Steps:

  • Fill a pint glass or goblet with 1 1/2 cups ice. Set aside.
  • Combine tomato juice, vodka, lemon juice, hot pepper sauce, Worcestershire sauce, salt, black pepper, and 1 cup ice in a mixing glass. Stir until chilled and strain into ice-filled pint glass or goblet.

1/2 teaspoon soy sauce

16 peeled and deveined cooked extra-large shrimp (about 1 pound), tail on
1/2 celery stalk, finely diced, plus 16 small celery stalks with leaves, for garnish

  • Mix together the ketchup, horseradish, Worcestershire sauce, soy sauce, vodka and lemon zest and juice. Season with salt and pepper.

1/2 cup tomato juice
1/4 cup vodka, if desired

1 lemon, halved
1 cup dry white wine
1 bay leaf
1/2 teaspoon peppercorns
Salt
1 bottle of your favorite vodka
1 bottle of a good store bought Bloody Mary mix
1 teaspoon cracked pepper
Hot sauce, to taste
Worcestershire sauce
Olive juice, to taste
Bamboo skewers, soaked in water for 30 to 60 minutes

Steps:

  • 1 pound large shrimp, peeled and deveined
  • Place 6 cups of water in a medium saucepan. Add lemon halves, white wine, bay leaf, peppercorns and salt, to taste. Bring to a boil and add the shrimp. Cook for 1 minute or until the shrimp turn pink. Immediately plunge shrimp into a bowl of ice water to stop the cooking process. Strain the shrimp and place into a bowl in the refrigerator until ready to use. In a large pitcher, mix 1-ounce vodka for every 6 ounces Bloody Mary mix. Season with cracked pepper, hot sauce, Worcestershire sauce, olive juice and shake. Serve in decorative glasses with skewered shrimp as garnish.

1 pound frozen peeled cooked shrimp (16- to 20-count), defrosted, tails removed, cut into 1/4-inch pieces
3/4 cup bloody Mary mix
1 1/2 teaspoons celery salt
Juice of 1 lime
4 cups frozen white rice
2 tablespoons minced fresh cilantro
2 tablespoons minced red onion
1 avocado, diced
Hot sauce, as desired, optional
Kosher salt and freshly ground black pepper
Plantain chips, for serving

Steps:

  • In a ziptop bag, combine the shrimp with the bloody Mary mix, 1 teaspoon of the celery salt and half of the lime juice. Cover and refrigerate for 3 to 4 hours.
  • Cook the frozen rice according to the package instructions. Cool to room temperature.
  • Drain the shrimp and reserve 2 tablespoons of the liquid. Transfer the shrimp and the reserved liquid to a medium bowl.   • Make the Bloody Mary: Put into a pitcher the lemon and lime wedges, horseradish, celery seed, cilantro, Worcestershire, and hot sauce. Muddle these ingredients by smashing them together with a wooden spoon. Pour in the juice and the vodka; stir, taste, and season with salt and pepper. Serve on the rocks as a beverage or pour into the molds and place in the freezer for 4 hours or overnight.
  • Poach the shrimp: Put the onion, lemon, bay leaves, and peppercorns into a medium size pot and fill it with water. Bring to a boil, add the shrimp, reduce the heat, and simmer until the shrimp are cooked through, about 5 minutes. Drain and refrigerate. When they are cool enough to handle, peel and devein them.

2 tbsp olive oil, plus a drizzle to serve
2 garlic cloves, finely grated
pinch of cayenne pepper, plus extra to serve
20 large tiger prawns, peeled and deveined
1⁄4 lemon, juiced, plus wedges to serve
5 tbsp mayonnaise (the best quality you can find)
1 tbsp tomato purée
5 good splashes of hot sauce
1 tbsp hot creamed horseradish
1 tbsp vodka (optional)
large pinch of celery salt
2 ripe avocados, halved, stoned and cut into chunky dice
3 celery sticks, peeled and sliced into chunks, reserve the leaves to serve
1⁄2 iceberg lettuce, shredded
2 ripe plum tomatoes, roughly chopped

Steps:

  • Mix all the dressing ingredients together with a pinch of salt and set aside. Can be made up to a day ahead, covered and chilled. Mix the oil and garlic in a large bowl with salt, pepper and the cayenne, then tip in the prawns and marinate in the fridge for at least 10 mins and up to 24 hrs. Can be done a day ahead, covered and chilled.
  • Make sure you have all the salad ingredients prepared before you start cooking the prawns. Toss the salad ingredients together and scatter over a large platter, or divide between four bowls. Heat a griddle pan over a medium heat and when it is hot carefully lay the prawns in the pan and cook for about 2 mins on each side until they change colour and are cooked through. Nestle the prawns into the salad, generously drizzle over the dressing, scatter over the reserved celery leaves, sprinkle with the extra cayenne pepper, then drizzle over a little more oil. Serve with the lemon wedges on the side for squeezing over.

Turn a classic drink into a speedy spread by topping seasoned cream cheese with chopped celery, olives and pickles.

1 package (8 oz) cream cheese, softened
2 tablespoons milk
3/4 cup chili sauce
1 1/2 teaspoons red pepper sauce
1/2 teaspoon celery salt
1/2 teaspoon sugar
2/3 cup finely chopped celery
1/2 cup chopped or sliced ripe olives
1/2 cup finely chopped baby dill pickles
Assorted crackers

Steps:

  • In medium bowl, beat cream cheese and milk with electric mixer on medium speed until smooth. Spread on 10-inch round serving plate.
  • In small bowl, mix chili sauce, pepper sauce, celery salt and sugar. Pour over cream cheese mixture to within 1/2 inch of edge. Top with rows of celery, olives and pickles. Serve with crackers.

CLASSIC BLOODY MARY COCKTAIL

I am sure if you are anything like me than a good cocktail is an essential part of entertaining. I mean honestly your guests did not come to your shindig to drink filtered water out of a plastic bottle. This recipe is all it is cracked up to be and more. For best results mix the ingredients in a large pitcher a couple of hours in advance to allow all the flavors time to meld together. This cocktail is known for its outlandish garnishes so have fun with it and make your friends and family smile. Set up a Bloody Mary bar complete with a cornucopia of garnishment selections.

1 lemon juiced
1/2 teaspoon(s) celery salt plus some for rimming glasses (see notes)
1 bottle spicy v8 vegetable juice (46 ounces)
1 1/4 cup(s) vodka
1 tablespoon(s) horseradish
1 teaspoon(s) brown sugar
1 tablespoon(s) worcestershire sauce
1 teaspoon(s) tabasco sauce
fresh ground pepper (about 15 turns of the pepper mill)
2 tablespoon(s) pickle juice
green olives
grape tomatoes
dill pickle spears
bacon
pickled green beans

Steps:

  • 1. Using a thin lemon wedge run the rim of the glasses getting it wet with the lemon juice. Place several teaspoons of celery salt on a sallow plate and dredge the wet rims of the glasses through the celery salt.
  • 2. In a large pitcher stir together lemon juice, 1/2 teaspoon celery salt, V8 vegetable juice, vodka, horseradish, brown sugar, Worcestershire Sauce. Tabasco Sauce, pepper and pickle juice. Chill for at least 2 hours.
  • 3. Pour over ice filled glasses and garnish as desired with green olives, grape tomatoes, dill pickle spears, bacon or pickled green beans.
  • 4. NOTES Use 1/2 teaspoon from any remaining celery salt from the rimming of the glasses to mix in. Garnish as desired. See my complete list of garnishment ideas in the post.

2 small lemons
1 small lime
1 cup ketchup
1 cup Heinz Chili sauce
2 heaping Tbs. prepared white horseradish; more to taste
2 Tbs. vodka
1 Tbs. Worcestershire sauce
2 tsp. puréed canned chipotle chile in adobo; more to taste
1/8 tsp. celery salt; more to taste

Steps:

  • Finely grate the zest from the lemons and then juice them. Juice the lime. In a nonreactive bowl, mix 3 Tbs. of the lemon juice, 2 Tbs. of the lime juice, and all of the zest with the ketchup, chili sauce, horseradish, vodka, Worcestershire, chipotle, and celery salt until well combined. The sauce can be refrigerated for up to a week. Add more horseradish, chipotle, lemon juice, or celery salt to taste before serving.
