These are so yummy. They taste just like a BLT sandwich without the bread. I made these for thanksgiving and they disappeared in less than 10 minutes! They are so yummy and they look great for entertaining!

20 cherry tomatoes
1/2 lb bacon (cooked and crumbled)
1/2 cup mayonnaise
1/3 cup chopped green onion
3 tablespoons parmesan cheese
2 tablespoons fresh parsley (snipped or dried)

Steps:

  • Cut a thin slice off of each tomato top.
  • Scoop out the insides and drain upside-down on a paper towel.
  • In a small bowl combine all other ingredients.
  • Spoon the mixture into the tomatoes.
  • Chill and serve.
  • Oh boy, are they good and pretty too!

18 large cherry tomatoes (10 oz.), about 1-1/4 inches in diameter
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/4 cup KRAFT Real Mayo Mayonnaise
3 slices cooked OSCAR MAYER Bacon, crumbled
2 Tbsp. finely chopped romaine lettuce
3 Tbsp. crushed seasoned croutons

Steps:

  • Cut tops off tomatoes; discard. Scoop out seeds. Drain tomatoes, cut sides down, on paper towels.
  • Meanwhile, mix cream cheese and mayo in medium bowl until blended. Stir in bacon and lettuce.
  • Spoon cream cheese mixture into tomatoes just before serving; top with crushed croutons.

8 medium size ripe tomatoes
1/2 lb sliced bacon
4 ounces wedge iceberg lettuce (about 1/4 of head)
1/4 cup shredded cheddar cheese
3 tablespoons mayonnaise
1/2 teaspoon white vinegar
1/8 teaspoon Old Bay Seasoning
1 dash liquid hot pepper sauce

Steps:

  • With a serrated steak knife, slice tops off tomatoes and reserve tops.
  • Using a small spoon, scoop out flesh and seeds from centers, reserving about 1/2 cup flesh. Rinse out tomato shells; let dry upside down on paper towel. Chop reserved tomato flesh.
  • In a large skillet over medium-high heat, cook bacon until crisp, about 5 minutes. Transfer to paper towel to drain.
  • Thinly slice iceberg wedge into fine shreds; chop if long strands of lettuce remain. Transfer lettuce to a medium-sized bowl. Stir in reserved chopped tomato flesh. Add the shredded cheddar cheese, mayonnaise, vinegar, Old Bay seasoning and hot-pepper sauce; stir until well blended.
  • Crumble the cooked bacon into bite-size pieces. Stir the bacon into the lettuce mixture. Place tomatoes upright on platter. Spoon filling into tomatoes, mounding slightly. Replace tomato tops. Serve the stuffed tomatoes immediately.

1/4 head of ice berg lettuce
1/4 cup shredded cheddar
3 tbsp mayo
1/2 tsp white vinegar
1/8 tsp old bay seasoning
dash hot pepper sauce

  • With serrated knife, slice tops off tomatoes, reserve tops. Using a small spoon, scoop out flesh and seeds from centers, reserving about 1/2 cup flesh. Rinse out tomato shells, let dry upside down on paper towels. Cook bacon til crisp and drain on paper towel. Thinly slice iceberg wedge into fine shreds, chop if long strands remain. combine lettuce wiht chopped tomato flesh, and remaining ingredients. Crumble bacon and add to mixture. Sppon filling into tomatoes mounding slightly. Replace tomato tops and serve immediately.
