1/2 Small Yellow Onion (chopped)
2 Medium Jalapeños (chopped )
1 Tsp Onion Powder
1 Tsp Garlic Powder
1/4 Tsp Black Pepper
1 Tsp Brown Sugar
1/4 Cup Cream Cheese
24 Small Wontons

Steps:

  • Preheat oven to 350-degrees
  • In a bowl, combine hamburger meat, chopped onions, chopped jalapeños, onion powder, garlic powder, black pepper, and brown sugar together.
  • Add the mixture to a pan on medium-high. Cook the meat thoroughly, and mix in the cream cheese.
  • Evenly distribute the filling onto the centers of the wontons. Roll them tightly, and add them to a baking sheet. optional* I brushed the leftover grease from the pan onto the tops of the wontons to give them a golden finish

1 pound sausage
8 ounces cream cheese (cubed for easier melting)
10- ounce can diced tomatoes with green chiles
1 package wonton cups

Steps:

  • Brown sausage and drain excess grease. Add diced tomatoes and cream cheese. Stir until heated through and cream cheese is melted.
  • Spray muffin pan with non-stick spray and press one wonton wrapper into pan forming cups. Heat oven to 350 degrees F.
  • Allow sausage mixture to cool slightly. Fill each wonton cup with 1-2 tablespoons of the sausage mixture.
  • Cook at 350 12 to 13 minutes or until hot and bubbly.
  • Serve warm or at room temperature. Store in an airtight container in the refrigerator.

Baked Potatoes:
4 large baking potatoes, washed and scrubbed
1 tsp olive oil
Kosher salt
Creamy Mushroom Ragout:
2 tbsp butter
2 tbsp olive oil
1 lb mixed fresh mushrooms, sliced
1 cup thinly sliced shallots
3 tbsp flour
1 cup chicken or vegetable broth
1/2 cup dry white wine
1 tbsp sweet paprika
1/2 cup sour cream
2 tbsp chopped fresh dill
1/4 cup chopped fresh parsley
Salt and pepper to taste

Steps:

  • Bake the Potatoes: Preheat oven to 425°F. Rub the potatoes with olive oil, sprinkle with salt, and prick all over with a fork. Place on a baking sheet, and bake in preheated oven for 45-60 minutes, or until a fork pierced through the skin meets no resistance. Prepare the Mushroom Ragout: While the potatoes are baking, prepare the ragout. In a large heavy-bottomed saucepan set over medium heat, heat the butter and olive oil until butter is melted and foamy. Add shallots and saute until soft and translucent, about 5 minutes. Add mushrooms and cook for 10 minutes longer, or until the mushrooms are soft and starting to brown. In a small bowl, whisk together white wine and flour until smooth. Add to the pan along with chicken broth and paprika. Reduce heat to low and simmer, uncovered, for 10 minutes or until thick. Stir in the sour cream and continue cooking for 2-3 minutes to heat through (make sure not to bring to a boil, as this can cause the sauce to curdle). Remove from heat immediately, and stir in dill and parsley. Adjust seasoning with salt and pepper to taste. Assembly: Once the potatoes are done, transfer them to a cutting board to cool for 5 minutes. Cut a slit through the top of each potato, and gently push on the ends to create a small pocket for the topping. Sprinkle the inside of each potato with a little salt. Ladle a generous amount of mushroom ragout onto each potato, letting the excess spill over the sides and onto the plate (yes, it's messy, but it's the best part!). Finish with a sprinkling of parsley or dill, if desired, and lots of black pepper. Serve immediately. 2 lbs. beef stew meat
2 Tablespoons olive oil
1 yellow onion ((chopped))
1 lb. baby potatoes ((cubed))
1/2 lb. carrots ((diced))
4 cups beef broth
3 teaspoons garlic ((minced))
2 Tablespoons tomato paste
2 Tablespoons Worcestershire sauce
1 teaspoon thyme
1 bay leaf
3 Tablespoons cornstarch
3 Tablespoons water
1 1/2 cups frozen peas
2 Tablespoons fresh parsley ((chopped))
salt and pepper to taste

Steps:

  • Add olive oil to a saute pan and heat over medium-high heat. Once hot, add in the beef stew meat, and season with salt and pepper. Sear the beef on all sides, for about 3 minutes, until browned.
  • Add the beef to the crockpot, along with the onion, potatoes, and carrots.
  • In a large mixing bowl, whisk together the beef broth, minced garlic, tomato paste, Worcestershire sauce, and thyme. Pour over the beef and vegetable mixture and add the bay leaf on top. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  • 20 minutes before serving, remove the bay leaf. Combine the cornstarch and 3 tbsp water in a small bowl and pour into the beef stew. Stir to combine.
  • Add in the frozen peas and cover again. Once the peas are heated through and the stew has thickened, garnish with fresh parsley and serve.

4 cups Rice Krispie cereal
1 cup cranberries
2 and 1/2 cups all-purpose flour
1 teaspoon baking powder

Steps:

  • Melt butter and allow to cool to room temperature
  • In the bowl of an electric mixer, combine butter and sugars. Mix until combined. Add eggs one at a time and mix until they are incorporated. Stir in vanilla extract.
  • Combine flour, baking powder, baking soda, and salt in a small bowl.
  • Slowly add the flour mixture to the egg and sugar mixture
  • Stir in coconut, chocolate chips, and cereal by hand until evenly distributed.
  • At this point, you can either scoop into balls and place on a baking sheet. The baking sheet needs to fit in the refrigerator. OR, you can refrigerate the dough in the bowl and scoop out after the dough is chilled.
  • After the dough is chilled, bake cookies for 10 to 12 minutes or until the desired level of doneness. I like crispy edges with soft centers. For 1.5 tablespoons of dough, I cook for 12 minutes.

I love this recipe because it is so easy (Fia could do this by herself), economical (most expensive ingredient was the Texas Toast at $2), & oh-so-delicious! The best part is that it is made the day before so there is no fuss on the day you consume it....perfect for a Sunday afternoon or brunch.

1/2 cup butter (melted)
1 cup brown sugar
1 loaf Texas toast thick bread (any thick sliced bread of your choice.)
4 eggs
1 1/2 cups milk
1 teaspoon vanilla
2 tablespoons cinnamon
2 tablespoons powdered sugar (for sprinkling)
8 ounces cream cheese (optional)
1/4 cup powdered sugar (optional)
4 apples (sliced, Your choice) (optional)
maple syrup (optional)

Steps:

  • Melt butter in microwave & add brown sugar -- stir till mixed.
  • Pour butter/sugar mix into bottom of 9 x 13 pan -- spread around (this is where I would all the sliced apples).
  • Beat eggs, milk, & vanilla, & Cinnamon.
  • Lay single layer of Texas Toast in pan.
  • Spoon 1/2 of egg mixture on bread layer. (Then I would spread the Cream cheese and Powdered sugar mixture on the bread.).
  • Add 2nd layer of Texas Toast.
  • Spoon on remaining egg mixture and sprinkle a little Cinnamon on top.
  • Cover & chill in fridge overnight.
  • Bake at 350 for 45 minutes (covered for the first 30 minutes).
  • Sprinkle with powdered sugar.
  • Serve with warm maple syrup (I don't do the syrup part).

1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon Diamond Crystal kosher salt
1/8 teaspoon cayenne pepper
4 (6 oz) halibut fillets, (1 to 1/12-inch thick)
2 tablespoon butter

Steps:

  • In a shallow dish, whisk together the paprika, thyme, oregano, onion powder, garlic powder, kosher salt and cayenne.
  • Sprinkle the halibut fillets with the seasoning mixture, pressing with your fingers to help the coating adhere.
  • Heat a large nonstick skillet over medium-high heat, 2-3 minutes. Traditionally you would use a cast iron skillet, but I use a nonstick hard anodized aluminum skillet to minimize the risk of sticking.
  • Add the butter to the hot skillet and swirl to coat. Add the halibut fillets. Cook 4 minutes on each side, until the fillets turn from translucent into opaque and white (it's fine to cut a small slit and peek).
  • Spoon the pan juices on top of the fish, and serve.

½ tbsp. pepper
½ tbsp. soy sauce
1 tsp. liquid smoke
2 tsp. garlic powder
2 tbsp. olive oil
For Sauce
1 c. brown sugar
½ c. water
1 tsp. anise seeds
2 tsp. fresh ginger, grated
1 tsp. soy sauce
1 tbsp. siracha
3 garlic cloves, minced
2 c. Asian Cole Slaw
1 tbsp. mayo
1 tbsp. honey
1 tbsp. Dijon mustard
4 slices Swiss cheese
4 Burger Buns

Steps:

  • In a large bowl, mix together the beef and spices (pepper, soy sauce, liquid smoke, and garlic powder) with your hands. Once the beef has been mixed, make 4 ounce beef patties and set aside.
  • Heat a large sauté pan and warm 2 tbsp. olive oil on medium heat. Place the beef patties in the pan and sear on each side for about 5 minutes. Set aside once cooked.
  • While the burgers are cooking, in a medium sauce pan, add the brown sugar, water, anise seeds, ginger, soy sauce, siracha and garlic and allow to simmer for 15 minutes. The sauce will thicken. Stir occasionally so the sauce won't burn.
  • In a small bowl, mix together the Dijon mustard, mayo, and honey and toss with the cole slaw.
  • To assemble, take a hamburger bun and place on top of the bottom bun a burger, slice of cheese, 1 tablespoon of sauce, some of the slaw, and finally the top of the bun and serve.

Coriander seeds powder: 2 tsp
Roasted Cumin Powder: 2 tsp
Eating Soda: 1/4 tsp
Oil: 2 tsp
Salt: Pinch
Oil: 2 tsp
Mustard Seeds: 1 tsp
Asafoetida: Pinch
Curry Leaves: 8-10
Sesame Seeds: 1 tsp

Steps:

  • Combine all the ingredients in a large mixing bowl. Mix well.

  • Divide it into equal portions shaping into a vada. These vada's should be lemon-sized and then falttened.
  • In a steamer, arrange these vada's and steam them for about 10-15 minutes.
  • Insert a knife or a toothpick. If it comes out clean, then remove the vada's from the steamer.
  • Once the curry leaves crackle, add the vada's and mix well.
  • Heat oil in a pan. Once it reaches smoking point, add the mustard seeds and asafetida. As the mustard seeds crackle, add sesame seeds and curry leaves.
  • Once the curry leaves crackle, add the vada's and mix well.
  • Mix them gently otherwise the vada's will break.
  • Switch off the flame and serve hot with Green Mango Chutney or Coconut Chutney.
