This is my grandmother's recipe for chili and the only one I make for my family now since we all love it so much. This recipe is great after it has sat overnight in the fridge as well. The flavors blend nicely over time. Garnish with shredded cheese or other ingredients to you're liking.

2 tablespoons olive oil
1 large onion, chopped
3 (15 ounce) cans black beans, rinsed and drained
2 (14.5 ounce) cans diced tomatoes
2 (5 ounce) cans chicken, drained
2 (1.25 ounce) packages chili seasoning mix
1 teaspoon ground cumin
salt and ground black pepper to taste

Steps:

  • Heat the olive oil in a large pot over medium heat. Cook and stir onion in hot oil until soft. Stir black beans, diced tomatoes, chicken, chili seasoning, cumin, salt, and pepper through the onion, breaking up large pieces of chicken until shredded; bring to a boil, reduce heat to medium low, and cook at a simmer until hot, about 15 minutes.

2 tablespoons oil
1 cup onion, chopped
1 garlic clove, minced
1/3 cup flour
1 tablespoon chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
2 cups milk
1 cup chicken broth
2 cups white shoepeg corn, frozen
1 (15 ounce) can white beans, rinsed
1 (15 ounce) can black beans, rinsed
2 cups cooked chicken, cubed
1 (4 ounce) can green chilies, undrained
1/4 cup fresh cilantro, chopped

Steps:

  • Heat oil in dutch oven or large saucepan over medium-high heat. Add onions and garlic; cook until onions are tender.
  • (Have chicken broth ready) Stir in flour, chili powder, cumin and salt. Note: If you use a bullion cube to make the chicken broth, you might want to reduce or leave out the salt.
  • Gradually stir in chicken broth until thickened. Add 2 cups of milk and continue stirring.
  • Add remaining ingredients except cilantro; stir to combine. Bring to a low boil, but watch for scorching of milk.
  • Reduce heat; simmer 15 minutes. Stir in chopped cilantro.
  • Garnish with crushed taco chips, sour cream, fresh cilantro and hot sauce if you like.

2 lbs boneless skinless chicken breasts, cut into 1/2 inch cubes
1 medium onion, finely chopped

1 (19 ounce) can black beans, rinsed and drained or 2 cups cooked black beans
2 cups mild salsa or 2 cups hot salsa

  • Heat oil in skillet over medium heat.

2 boneless skinless chicken breast halves, cut into 1-inch pieces
1 cup chopped onion
1 cup chopped green pepper
2 garlic cloves, minced
2 tablespoons chicken broth
2 (28 ounce) cans stewed tomatoes
2 (15 ounce) cans black beans, rinsed and drained
1 teaspoon salt
1/2 teaspoon hot sauce (or more to taste)
2 cups medium salsa
2 tablespoons chili powder
1 teaspoon ground cumin
shredded cheddar cheese (optional) or monterey jack cheese (optional)

Steps:

  • Simmer the chicken, onion, green pepper and garlic in the 2 tablespoons of broth in a stockpot until the chicken is cooked through, about 10-15 minutes.

3/4 cup vegetable oil
2 1/2 lbs boneless chicken, coarsly diced
6 dried pasilla peppers, cored and seeded
3 -4 large onions, diced
1 medium onion
3 bay leaves
1 small head garlic, peeled and minced
2 tablespoons crushed black peppercorns
2 tablespoons cumin
3 1/2 cups chicken stock
2 lbs tomatoes, peeled seeded and chopped
3 (12 ounce) bottles dark beer
2 jalapeno peppers, cored seeded and chopped
2 serrano chilies, cored seeded, and chopped finely
1 bunch fresh oregano leaves, chopped
1 bunch fresh thyme, chopped
2 medium lemons, chopped fine zest
2 lemons, juice of
1/2 lb black beans, soaked overnight
1/2 medium carrot
1/2 medium celery
1 1/4 cups water
1 bunch cilantro leaf, chopped fine
1/4 cup molasses

Steps:

  • Heat a large skillet. Pour in 1/2 cup oil and, over medium heat, saute the chicken until the liquid evaporates, 10 to 15 minutes. Make sure to cook thoroughly on all sides.
  • In a large pot, heat remaining 1/4 cup oil. Over medium heat, saute the pasilla chiles for about 2 minutes. Remove the chiles and reserve. In the same pot, saute the onions for about 10 minutes. Add bay leaves, garlic, peppercorn, cumin, and paprika. Stir thoroughly.
  • Cook the reserved pasilla chiles in 2 cups of chicken stock until tender. Transfer to a blender or a food processor and puree the chiles. Pour into the pot with the sauteed onions and cook until most of the liquid is absorbed.
  • Add tomatoes and beer. Cook over medium heat for about 2 hours, stirring occassionally. The last 30 minutes of cooking, add chicken.
  • Stir in jalapeno and serrano peppers, oragano, thyme, lemon zest and juice, and combine well. If more liquid is needed, add water from bean soak.
  • While the chili is cooking, drain the beans, reserving the liquid. Place the beans in a saucepan with the medium onion, carrot, and celery stalk. Pour in the remaining 1 1/2 cups stock and the water. Cook over medium-high heat until tender, about 2 hours. Add water as neccessary. Rmove the onion, carrot, and celery. Drain the beans, reserving the liquid to use as needed in the chili.
  • Add the beans and cilantro to the chili pot. Stir in the molasses. Add salt to taste. Remove the bay leaves.
  • Serve with shredded cheese, sour cream, tortillas, chopped onions and chopped jicama. Serve immedietly.
  • May be made in advanced and heated up on low heat when ready to serve.

4 lbs. grilled and 1/2" diced chicken breasts. I use skin on, 11 oz. boneless breasts and season the breasts w/ chili powder, fresh garlic, S&P in olive oil, then grill skin side down. Remove skin before dicing.
3 large onions, 1/4" diced.
3 ea. red, yellow and green bells 1/4" diced.
4 garlic cloves minced.
1 1/2 lbs. black beans, cooked in salt water until tender, rinse and set aside.
four ears grilled corn, cut off and set aside (should equal to 3 cups).
2 gal chicken stock.
2 1/2 to 3 cups of ancho chili paste (if you cannot buy it make it from dried).
1 tbsp. ground cumin.
1 qt heavy cream.
1 cup cajun style roux (pre-cooked.
1 tsp. course grnd (1/8 grain)blk pepper.
2 bu. chopped cilantro.

Steps:

  • Carmelize onions and garlic in olive oil. Add peppers and stock, and bring to a simmer. Add the ancho paste, cumin and black pepper. When peppers are tender add cream and tighten with the roux. When chili has reached a creamy slightly thick consistancy, add beans, corn and chicken. Adjust seasoning, salt content, remove from heat and stir in the cilantro. I serve it with a pinch of cilantro on top and a dollop of sour cream.

ONE-POT BLACK BEAN AND CHICKEN CHILI



One-Pot Black Bean and Chicken Chili image

1 handful Shredded Cheddar Cheese

Steps:

  • Prep- Cube the peppers into big pieces, thinly slice the green onions, mince the garlic, pat the chicken dry and cut into cubes, sprinkle half the seasoning onto the chicken (1 tbsp). Season with salt and pepper
  • Cook Chicken- heat a large pot into medium high, add a tbsp of oil and then the chicken, cook until golden brown (2-3 mins/side)
  • Cook Veggies- Add green pepper, cook stirring 2-3 mins, add garlic, tomato sauce, remaining seasoning, chili powder 1 min/ until fragrant
  • Simmer Chili- Add crushed tomatoes, broth concentrate and 1 1/2 cups of water. Bring to a boil and then simmer until chili is thickened and chicken is cooked (6-7 min).
  • Finish Chili- Strain and rinse the beans, break the chicken into smaller pieces, stir the corn and beans into the chili until warm (2-3 mins)
  • Finish and Serve- Divide the chili between the bowls and serve with cheese, green onions and sour cream on top

  • Sauté chicken in half of the oil, with garlic and some of the onions and bell peppers, together with Worcestershire sauce, Cayenne sauce, paprika, salt and pepper, and put aside. Sauté all the vegetables in the remaining oil, starting with the carrots and ending with the mushrooms. Do most of your seasoning (to taste) here, but save some cumin and chili powder for when the beans are added. Don't add too much Cayenne pepper right away. Combine vegetables, chicken and beans in a large pot. (If you insist on draining the beans, you will have to make up for the lack of liquid and taste some other way -- it's up to you.) Adjust seasoning to taste, and allow to simmer for a while (but keep the vegetables on the crisp side). Add a little vegetable or tomato juice to make the chili thinner if necessary. Lastly, add the secret ingredient: Parmesan cheese! Sample and enjoy!

1 large yellow onion, peeled, quartered
5 cloves garlic, peeled
2 green poblano chiles, halved
2 jalapeño chiles, halved
1 tablespoon cumin seeds
1 tablespoon coriander seeds
2 cups dried black beans, rinsed and soaked overnight
6 cups chicken stock (page 91) or water
1 (16-ounce) can crushed tomatoes, undrained
3 tablespoons chili powder
2 tablespoons dried Mexican oregano
1 cup beer
1/4 cup unsweetened cocoa powder
4 boneless skinless chicken breasts, cubed
Salt and freshly ground black pepper
1/2 cup grated Monterey Jack or cheddar cheese, for garnish
1/2 cup sour cream, for garnish

Steps:

  • Preheat the broiler. Place the onion, garlic, poblanos, and jalapeños on a baking sheet, with the chiles skin side up. Place under the broiler and grill for about 10 minutes, until the onion and garlic are quite soft and the chile skins are blackened. Cover the chiles with a damp kitchen towel and let rest for about 20 minutes. Peel off the skins or scrape them off using a paring knife. Remove the stems and seeds. Coarsely chop the chiles, garlic, and onion.
  • Grind the cumin and coriander seeds in a coffee mill or with a mortar and pestle.
  • Drain the beans and place them in the slow cooker. Add the chiles, garlic, onion, ground spices, water, tomatoes, chili powder, and oregano. Cover and cook on low for 6 hours. Add the beer, cocoa powder, and chicken and continue cooking on low for 2 hours, until the meat is very tender. (In a pinch, you could put all the ingredients in the pot at the same time and cook for 6 to 8 hours. By adding the chicken during the last 2 hours, you will retain some of the chunks.) Season to taste with salt and pepper. Serve at once.

  • Use 6 chicken legs or 10 drumsticks rather than the cubed chicken breast. Add chorizo sausage for additional flavor.

I created this in late August when my vegetable garden was in it's prime, with fresh tomato sauce and zucchini and corn... I'm not really too big on ground beef, so I made this chili with chicken, and it is hands down my favourite chili. My whole family, including the picky ones, loved it. I left out any hot ingredients like cayenne or hot sauce, because that is entirely up to you folks. Tastes great with a nice piece of cornbread alongside too!

2 boneless skinless chicken breasts
2 pinches chili powder
2 pinches cumin
1 pinch black pepper
1 pinch thyme
4 cups tomato sauce
1 (19 ounce) can black beans, well rinsed
2 medium zucchini, cut in 1/2-inch cubes
1 1/2 cups fresh corn niblets
1 medium onion, chopped
2 garlic cloves, minced
2 tablespoons chili powder
1 1/2 teaspoons cumin
2 pinches thyme
1 teaspoon salt
1 teaspoon black pepper
1 1/2 tablespoons sugar

Steps:

  • Season chicken breasts with chili powder, cumin, pepper and thyme.
  • Grill 5 minutes on each side, or till cooked thoroughly (you could probably pan fry them as well, but the grilled flavour is great in this chili).
  • Shred chicken into small pieces and reserve.
  • On stovetop, in a large pot, saute onions, zucchini, corn and garlic in a bit of oil on med-low heat for about 10 minutes.
  • Add black beans and spices(salt, pepper and sugar included), and saute another two minutes.
  • Add tomato sauce and let simmer, covered, for about 15-20 minutes.
  • Stir in chicken and let simer, covered for another 5 minutes.

1 pound black beans, rinsed and picked over to remove debris
8 cups water
8 cups chicken broth
3 bone in, skin on chicken breasts
1/4 cup canola oil
2 onions, diced
2 carrots, peeled and chopped
2 red bell peppers, seeded and chopped
4 cloves garlic, minced
2 jalapenos, seeded and chopped
1 habanero pepper, seeded and chopped
2 Tbs. chili powder
2 tsp. ground cumin
1 1/2 tsp. ground coriander
2 bay leaves
1 Tbs. oregano
2 tsp. kosher salt
black pepper
1 (28 ounce) can diced tomatoes
1/2 cup barley
1/2 cup chopped fresh cilantro

Steps:

  • Place the beans in a large stockpot with 8 cups water, bring to a boil, reduce heat, partially cover, and simmer for 1 hour, until the beans are tender. Drain and set aside. Season chicken with salt and pepper - brown in 2 Tbs. canola oil in soup pot - when well browned add broth, chili powder, cumin, coriander, bay leaves, oregano. Bring to boil and cook until breast are just cooked - about 20 minutes. Remove breasts and shred meat when cool enough to handle. In another pan, saute vegetables in 2 Tbs. canola oil. When very soft, add jalapeno, habanero, garlic, tomatoes - simmer 5 - 10 minutes. Add vegetables, black beans and barley to broth and cook until beans and barley are very tender. Add shredded chicken and cilantro to pot and cook about 10 minutes.

1 onion, finely chopped
2 garlic cloves, minced
1 lb boneless skinless chicken breast, cubed
2 cups chicken broth
1 tablespoon chili powder
1 teaspoon ground cumin
2 (14 1/2 ounce) cans black beans, drained & rinsed
1 (14 1/2 ounce) can diced tomatoes
1 1/2 cups corn

Steps:

  • Heat oil in a large soup kettle. Saute onion and garlic until soft. Add cubed chicken and cook until done.
  • * I sometimes use precooked chicken to save a couple minutes prep time or use up leftovers.
  • Add broth, spices ,black beans, tomatoes, and corn. Bring to a boil, and then let simmer for 20 minutes.
  • Can also be cooked in the crockpot rather than on the stovetop -- in fact. the longer it cooks the tastier it is. Freezes well also.
