These delicious, fudgy Black Bean Brownies taste just like traditional brownies! They can easily be made gluten free, dairy free and nut free, but everyone, not just those on special diets, will love these!

15 oz can black beans, drained and rinsed (approximately 1 cup of beans)
1/2 cup olive oil (other oils can be used)
2 large eggs
1/2 cup unsweetened cocoa powder
2/3 cup sugar
1 tsp espresso or instant coffee powder
2 tsp vanilla extract
1 cup chocolate chips
1/3 cup flour (oat flour or other gluten free flours can be used)
1/2 tsp baking powder
1 tsp salt

Steps:

  • Preheat oven to 350 degrees F. Prepare a 9x9 inch pan either spraying well with non-stick cooking spray, or lining with parchment paper, then spraying with non-stick cooking spray.
  • In a food processor, or blender, puree black beans with oil until smooth. Add eggs, and puree until well combined. Add in cocoa powder, sugar, coffee and vanilla. Puree until well combined.
  • In a microwave safe bowl, melt 1/2 cup of the chocolate chips by heating in 20 second increments, stirring VERY well after each to help melt chocolate chips. This may take 60 to 80 seconds total, but make sure to stir after every 20 seconds to avoid overcooking chocolate. Add melted chocolate to mixture and puree until combined.
  • Combine flour, baking powder and salt. Add to mixture, along with remaining 1/2 cup chocolate chips, and blend until just combined, do not over mix.
  • Pour batter into preapred pan. If desired, add additional chocolate chips to the top of the batter.
  • Bake for approximately 25 minutes or until a toothpick inserted into the middle comes out almost clean, and the center appears to be setting up. Do not overbake.
  • Allow to cool at least 30 minutes prior to cutting. If desired, dust with powdered sugar prior to serving. Store tightly covered.

1 1/2 cups black beans ((1 15-oz can, drained and rinsed very well) (250g after draining))
2 tbsp cocoa powder ((10g))
1/2 cup quick oats ((40g) (See nutrition link below for substitutions))
1/4 tsp salt
1/3 cup pure maple syrup, (honey, or agave (75g))
pinch uncut stevia OR 2 tbsp sugar ((or omit and increase maple syrup to 1/2 cup))
1/4 cup coconut or vegetable oil ((40g) (See nutrition link for substitution notes))
2 tsp pure vanilla extract
1/2 tsp baking powder
1/2 cup to 2/3 cup chocolate chips ((Not optional. Omit at your own risk))
optional: more chips, (for presentation)

Steps:

  • Black Bean Brownies Recipe: Preheat oven to 350 F. Combine all ingredients except chips in a good food processor, and blend until completely smooth. Really blend well. (A blender can work if you absolutely must, but the texture-and even the taste-will be much better in a food processor. I use this food processor.) Stir in the chips, then pour into a greased 8x8 pan. Optional: sprinkle extra chocolate chips over the top. Cook the black bean brownies 15-18 minutes, then let cool at least 10 minutes before trying to cut. 1/2 cup semisweet chocolate chips, divided
3 tablespoons canola oil
3 large eggs, room temperature
2/3 cup packed brown sugar
1/2 cup baking cocoa
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/8 teaspoon salt

Steps:

  • Place the beans, 1/4 cup chocolate chips and oil in a food processor; cover and process until blended. Add eggs, brown sugar, cocoa, vanilla, baking powder and salt; cover and process until smooth., Transfer to a parchment-lined 8-in. square baking pan. Sprinkle with remaining chocolate chips. 1/2 c self-rising flour
1/2 c egg whites
1/4 c unsweetened cocoa
2 T vanilla
1 tsp baking powder
6 T mini semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Lightly spray a 8x8 pan with cooking spray. In a food processor, mix all brownie ingredients (except chips) together. Chop on high, until smooth. Clean off sides and blend for another 20 seconds. Add the chips and stir well. Spread into the 8x8 baking dish. Bake for 20 minutes until toothpick comes out clean. Cool for about 1 hour at room temperature. Frosting: 6 oz fat free cream cheese 1/4 c agave syrup 2 T vanilla extract 2 T semisweet mini chocolate chips, melted Directions for frosting: With a whisk, blend all ingredients until light and fluffy. Spread evenly over the top of the cooled brownies. In a microwave safe bowl, melt the 2 T of chips with a 2 second spray of nonstick cooking oil. Using a spoon, swirl the chocolate on top. 3/4 cup cooked black beans
1/2 cup vegetable oil, or olive oil
2 eggs
1/4 cup unsweetened cocoa powder
2/3 cup sugar
1 teaspoon instant coffee or espresso
1 teaspoon vanilla extract
1/2 cup mini chocolate chips, divided
1/3 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 by 9-inch square baking pan.
  • In a blender, puree the beans with the oil. Add the eggs, cocoa, sugar, coffee, and vanilla. Melt half the chocolate chips and add to the blender. Blend on medium-high until smooth. In a small bowl, whisk together the flour, baking powder, and salt. Add to the blender and pulse until just incorporated. Stir in the remaining chocolate chips. Pour into the prepared pan. Bake until the surface looks somewhat matte around the edges and still a bit shiny in the middle, about 20 minutes. Let cool at least 15 minutes before cutting and removing from the pan. Dust with confectioners' sugar and serve.

1/4 cup agave syrup

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
