BISQUICK COFFEE CAKE

An easy Bisquick Coffee Cake made withsour cream and cinnamon for a sweet breakfast treat.

1 cup sour cream
1 cup sugar
2/3 cup original Bisquick mix
2/3 cup unsalted butter, softened
2 eggs
1 teaspoon cinnamon
2/3 cup all-purpose flour
2/3 cup brown sugar, packed
4 tablespoon unsalted butter, softened
1/2 teaspoon cinnamon

Steps:

  • Preheat your oven to 325 degrees.
  • In a large bowl mix the sour cream, sugar, Bisquick mix, butter, eggs, and cinnamon. Pour the mixture into a greased 13x9 pan.
  • In a medium bowl, mix the flour, brown sugar, butter, and cinnamon with a hand mixer. It should have a crumbly consistency.
  • Pour half of the streusel over the cake mixture and using a knife, swirl the topping and cake mixture in a zigzag pattern to marble the cake.
  • Add the remainder of the streusel on evenly on top of the cake.
  • Bake the Bisquick Coffee Cake for about 60 minutes until a toothpick comes out clean in the middle. Cook in 5 minute increments if additional time is needed.
  • Remove the coffee cake from the oven and allow to cool for 10 minutes before slicing and serving.

2 cups baking mix (such as Bisquick®)
⅔ cup milk
2 tablespoons white sugar
1 egg
¼ teaspoon ground cinnamon
⅔ cup baking mix (such as Bisquick®)
⅔ cup brown sugar
4 tablespoons butter
½ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a deep 9-inch pie pan.
  • Combine baking mix, milk, sugar, egg, and cinnamon in bowl; mix well. Spread into the bottom of the prepared pan.
  • Mix baking mix, brown sugar, butter, and cinnamon together in a separate bowl using a fork or pastry blender until crumbly. Spread topping mix over cake batter; drag a butter knife across the top as if making a tic-tac-toe board several times.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes.

2/3 cup milk
2 tablespoons white sugar
1 egg
1/4 teaspoon ground cinnamon
2/3 cup Bisquick®
2/3 cup brown sugar
4 tablespoons butter
1/2 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 9-inch pie pan. Your pie pan should be about 1 1/2 to 2 inches deep.
  • In a large bowl, combine Bisquick baking mix, sugar, cinnamon, milk, and egg. Mix well.
  • Pour the mixture into the greased pie pan.
  • In a separate bowl, combine Bisquick baking mix, brown sugar, cinnamon, and butter with a blender or fork. You'll know it's done once you get a crumbly mixture. This is the topping for your coffee cake.
  • Spread the topping over the cake batter evenly.
  • Bake in the preheated oven for 25 minutes or until a toothpick comes out clean.

1/2 cup butter, softened
1-1/4 cups sugar
2 eggs
1 teaspoon vanilla extract

1/2 c chopped walnuts
1 tsp cinnamon
2 c bisquick
1/4 c granulated sugar
large egg
2/3 c evaporated milk
2/3 c whole cranberry sauce
ICING:
1 c powdered sugar
1 tsp vanilla extract
1 Tbsp evaporated milk
1 tsp karo corn syrup
1 dash(es) salt
1 tsp butter,softened

Steps:

  • 1. Cake: heat oven to 400^. Mix brown sugar, walnuts and cinnamon ;set aside. Combine baking mix, sugar, egg,and milk; beat vigorously 1/2 minute.
  • 2. Spread batter in a greased square or round 9-inch baking pan; sprinkle with nut mixture. Spoon cranberry sauce over top. Bake 20-25 minutes. While warm, spread with icing.
  • 3. Icing: Combine ingredients and beat until smooth, Spread on warm cake.
  • 4. For a change-up: Banana Coffeecake: 2 c. Don't be alarmed if the two sponge layers look thin when you unmold them. They are meant to be, because the cake gains a lot of height with its frosting. This cake is all about old-fashioned, homespun charm, so don't worry about how messy it looks: however the frosting goes on is fine. If you want to fully cover the sides of the cake, make a double batch of the frosting.

1/2 cup (60 grams) walnut pieces
1 cup plus 2 tablespoons (245 grams) sugar
2 sticks (8 ounces) unsalted butter at room temperature
1 2/3 cups (230 grams) flour

1/2 teaspoon salt
4 large eggs
2 tablespoons milk at room temperature, more as needed
1 tablespoon (3 grams) instant coffee dissolved in 1 tablespoon boiling water

Steps:

  • Heat oven to 350 degrees. Butter two 8-inch cake pans, and line base of each with parchment paper. In food processor, combine 1/2 cup walnut pieces and sugar. Process to a fine powder. Add butter, flour, baking powder, salt and eggs. Process to a smooth batter.
  • Add 2 tablespoons milk to coffee mixture and pour this down feed tube with motor running. Mixture should be just soft enough to drop from a spoon; if not, add more milk. Divide cake batter between two pans. Bake until risen and springy to touch, about 25 minutes. Cool on a rack for 10 minutes, then remove from pan and place on rack. Remove parchment paper. Cool completely. You may want to level them if they domed in the oven.
  • For frosting: Place confectioners' sugar and salt in food processor and pulse until lump-free. Add butter and process until smooth. Add coffee mixture down feed tube and pulse until well blended.
  • Place one cake upside down on a plate or cake stand. Spread with about half the frosting. Place second cake right side up on frosting, and cover top and sides in a swirly pattern. Place a walnut half in center of cake, and gently press remaining halves into top of cake, around the edge.
