Our blintz is a great airy and lemony alternative to the usual brunch bake. Try this fluffy, not-too-sweet blintz made with Neufchatel and ricotta cheese.

2 pkg. (8 oz. each) PHILADELPHIA Neufchatel Cheese, softened
1 container (15 oz.) POLLY-O Natural Part Skim Ricotta Cheese
5 eggs, divided
3/4 cup sugar, divided
2 tsp. zest and 3 Tbsp. juice from 1 lemon
1 cup flour
3/4 cup butter or margarine, melted
1/4 cup milk
1 Tbsp. baking powder

Steps:

  • Heat oven to 325°F.
  • Beat Neufchatel, ricotta, 2 eggs, 1/4 cup sugar, lemon zest and juice in large bowl with mixer until blended.
  • Whisk remaining eggs, sugar, flour, butter, milk and baking powder in separate bowl until blended. Spread 1/3 of the batter onto bottom of 13x9-inch baking dish sprayed with cooking spray; cover with Neufchatel mixture, then remaining batter.
  • Bake 45 min. or until center is set.

3/4 cup sugar
2 teaspoons lemon rind, grated
1 teaspoon powdered sugar (optional)
1 cup flour
1 (15 ounce) container ricotta cheese
2 (8 ounce) packages cream cheese
1 cup butter
1/4 cup milk
3 tablespoons fresh lemon juice
5 eggs
1 tablespoon baking powder

Steps:

  • Preheat oven to 325 degrees.
  • Beat cream cheese, ricotta cheese, 2 of the eggs, lemon juice and zest with electric mixer on med speed until well blended.
  • Set aside.
  • Place flour, butter, remaining 3 eggs, remaining 1/2 cup sugar, milk and baking powder in separate bowl; beat with wire wisk until well blended.
  • Spread 1/3 of the dough onto bottom of greased 13x9 inch baking dish; cover with cream cheese mixture.
  • Top with spoonfuls of the remaining dough.
  • Bake 45 minutes or until center is set.Cut into 16 pieces to serve.Sprinkle with powdered sugar if desired.
