OATMEAL COOKIE BARS

These are easily the best homemade oatmeal cookie bars we've ever had, and that's really saying something! This recipe is simple to make and has all the essentials - chopped nuts, chocolate chips, high quality Gold Medal™ flour, and whole-grain oats. We love the ease of making oatmeal cookie bars because they have the chewy texture and flavor of an oatmeal cookie, but they take only 10 minutes to prep and use only one pan in the oven. Add extra indulgence by drizzling a little melted chocolate over these once they are cool and before you cut out the bars.

1 1/2 cups packed brown sugar
1 cup butter or margarine, softened
2 tablespoons molasses
2 teaspoons vanilla
2 eggs
3 cups quick-cooking oats
1 cup Gold Medal™ all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup chopped nuts
1 bag (12 oz) semisweet chocolate chips (2 cups)

Steps:

  • Heat oven to 350°F. Grease 15x10x1-inch pan. In large bowl, beat brown sugar and butter with electric mixer on medium speed until light and fluffy. Beat in molasses, vanilla and eggs. Stir in oats, flour, baking soda and salt. Stir in nuts and chocolate chips. Spread in pan.
  • Bake 20 to 30 minutes or until light golden brown and center is set. Cool completely, about 1 hour. For bars, cut into 8 rows by 6 rows.

This recipe has been in my box for almost 40 years. These delectable bar cookies can be made with any baking mix, and are especially good if you are a wheat grinder and make your own biscuit baking mix. I love dates, so this is a favorite cookie at Holiday time. They are very pretty served on a red plate lined with gold paper...

1/4 c butter or shortening, room temperature
3/4 c light brown sugar
1 large egg
1 2/3 c biscuit baking mix
1 c cut-up dates
1/2 c chopped walnuts or pecans

Steps:

  • 1. Preheat oven to 350°F and grease a square 8 x 8 x 2-inch baking pan.
  • 2. Mix butter, sugar, and egg well. Stir in remaining ingredients by hand. Spread dough in prepared pan. The dough will be very thick. I oiled my fingers and pressed it evenly into the baking pan.
  • 3. Bake for 25 minutes. Cool and cut into bars, 2 x 1 1/2 inches. Sprinkle with powdered sugar if desired.
  • 4. NOTE: to make cutting the dates easier, coat a sharp knife with flour or powdered sugar frequently during cutting.

BISQUICK CHOCOLATE CHIP BARS

So easy, incredibly yummy and chewy. The recipe calls for 1 cup of chocolate chips but I use about 1 and a half. ***UPDATE***Just an added note, I've used a copycat version of bisquick and it turns out VERY greasy so you might want to reduce the oil content if you are using a homemade baking mix.

1/2 cup vegetable oil

  • Spread in a 13 x 9-inch pan, greased and floured.
  • Sprinkle chocolate chips over top.
  • Bake 25-30 minutes at 350° (will look bubbly and light in the center).

3/4 cup butterscotch caramel topping (from 17-oz jar)
1 box Betty Crocker™ Super Moist™ butter pecan cake mix
1/3 cup butter or margarine, softened
1 egg
1/4 teaspoon fleur de sel sea salt or coarse sea salt, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). In small bowl or 2-cup measuring cup, mix topping and 1 tablespoon of the dry cake mix. In large bowl, stir together remaining dry cake mix, the butter and egg, using fork, until crumbly. Reserve 1 cup crumb mixture. Using a piece of plastic wrap on crumb mixture, press remaining mixture in bottom and 1/2 inch up sides of ungreased 9-inch square pan; remove wrap.
  • Bake 12 minutes. Pour topping over crust to within 3/4 inch of edge. Sprinkle with reserved 1 cup crumb mixture.
  • Bake 22 to 26 minutes or until light golden brown. Cool 10 minutes; loosen edges of crust with knife. Cool completely, about 50 minutes. Sprinkle with coarse salt. For bars, cut into 4 rows by 4 rows. Store covered.

1 c coconut, grated
2 c bisquick baking mix

  • 1. Cream sugar and eggs. Add vanilla and mix. Stir in pecans and coconut. Bake in well greased 9 X 13 pan 350 degrees for 30 minutes. Cut in bars.
  • 2. Note: Make sugar free by using splenda brown sugar. Make gluten free by using gluten free bisquick.

1 1/2 cups baking mix (like Bisquick)
1 1/2 cups rolled oats
1 cup brown sugar, packed
1/2 cup margarine or 1/2 cup butter, softened
1 egg
1/3 cup chocolate chips, raisins, nuts (or a combo)

Steps:

  • Heat oven to 350°F.
  • Mix all ingredients except chocolate chips with fork until moistened (mixture wil be crumbly). Stir in chocolate chips.
  • Press mixture into an ungreased 13x9x2" pan. Bake until center is set, 15 to 17 minutes. Cut into bars, about 3x1 1/2 ", while warm.

1 cup fat free sour cream (I also sub. plain yogurt)
2 tablespoons sugar
2 teaspoons vanilla extract
fresh fruit (melted slightly in micro.) or fruit preserves (melted slightly in micro.)

Steps:

  • In a mixing bowl, beat cream cheese and sugar.
  • Add eggs, yogurt, vanilla,Bisquick, and lemon juice.
  • Mix just until smooth.
  • Pour into a greased 9-inch square baking dish.
  • Bake at 350 degrees for 25-30 minutes or until center is nearly set.
  • Place on a wire rack while preparing topping.
  • In a bowl, combine sour cream, sugar, and vanilla until smooth.
  • Carefully spread over cheesecake.
  • Bake for 4 minutes (topping will not brown or set).
  • cool on a wire rack for 1 hour.
  • Refrigerate until completely cooled.

  • Press half of the crumbly mixture in pan. Spread fruit over crumbly mixture to within 1/4 inch of edges. Top with remaining crumbly mixture; press gently into fruit.
