1 pound shrimp, peeled and deveined
2 tablespoons jerk seasoning
1 tablespoon canola oil
1 sweet potato, thinly sliced
1 can (15 ounces) black beans, drained
3 cloves garlic, sliced
1 jalapeƱo chile pepper, seeded and minced (wear plastic gloves when handling)
2 scallions, sliced
1/4 cup orange juice
Chopped cilantro

Steps:

  • In a large bowl, toss together the shrimp and jerk seasoning. Heat a wok or skillet over medium-high heat. Add the oil. When hot, add the shrimp. Cook, stirring, for 3 minutes, or until they turn pink. Remove from the wok. Add the sweet potato to the wok and cook for 4 minutes, or until tender. Stir in the beans, garlic, chile pepper, and scallions. Cook, stirring constantly, for 1 minute. Stir in the shrimp and orange juice. Heat for 30 seconds. Served garnished with the cilantro.

Fresh and colorful veggies join black beans in this flavor-packed side-dish salad made with a hint of citrus - ready in just 10 minutes!

3 tablespoons fat-free Italian dressing
1/2 teaspoon grated lime peel
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro
1 can (15 oz) black beans, drained, rinsed
3 1/2 cups mixed salad greens (about half of 10-oz bag)
1 medium tomato, cut into wedges
1/2 avocado, pitted, peeled and chopped (1/3 cup)

Steps:

  • In 1-cup measuring cup, mix dressing, lime peel, lime juice and cilantro.
  • In large bowl, toss beans, salad greens and tomato. Stir in dressing mixture until salad is coated. Top with avocado.
