Avocado Dressing for BLT Salad image

Use this versatile, naturally creamy dressing in our Bacon, Lettuce, and Tomato Salad, or try drizzling it over grilled chicken or fish.

Yield Makes 1 cup

Number Of Ingredients 7

1 ripe avocado
1/4 cup loosely packed fresh basil leaves
1 small clove garlic, peeled
Juice of 2 limes
3 tablespoons red-wine vinegar
1/2 cup olive oil
Salt and freshly ground black pepper

Steps:

  • Slice avocado lengthwise. Remove and discard pit and peel, and place flesh in the bowl of a food processor. Add basil, garlic, lime juice, and vinegar; process until combined. Slowly add olive oil through the machine's feed tube, and process until the dressing is smooth. It should have a thick but pourable consistency; give an extra squeeze or two on the limes to adjust consistency. Season with salt and pepper, and use immediately.

1 large avocado, ripe, peeled and mashed
1/2 cup sour cream
1/4 cup milk
1/4 cup mayonnaise
1 tablespoon lemon juice
1/4 teaspoon garlic salt
2 drops hot pepper sauce (optional)
3 cups torn lettuce or 3 cups shredded lettuce
3 medium tomatoes, cut into wedges
1/2 lb bacon, cooked until brown, and crumbled

Steps:

  • In small bowl, combine all dressing ingredients; beat at low speed until smooth.
  • Cover and refrigerate for several hours to blend flavors.
  • Combine salad ingredients in large bowl.
  • Serve with dressing.

I love Tomatoes and I love Avacado's. This salad is delicious and best when Tomatoes are in Season. I am always looking for recipes to use my bumper crop of Tomatoes in the Summer and this one is so easy to pull together. You could add some Grilled Chicken for a main course.

4 cups of shredded lettuce
3 medium tomatoes, cut into wedges
1/2 lb bacon, crisp cooked, crumbled
3/4 cup crouton, if desired

Steps:

  • In Food Processor, combine all dressing ingredients; beat at low speed just until smooth.
  • Cover and refrigerate for several hours to blend flavors.
  • At serving time, arrange salad ingredients on 6 individual plates or toss in large salad bowl.
  • Serve with dressing.
