ROASTED RAINBOW TROUT WITH ROCK SHRIMP AND SAGE BUTTER STUFFING

- Preheat the oven to 425 degrees.
- Well in advance of cooking the fish, prepare the stuffing. Combine the sage, softened butter, lemon juice, spice and seasonings, bread crumbs, pine nuts, jalapenos, garlic and coriander in the bowl of a food processor, pulsing to combine well. Remove and place in a bowl. Keep refrigerated until ready to use.
- Season the trout with salt and pepper and rub the trout with olive oil.
- Divide the stuffing between the 4 fish evenly and spread an even layer inside the cavity of the fish. Divide the shrimp in the same way and add the shrimp in a layer in top of the herb butter. Close the fish to seal in the stuffing.
- Lay the fish on an oiled rack and set in a roasting pan.
- Place the fish in the oven and roast for 12 minutes on each side. Remove and serve immediately.

- Make the tomato vinaigrette. Over a flame or in the broiler, lightly char the outside of a few Roma tomatoes. Purée the tomato smooth and measure one cup. Blend the tomato with the vinegar, dijon, lemon juice, and one teaspoon of salt. Now emulsify the tomato mixture with the olive oil. Set aside and do not cool.
- Dice the focaccia into one-inch cubes and lightly toast. Then buzz the crumbs in a food processor.
- Toast the pine nuts in a pan on the stove until lightly browned. Cool and roughly chop.
- Cook the leeks. Dice them small and sauté with two tablespoons of butter until they are translucent. Season with salt. Add a splash of water and cook until the water is absorbed. Repeat the water process. Cooking out the water will make the leeks nice and creamy. Set aside to cool.
- Make the stuffing. Mix the bread crumbs, pine nuts, capers, lemon zest, parsley, ramp powder, ½ teaspoon of salt, and ½ teaspoon of cracked black pepper.
- Lay out the fish skin side down and lightly season the flesh with salt. Add a liberal amount of the bread crumb mixture to each fish. Now split the leeks between the two fish and evenly layer over the bread crumbs. Close the fish and tie off with butcher's twine in 3 or 4 places, running the fish's length to secure the filling. You can also omit using the butcher's twine, just be careful when you handle the fish during the cooking process.
- Preheat the oven to 425ºF.
- Dredge and sear the fish. Heat two tablespoons of oil in a large skillet on medium-high heat. Lay the fish into seasoned flour and brush off any excess. Carefully set the fish in the oil. Sear until browned, flip, add a tablespoon of butter, and brown the second side. Remove the first fish to a sheet tray. Pour out the existing oil/butter and repeat the searing process with the second fish.
- Bake the fish on the sheet tray for 15 to 20 minutes or until the internal temperature reaches 165ºF.
- While the fish is baking, cook the asparagus al dente in a hot pan with butter and garlic. Season lightly with salt and pepper.
- Plate with tomato oil down first, then asparagus, and finish with the fish. Drizzle a little olive oil and garnish with finely chopped chives.

- In a small bowl, whisk together the honey and mustard to form a glaze. Set aside.
- Prepare an ice-water bath in a large bowl and bring a medium pot of salted water to a boil. Blanch the asparagus until tender, 6 minutes. Drain and refresh them in the ice water to preserve their color. Drain again and set aside.
- Heat the lentils over a low flame and keep warm.
- Spray a grill or grill pan with nonstick spray and preheat until it's very hot (if using a grill pan, heat for at least 4 minutes). Dry the fillets and season the flesh sides with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper, then brush both sides with the olive oil. Place the fish, skin side down, on the grill and cook for 4 minutes. Flip the fish and brush the skin side with the reserved honey-mustard glaze. Continue to cook for 2 minutes. Hold the cooked trout aside.
- Melt 3 tablespoons of the butter in a large saute pan over medium heat. Add the walnuts and toast for about 3 minutes, shaking the pan often to prevent burning. Season the nuts with 1/4 teaspoon salt, 1/4 teaspoon of black pepper, and 3 tablespoons of the balsamic vinegar. Cook for 3 to 5 minutes, until the vinegar has reduced to a thick syrup that coats the nuts. Add the remaining tablespoon of butter and stir for an additional minute. Turn the flame down to low and add the asparagus.
- In a small saucepan, bring the remaining 1/2 cup of balsamic vinegar to a boil. Cook for about 3 minutes, until it has reduced down to 2 tablespoons.
- Turn the flame off under the asparagus-walnut mixture and add the baby spinach along with a drizzle of the balsamic glaze. Gently toss to combine, and allow the heat of the pan to wilt the spinach.
- Plate the salad by creating a small bed of the spinach-asparagus mixture in the center of the plate, surrounded by 3 dollops of warm lentils. Place 2 trout fillets, skin side up, on top of the spinach mixture. Drizzle with the balsamic glaze.

- Melt butter in olive oil over medium heat in a saucepan. Cook and stir onion, carrot, celery, and salt until vegetables are softened and onion is translucent, about 10 minutes.
- Reduce heat to low and add thyme sprigs and pepper. Stir in lentils until well coated. Add chicken stock and bring to a gentle simmer.
- Reduce heat to low, cover and cook, checking occasionally, until the lentils are tender and have absorbed all the liquid, about 35 minutes. Remove from heat and discard thyme stems. Stir in champagne vinegar and parsley. Season with salt and pepper to taste.

- Heat oven to 200C/180C fan/gas 6. Put the fennel and onion in a large roasting tin and toss with 2 tbsp oil, 1 tbsp lemon juice and plenty of seasoning. Roast for 20 mins until almost tender and starting to caramelise. Meanwhile, put the couscous in a medium bowl. Mix the saffron and hot stock, pour over the couscous and cover with cling film.
- Rinse the fish with cold water inside and out, then pat dry. Slash deeply on both sides and season with salt, pepper and a pinch of the lemon zest. After 10 mins soaking, fluff up the couscous with a fork and add 2 tbsp lemon juice, the remaining zest, the dill, 1 tbsp pine nuts and seasoning to taste. Stuff the couscous into the cavity of each fish, reserving any leftover couscous for later.
- Stir the tomatoes and currants into the tin. Sit the fish on top and roast for about 30 mins, depending on its size. Look for juices running from the slashes in the flesh. Tug gently on the back fin - if it comes away easily, the fish is cooked.
- 4 Scatter with the rest of the pine nuts, then serve from the tin, with lemon wedges for squeezing over. Serve one stuffed fish per person, or if you have cooked large fish, gently lift the fillets from the top of the fish first, then turn over and repeat. Share out the couscous stuffing and leftover couscous.
