Dry Rub
1/2 c. Dark Brown Suger, packed
8 tsp. Garlic Salt
8 tsp. Chili Powder
4 tsp. Salt **
2 tsp. Black Pepper
1 tsp. Celery Salt
1/2 tsp. White Pepper
1/2 tsp. Cayenne Pepper
1/2 tsp. Cinnamon
use at the end, if needed
Liquid Seasoning
1 1/2 c. Apple Juice
1/2 c. Blackberry Preserves
2 tbsp. reserved Dry Rub mix
1 tbsp. Balsamic Vinegar
4 Cloves minced Garlic
2 tsp. Jalepeno Peppers, seeded and minced
Finishing Glaze
1/2 c. White Vinegar
5 tbsp. Apple Cider Vinegar
5 tbsp. Worcestershire Sauce
5 tsp. reserved Dry Rub mix
1 1/4 c. Dark Brown Sugar, packed
1/4 c. Tomato Paste
1/4 c. Maple Syrup
3 tbsp. mild-flavored Molasses
2 tbsp. Blackberry Preserves
1/2 tsp. Jalapeno Pepper, seeded and minced
1/4 tsp. Hot Chili Sauce

Steps:

  • Dry Rub Mix In small bowl, combine Dry Rub ingredients. Reserver 2 tbsp. of Dry Rub for Liquid Seasoning mixture and 5 tsp. for Finishing Glaze. Apply remaining rub to both sides of ribs. Liquid Seasoning In small bowl, mix Liquid Seasoning ingredients; set aside. Meat Preheat grill/oven to 250 degrees F indirect heat. Place ribs on grill grate, meat side up. Close lid; cook for 2 1/2hr. Prepare 2 double-thick sheets of heavy-duty aluminum foil. Lay one rack, meat side up, on each sheet. Pour 2/3 c. Liquid Seasoning over each rack. Tighlty close foil packages. Return ribs to grill and cook, covered, for 1hr. Finishing Glaze In small nonreactive pan, mix the first four Finishing Glaze ingredients. Bring mixture to a boil and remove from heat. Stir in remaining ingredients with wire whisk until combined. Carefully unwrap ribs; discard foil and juices. Brush glaze on both sides of ribs. Return ribs to grill and cook, covered for 10 min. or until glaze begins to carmelize. Transfer ribs to a pallter and cut; serve with remaining glaze to pass. 4 teaspoons brown sugar
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon pepper
1/8 teaspoon garlic powder
3-1/2 to 4 pounds pork spareribs
JALAPENO BARBECUE SAUCE:
2 cans (8 ounces each) tomato sauce
2/3 cup packed brown sugar
1/3 cup lemon juice
1/4 cup Worcestershire sauce
1 small onion, finely chopped
2 jalapeno peppers, seeded and finely chopped
2 teaspoons beef bouillon granules

Steps:

  • In a small bowl, combine the first six ingredients; rub onto both sides of ribs. Place ribs, meat side up, on a rack in a foil-lined roasting pan. Bake at 325° for 1-1/2 to 1-3/4 hours or until tender. , Meanwhile, in a large saucepan, combine sauce ingredients; simmer, uncovered, for 30-40 minutes or until thickened. , Grill ribs, uncovered, over medium heat for 10-15 minutes or until browned, basting with sauce and turning several times. Reheat remaining sauce and serve with ribs.

If you have the rub and sauce prepared ahead of time most of the work is done. The rub and/or sauce may be used on almost any kind of meat. I usually always have some of each variety of sauce on hand in the refrigerator.

1 c sugar
1 c salt
1/2 c brown sugar (dried out by exposing on grease-proof surface)
5 Tbsp chili powder + 1 teaspoon
2 Tbsp ground cumin + 2 teaspoons
4 tsp freshly ground black pepper (fresh ground is important)
4 tsp garlic powder
4 tsp onion powder
4 tsp cayenne pepper
******** bbq sauce
1 c chopped onion
4 large cloves of garlic, minced
4 Tbsp cooking oil
2 c catsup
2 c strawberry preserves or jam
1/2 c cider vinegar
4 large jalapeno peppers
4 Tbsp steak sauce (your choice of brands)
4 tsp chili powder

4 lb ribs

Steps:

  • 1. NOTE: The BBQ RUB and BBQ SAUCE may both be prepared in advance. They will both keep for weeks. The sauce should be stored in the refrigerator. They both are good on any meat you want to grill such as chicken, beef brisket, pork chops etc.
  • 2. BBQ RUB Combine all of the ingredients together in bowl, and then transfer and store in an air-tight container.
  • 3. BBQ SAUCE NOTE: You can vary the heat intensity of this sauce to suit your taste. Extremely Hot: Use six jalapeños and do not remove the seeds or ribs. Very Hot: Use four jalapeños and do not remove the seed or ribs. Medium Hot: Remove the seeds and ribs from two of the jalapeños. Mild: Remove the seeds and ribs from three of the jalapeños Mildest: Remove the seeds and ribs from all four of the jalapeños. No Kick at All: Do not use any jalapeños in the sauce. In a medium saucepan cook the onion and garlic in hot oil until tender. Stir in the catchup, strawberry preserves or jam, vinegar, jalapeño peppers, steak sauce, and chili powder. Bring just to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until mixture thickens slightly, stirring occasionally.
  • 4. RIBS: Trim fat from ribs. Sprinkle the BBQ RUB evenly over both sides of ribs; rub into surface. (Cut ribs into serving-size pieces. This can be done before or after cooking) In a grill with a cover arrange preheated coals around a 13 X 9 inch drip pan. Test for medium heat above the pan. If desired, place ribs in a rib rack. Place ribs on the grill rack directly over the drip pan. Cover and grill for 1-1/4 to 1-1/2 hours or until the ribs are tender. Add more coals as needed. Brush ribs with the sauce (I use the mildest sauce for basting) occasionally during the last 10 minutes of grilling. Heat a bowl full of each of the varieties of sauce (depending on your guest taste) until bubbly and serve with the ribs. I usually keep a jar of each variety of sauce in the refrigerator for using on other meats or on sandwiches.

Blackberries were on sale and so after looking at a lot of BBQ recipes, I put together this recipe! I threw in a pack of blackberries - not sure if it was six or eight ounces, but it was somewhere in there :) Also, I use organic, low salt and low sugar ketchup... you might want to lower the soy sauce if you ketchup is salty.

4 lbs pork ribs
2 tablespoons olive oil
2 tablespoons butter
2 cups catsup
8 ounces blackberries
1/2 cup molasses
3/4 cup brown sugar, packed
2 tablespoons garlic, minced
2 tablespoons onions, minced
2 tablespoons white wine vinegar
1/4 cup Worcestershire sauce
1/4 cup soy sauce
1 tablespoon black pepper
1/2 tablespoon paprika
1 teaspoon cayenne
1 teaspoon dried chipotle powder
1/2 tablespoon liquid smoke

Steps:

  • Cut the ribs into individual ribs.
  • Melt the butter in the olive oil, in a frying pan, over medium high. Once the oil is hot, add the pork ribs and sear. You don't want them cooked, but you want the sides brown to hold in the juices and give texture to the meat. You will probably need to do this in batches, so add the butter and oil a bit at a time until all the ribs are cooked.
  • Mix all the other ingredients in the blender and puree until smooth.
  • Place ribs into crock pot as they sear. Pour sauce over ribs.
  • Cook on high for five hours, turn to low and cook another 3-4 hours.
  • Enjoy! This is really nice with steamed veggies, with a touch of lemon juice.
