Here's a very simple recipe for a mouthwatering, fresh pie that features two kinds of berries and is simply delicious! The brown-sugar crumb topping adds buttery old-time crunchiness and flavor to this summery dessert classic. Thanks to Linda Palmer in Greenville, Ohio for the recipe.

Number Of Ingredients 10

1 sheet refrigerated pie pastry
3 cups fresh blackberries
2 cups fresh blueberries
3/4 cup sugar
1/4 cup cornstarch
1/8 teaspoon ground nutmeg
TOPPING:
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup cold butter

Steps:

  • Unroll pastry into a 9-in. pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. , In a large bowl, combine blackberries and blueberries. Combine the sugar, cornstarch and nutmeg; sprinkle over berries and toss gently. Pour into crust., In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Sprinkle over filling. , Bake at 375° for 55-60 minutes or until set (cover edges with foil during the last 15 minutes to prevent overbrowning if necessary). Cool on a wire rack.

Number Of Ingredients 14

CRUST
4 c all purpose flour
1 Tbsp granulated sugar
2 tsp salt
1 3/4 c cold shortening
1/2 c cold water
1 large egg
1 Tbsp white vinegar
FILLING
4 c fresh or frozen black berries (do not thaw)
4 c fresh or frozen blue berries (do not thaw)
2 c granulated sugar
1/2 c all purpose flour
half and half

Steps:

  • 1. Crust: In a large bowl, combine the flour, sugar and salt; cut in the shortening until mixture resembles course crumbs.
  • 2. In a small bowl, combine the water, egg and vinegar; stir into the dry ingredients just until moistened. Form into a roll. Cover and refrigerate for 1 hour.
  • 3. On a floured surface, roll 2/3 of the dough out to an 18x14" rectangle. Carefully place onto the bottom and up the sides of a 13x9x2" glass baking dish.
  • 4. Filling: Combine berries, sugar and flour. Pour into crust.
  • 5. Use the remaining crust to make lattice strips, place over filling. Brush pastry with half and half.
  • 6. Bake in a 400 degree oven for 15 minutes, then reduce the heat to 350 degrees and bake for another hour or until filling is bubbly. Cool completely. Store in refrigerator.

1 9" double pie crust
3/4 cup sugar
1/3 cup flour
1/4 tsp ground cloves
1/8 tsp ground nutmeg
4 cups fresh blueberries
1.5 cups fresh blackberries
1/2 tsp vanilla extract
1 tbsp fresh lemon juice
2 tbsp unsalted butter, cut into small pieces

Steps:

  • Preheat oven to 450. Bottom pie crust in pie plate. Combine sugar, flour, cloves and nutmeg. Gently stir in the berries and vanilla until well coated, then pour into the bottom crust. Sprinkle with the lemon juice and dot with the butter. Put top crust on pie. Seal the crusts, then crimp the edges. Cut steam vents in the top with a knife. Cover the edge of the pie with a 2- to 3-inch wide strip of aluminum foil. Place in the oven and bake until the top turns golden, 35 to 45 minutes. Remove foil the last 10 mins of baking.

This I got from Rachael Ray. I modified it to fit my own tastes so feel free to modify for your own also.

Number Of Ingredients 15

2 lbs potatoes, peeled and cut into chunks
salt & pepper
1/2 tablespoon extra virgin olive oil
6 slices apple-smoked bacon, thick sliced chopped up
2 lbs ground sirloin
1 onion, chopped
1 lb button mushroom, quartered
6 tablespoons butter
4 tablespoons all-purpose flour
3 cups beef stock
3 tablespoons Worcestershire sauce
3 tablespoons sour cream
1/2 lb blue cheese (buy the triangle and crumble by hand)
4 tablespoons chives
1 teaspoon paprika

Steps:

  • Place potatoes in a pot and cover with cold salted water.
  • Bring to boil cook 15-20 minutes while cooking meat mixture.
  • Use a very deep heavy pan/skillet such as cast iron. Also must be oven proof. Heat pan to a medium high, add oil and bacon cook until done.
  • Drain bacon on paper towels.
  • Add sirloin to the pan and cook 5 minutes.
  • Add in the mushrooms and onions and cook until meat is done and onions and mushrooms are tender.
  • Season with salt and pepper to taste, and add any seasonings you like at this time.
  • While meat cooks heat a small sauce pot over medium heat and melt 4T butter, whisk the flour into butter.
  • Cook 2 minutes then whisk beef stock into flour, add Worcestershire and season to taste. Let thicken on low heat until meat is done.
  • Pour gravy into meat pan and mix thoroughly, taste and season if necessary.
  • Drain potatoes well and let dry in hot pot they cooked in while you prepare to make them. I prefer using a ricer to eliminate all lumps, but if you don't have one then mash well with what you have (fork masher, etc.).
  • Stir in the sour cream, 2 Tbsp butter until well mixed. Taste for seasoning needs.
  • Then fold in crumbled blue cheese and chives.
  • Spread potatoes on top of the meat mixture.
  • Sprinkle top with paprika for color and broil for a few minutes until golden brown on top.
  • Crumble reserved bacon over top. Serve immediately.
