Blackberry barbeque sauce is a great way to enjoy roasted meats.

1 cup frozen blackberries or marionberries (or 1/2 pint fresh, rinsed and drained)
3 cloves garlic (peeled)
2 tablespoons red wine vinegar
1/4 cup brown sugar
2 tablespoons corn syrup (dark or light)
1/2 cup ketchup
1 pinch crushed red pepper flakes
3/4 teaspoon Pimenton de la Vera (smoked Spanish Paprika)
3/4 teaspoon coarse salt
1/4 teaspoon coarsely ground pepper
1 1/2 teaspoons unsalted butter (optional)

Steps:

  • Puree all the ingredients in a food processor.
  • Transfer the puree to a small saucepan and simmer for one hour, or until the sauce has thickened slightly.
  • Let cool and store in a covered jar in the refrigerator for up to one month.

A rich and slightly sweet BBQ sauce made with a lot of fresh blackberries!

2 cups fresh blackberries
1 cup chicken stock
1/2 cup ketchup
1/4 cup brown sugar
2 tablespoons apple cider vinegar
1/2 lemon, juice only
2 teaspoons chili powder
1/8 teaspoon cinnamon
1/4 teaspoon dried mustard
1 pinch salt

Steps:

  • Add blackberries and chicken stock to a medium pot over high heat and bring to a simmer. Cook until blackberries start to break down, about 6-7 minutes.
  • Mash blackberries well in the pan. Then let the blackberry mixture cool a bit and add to a blender. Blend well.
  • Press blackberries through a mesh strainer to remove seeds. Add sauce back to pot and bring back to a simmer over medium heat.
  • Add other ingredients to the pot and continue to simmer until sauce is really thick and coats the back of a spoon.
  • Season BBQ sauce with salt and brush it on chicken or pork. Works great on the grill or roasted.

2 cups blackberries
1 cup ketchup
¼ cup honey
2 tablespoons apple cider vinegar
½ teaspoon garlic powder
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
¼ teaspoon red pepper flakes

Steps:

  • Place all ingredients in a saucepan over medium heat
  • Bring to a simmer and then cook over medium low heat for 3-5 minutes until berries are broken down
  • Pour into a sieve over a heat proof container
  • Push sauce through sieve with a spatula or a spoon. Discard remaining seeds and pulp
  • Allow sauce to cool then cover and refrigerate until ready to use

3/4 c seedless blackberry jam - or i have used blackberry jelly
1/4 c ketchup
1/4 c packed brown sugar
2 tsp hot sauce, shiracha sauce or red pepper flakes - optional
1 tsp fresh minced ginger or ground ginger
1/4 tsp pepper

Steps:

  • 1. Place all ingredients in a small saucepan; bring to a boil; stirring continually as the sauce boils for 2 - 3 minutes or until brown sugar has dissolved. It will thicken more as it sits. This sauce is great on meatballs, ribs and chicken....Enjoy!
