I tried an omelet that contained brie, bacon and apples and thought it would be tasty as a breakfast panini-so I created this recipe! -Kathy Harding, Richmond, Missouri

Number Of Ingredients 10

6 bacon strips
1 teaspoon butter
4 large eggs, beaten
4 slices sourdough bread (3/4 inch thick)
1/8 teaspoon salt
1/8 teaspoon pepper
3 ounces Brie cheese, thinly sliced
8 thin slices apple
1/2 cup fresh baby spinach
2 tablespoons butter, softened

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain., Meanwhile, heat butter in a large skillet over medium heat. Add eggs; cook and stir until set., Place eggs on two slices of bread; sprinkle with salt and pepper. Layer with cheese, apple, bacon, spinach and remaining bread. Butter outsides of sandwiches. , Cook on a panini maker or indoor grill for 3-4 minutes or until bread is browned and cheese is melted.

2 slices raisin bread
1 tablespoon cream cheese
1 apple, sliced
1 generous tablespoon cinnamon sugar
2 tablespoons salted butter, softened
1 teaspoon powdered sugar

Steps:

  • Lay out the bread slices and spread them both with cream cheese. Lay the apple slices on one piece of bread. Sprinkle on the cinnamon sugar. Press the 2 slices together.
  • Butter one side of the sandwich and put it on a hot panini maker butter-side down. Butter the other side, close the lid and cook until it's toasted and warmed through. (If you do not have a panini maker, you can grill the sandwich in a skillet, laying another heavy skillet on top of the sandwich to press it together. Turn to grill the other side in the same way.)
  • Sprinkle with powdered sugar, cut in half and serve!

12 thick slab bacon, slices cut in half
1 medium apple, thinly sliced
1 tablespoon ginger ale
1 teaspoon lemon juice
1/4 cup apple jelly
4 teaspoons minced fresh tarragon
12 slices sourdough bread
6 slices reduced-fat havarti cheese
2 tablespoons Dijon mustard
3 tablespoons butter, softened

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. In a small bowl, toss apple with ginger ale and lemon juice; set aside.
  • Place jelly in a small microwave-safe bowl; microwave on high for 20-30 seconds or until softened. Stir in tarragon.
  • Spread jelly mixture over six bread slices. Top with cheese, apple and bacon. Spread mustard over remaining bread; place over bacon. Spread outsides of sandwiches with butter.
  • Cook on a panini maker or indoor grill for 3-4 minutes or until bread is browned and cheese is melted.
