of cheese over each sheet, then sprinkle with cayenne. Dust a rolling pin lightly with flour and roll the rolling pin over the cheese, gently pressing the cheese into the pastry. Fold the pastry in half, then cut each into 12 (1/2 inch) wide strips. Pinch the ends to seal, then gently twist each strip several times to enclose the cheese. It's ok if some of the cheese falls out. 4. Take a piece of bacon and wrap it around the twisted pastry. Repeat with the remaining twists. Dredge the twist through the brown sugar mix, tossing to coat, placing the twist on the prepared baking sheet as you go. 5. Bake 30 to 50 minutes, rotating the pans halfway through. My bacon took 50 minutes to cook, start checking the twists at around 30 minutes. Serve warm or at room temperature...though I love them warm!

Warm Blue Cheese Dip with Garlic and Bacon image

Even people that don't like blue cheese love this wonderful hot dip. It can be served with vegetables, but I find that people like it best with French bread.

7 slices bacon
2 cloves garlic, peeled and minced
1 (8 ounce) package cream cheese, softened
¼ cup half-and-half
4 ounces blue cheese, crumbled
2 tablespoons chopped fresh chives

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from skillet, drain on paper towels and crumble.
  • Place garlic in hot bacon grease. Cook and stir until soft, about 1 minute. Remove from heat.
  • Preheat oven to 350 degrees F (175 degrees C). Place cream cheese and half-and-half in a medium bowl. Beat with an electric mixer until blended. Stir in bacon, garlic, blue cheese and chives. Transfer mixture to a medium baking dish.
  • Bake covered in the preheated oven 30 minutes, or until lightly browned.
