Asian Spice Rubbed Ribs with Pineapple-Ginger BBQ Sauce and Black and White Sesame Seeds image

2 tablespoons canola oil
4 cloves garlic, smashed
3-inch piece fresh ginger, peeled and chopped
1 large Spanish onion, coarsely chopped
3 cups fresh ripe pineapple chunks
1 habanero, chopped
1 cup fresh pineapple juice
2 cups hoisin sauce
1/4 cup ketchup
1/4 to 1/2 cup dark brown sugar (depending on sweetness of pineapple)
3 tablespoons ancho chile powder
2 heaping tablespoons Dijon mustard
2 tablespoons honey
2 tablespoons soy sauce
2 teaspoons ground star anise
1 teaspoon ground cinnamon
Salt and freshly ground black pepper
1/4 cup Spanish paprika
1 1/2 tablespoons dry mustard
1 tablespoon ground ginger
1 tablespoon ground star anise
1 1/2 teaspoons ground allspice
1 1/2 teaspoons kosher salt
1 1/2 teaspoons ground black pepper
1 teaspoon Thai chile flakes
2 racks St. Louis style pork ribs (12 ribs each), membranes removed
2 cups soy sauce
1/2 cup peeled and coarsely chopped fresh ginger
6 cloves garlic, smashed
1 tablespoon black sesame seeds
1 tablespoon white sesame seeds
1 bunch scallions, chopped

Steps:

  • For the sauce: Heat the oil over medium-high heat in a heavy-bottomed medium saucepan. Add the garlic, ginger and onions and cook until soft, about 5 minutes. Add the pineapple chunks and habanero and cook for 1 minute. Add the pineapple juice and cook until it caramelizes slightly, about 3 minutes. Add the hoisin, ketchup, brown sugar, ancho powder, mustard, honey, soy sauce, star anise and cinnamon and cook until thickened, about 30 minutes.
  • Transfer the mixture to a blender and blend until smooth. Season with salt and pepper . Pour into a bowl and allow to cool to room temperature.
  • For the ribs: Stir together the paprika, dry mustard, ground ginger, star anise, allspice, salt, pepper and Thai chile flakes in a bowl. Rub the ribs on the top side, wrap in plastic wrap and refrigerate for at least 4 hours and up to 24 hours.
  • Preheat a charcoal grill with about 80 briquettes off to 1 side, or in a kamado-style ceramic charcoal cooker with the ceramic plate removed. Remove the ribs from the refrigerator 1 hour before grilling.
  • Combine 4 cups water, the soy sauce, ginger and garlic and divide between two heavy disposable pans.
  • If using a charcoal grill: Put one disposable pan of steaming liquid on the bottom grate of the grill on the opposite side of the coals. Put the top grate on and heat well. Put the ribs on the grill, top-side down, directly over the hot coals and cook until golden brown and a crust has formed, about 10 minutes. Move the ribs to the other side of the grill, over the liquid, and place the other disposable pan with steaming liquid next to them over the coals. Put the lid of the grill on and open the vents on top halfway. Cook until the ribs are tender and juicy, about 2 hours. Add water as necessary to prevent scorching, and coals to keep the internal temperature between 225 and 250 degrees F.
  • If using the kamado-style ceramic charcoal cooker: Remove the ceramic plate and heat the grill rack. Put the ribs on the grill, top-side down, directly over the hot coals and cook until golden brown and a crust has formed, about 10 minutes. Remove the ribs and rack and put in the ceramic plate. Put one disposable pan of steaming liquid on the plate, then return the rack and the ribs to the grill. Cover and cook until ribs are tender and juicy, about 2 hours. Add water as necessary to prevent scorching, and coals to keep the internal temperature between 225 and 250 degrees F.
  • If using charcoal, finish the ribs by moving them back over the hot coals and turning and basting with sauce for 15 to 20 minutes. If using the ceramic charcoal cooker, leave the plate in and brush liberally with sauce for 15 to 20 minutes before removing from the grill.
  • Combine the sesame seeds and sprinkle the tops of the ribs. Cut the ribs apart and put on a platter. Scatter the green onions over the top and serve.

Asian black bean sauce is actually made from soy beans, which turn black as they ferment. When I saw the contest ingredients I was inspired to attempt a version using actual black beans. The sauce pairs nicely with the colorful sesame carrot pancakes. This recipe can be served as a unique side dish or as a hot or cold appetizer.

3 slices white bread, toasted crisp
1 cup fresh carrot, grated (about 2 medium)
2 tablespoons sesame seeds, toasted
2 green onions, sliced
1 teaspoon sea salt
2 eggs, lightly beaten
1 garlic clove, minced
2 -4 tablespoons canola oil (for light frying)
1 (15 ounce) can black beans (rinsed, drained and mashed)
1 tablespoon sesame oil
2 garlic cloves, minced
1 teaspoon lime juice
1/2 tablespoon low sodium soy sauce
1/2 tablespoon rice vinegar
1 teaspoon sugar
1/8 teaspoon ginger
1 dash sea salt
2 green onions, sliced

Steps:

  • For Pancakes: Process the toast in blender or food processor (to small, but not necessarily fine, crumbs) and combine with the rest of the ingredients in a small bowl.
  • Heat half the oil in a deep-sided griddle or frying pan, to about 350°. Spoon a Tablespoon of batter onto the griddle, flatten out slightly, and fry until golden on the bottom. Flip over and fry the other side. Continue until all the batter is used up; adding additional oil if necessary.
  • For Sauce: Combine mashed beans and sesame oil in small bowl. Add the rest of the ingredients & stir well. Serve a dab of sauce on top of each pancake.

BLACK SESAME CHICKEN WITH ROASTED RED PEPPER SAUCE

You can make the sauce up to 24 hours ahead. Refrigerate and heat just before serving. You can substitute garlic herb cream cheese spread if you don't care for chevre cheese. Black sesame seed can be used for a more dramatic look.

1/3 cup butter or 1/3 cup margarine, melted
1/3 cup black sesame seeds or 1/3 cup regular sesame seeds
6 boneless skinless chicken breast halves (about 2 pounds)
1 (6 ounce) package chevre cheese with herbs (goat)
1 teaspoon olive oil or 1 teaspoon vegetable oil
1 (7 ounce) jar roasted red peppers, drained
1 garlic clove, finely chopped
1 teaspoon sugar
1/4 teaspoon salt
1 dash ground red pepper (cayenne)
1 tablespoon sour cream

Steps:

  • Heat oven to 425. Spray rectangular pan, 13x9x2 inches, with cooking spray. Place melted butter in large shallow bowl.
  • Make 2-inch horizontal slit in each chicken breast. Stuff 1 tablespoons cheese in each pocket. Dip each chicken breast into butter; sprinkle with sesame seed.
  • Heat oil in 12-inch nonstick skillet over medium heat. Cook chicken in oil until brown on both sides. Place chicken in pan. Drizzle with any remaining butter.
  • Bake uncovered 15 to 20 minutes or until chicken is no longer pink in center. Meanwhile, prepare Roasted Red Pepper Sauce; keep warm. Serve chicken in pool of sauce, or drizzle sauce over chicken.
  • To prepare sauce: Place all ingredients except sour cream in mini food processor or blender. Cover and process until smooth. Heat mixture in 1-quart saucepan over medium heat, stirring occasionally, until hot; remove from heat. Strain if desired; stir in sour cream.

BLACK SESAME SAUCE

1/4 cup black sesame seeds
1/2 teaspoon kosher salt
1/2 teaspoon expeller-pressed vegetable oil
1 tablespoon sake
1 tablespoon mirin
1/4 cup Dashi (recipe follows), chicken stock, or water
Dashi
5 dried black mushrooms
1 (1 × 4-inch) strip of kombu
3 tablespoons bonito flakes
(makes about 2 1/2 cups)

Steps:

  • Toast the sesame seeds in a small sauté pan over medium heat, tossing frequently, until the seeds become fragrant and begin to pop. Transfer them to a plate and let them cool completely. Grind in 10-second increments in a spice mill or clean coffee grinder to a very fine paste, stirring the mixture, then grinding again, and repeating this process until the paste is completely smooth and glistening from the oil that has been released. This will take 3 to 5 minutes. (If the seeds are not ground into a very smooth paste, the sauce will be gray rather than deep black.) Transfer the paste to a small bowl, add the salt, and gradually whisk in the oil, sake, mirin, and dashi until smooth.

  • Put 3 cups water and the mushrooms in a nonreactive saucepan and bring to a simmer. Turn the heat to low, cover, and cook at a very gentle simmer for 10 minutes. Add the kombu and simmer very gently for 5 minutes. Remove from the heat and add the bonito flakes. Let steep, covered, for 8 minutes. Strain through a fine-mesh sieve. Discard the solids and use the broth as you would stock.
