1 ¾ cups flour
½ cup granulated sugar
1 Tablespoon baking powder
¼ teaspoon salt
1 egg
¾ cup Greek yogurt (plain)
½ cup oil (canola or vegetable)
½ cup milk
½ teaspoon almond extract (or vanilla extract)
1 ½ cups sweet cherries (pitted and chopped)

Steps:

  • Preheat oven to 400°F
  • Combine flour, sugar, baking powder and salt into a bowl.
  • In a separate bowl, combine egg, yogurt, oil, milk and almond extract
  • Add flour mixture to liquid mixture. Mix to combine.
  • Fold in cherries.
  • Scoop batter into greased muffin tins.
  • Bake in a preheated 400° oven for 15-18 minutes.
  • Cool in pan for 5 minutes and then remove from pan and continue cooling on a baking rack.

1½ cups all purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup granulated sugar
⅓ cup vegetable oil
⅓ cup milk
1 egg
¼ teaspoon almond extract
1¼ cup fresh cherries (pitted and left whole)

Steps:

  • Get your oven ready to bake by preheating it to 390°F/200°C.
  • In a bowl, sift together the flour, baking powder, and salt. This step ensures that all of the dry ingredients are mixed well and you don't get any pockets of baking powder in your finished muffins.
  • In a separate bowl, whisk together the sugar with oil, milk, egg, and almond extract. Mix until well combined.
  • Add Dry Ingredients to Wet Ones: Add the dry ingredients to the wet ingredients and whisk just until combined. Do not overmix.
  • Fold in the cherries. The muffin batter should be thick enough to hold up the fruit, I did that on purpose because we don't want the cherries falling to the bottom of the muffins.
  • Divide the batter between 8 lined muffin cups so that each is ¾ of the way filled.
  • Bake for 20 minutes or until done.
  • Allow the muffins to cool on a wire rack completely before eating or serving.

4-1/2 teaspoons shortening
1/3 cup sugar
1 large egg
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup buttermilk
1/4 cup dried cherries or cranberries, halved

Steps:

  • In a small bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Fold in cherries., Coat muffin cups with cooking spray or line with paper liners; fill three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing to a wire rack. Serve warm.

DARK CHOCOLATE CHERRY MUFFINS

I bake daily and having failed to find a chocolate muffin recipe that 'hit the spot' I decided to take matters into my own hands, hence this recipe. Somewhat similar to a cupcake in texture, a lighter crumb and good depth of flavour gives you a muffin that's totally chocolate dream delicious!

75 g dark chocolate (I use Lindt 70%)
1/4 cup unsalted butter (melted)
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup sugar
1/4 cup light brown sugar
1 large egg (lightly beaten)
1/4 cup buttermilk
20 ml buttermilk or 20 ml yogurt
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/3 cup dried cherries, plus
2 tablespoons dried cherries
2 tablespoons brown sugar
1/8 teaspoon cinnamon

Steps:

  • Preheat oven to gas mark 4/350F/180°C.
  • Prepare muffin tin with paper liners or brush cups with butter.
  • Put cherries in a small dish and cover with boiling water. Leave to rehydrate for 5-10 minutes. Discard water and transfer cherries to kitchen paper where they can drain of any excess moisture. (If your cherries are particularly plump then you can skip this step as it shouldn't be necessary).
  • In a small microwavable bowl, on low/medium heat setting, melt chopped chocolate and butter in microwave stirring at 30 second intervals until smooth and combined. Set aside to cool slightly.
  • Chop cherries into pieces and set aside.
  • In a small dish combine 2 tablespoons of brown sugar and cinnamon, set aside. (This is to sprinkle on the muffins before they go in the oven).
  • Into a large mixing bowl, sift flour, baking powder and salt, whisk to combine. Mix in the 1/2 cup sugar, make a well in the center and set aside.
  • In a small bowl (or measuring jug) whisk together lightly beaten egg, buttermilk, sour cream, vanilla and almond extracts. Now gradually add this to the cooled chocolate and butter mixing well until smooth and even in colour.
  • Now pour this into the flour/sugar and mix using a folding action until all traces of flour have disappeared and is smooth and even in colour. Finally fold in cherries. (This is a rich and sticky batter so don't be alarmed!).
  • Spoon into muffin tins, sprinkle with sugar/cinnamon and bake on the middle shelf of oven for 20-22 minutes.
  • NB: I use a Chicago Metallic muffin pan which appears to allow for larger muffins. If your pan is similarly sized then this recipe will make 5 generous sized muffins with good crowns.(23-25 mins cooking time).

Make a well in the center of the flour mixture; pour in milk mixture. Stir until batter is just blended and slightly lumpy; gently fold in cherries and cherry juice. 2 c flour
1 Tbsp baking powder

zest of lemon to taste

  • 1. mix the wet ingredients adding the cherries and any jce left on plate when chopping them. sift the flour, add the bp, and sugar. add to wet ingredients and combined until just mixed. i use 6 lg muffins or 12 reg. bake at 400 for app 15 to 20 min.you can dust with powdered sugar after cooling.

3/4 cup miniature semisweet chocolate chips
1/2 cup chopped pecans
1 cup confectioners' sugar
Softened cream cheese, optional

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg, milk and oil; stir into dry ingredients just until moistened. Drain cherries, reserving 2 tablespoons of juice for glaze (discard remaining juice or save for another use). Chop cherries; fold the chips, pecans and cherries into the batter. , Drop by tablespoonfuls into greased or paper-lined heart-shaped or miniature muffin cups. Bake at 375° for 10-13 minutes or until a toothpick inserted in the center comes out clean. , Cool for 10 minutes; remove from pans to wire racks. 1 ¼ cups white sugar
⅓ cup unsweetened cocoa powder
2 teaspoons baking powder

1 cup sour cream
½ cup milk
⅓ cup vegetable oil
2 eggs, beaten
1 teaspoon almond extract
1 ½ cups fresh dark sweet cherries, pitted and chopped
1 cup miniature semisweet chocolate chips

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease 12 jumbo (3 1/2-inch) muffin cups or line with paper baking cups.
  • Stir together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a separate large bowl, and make a well in the center; set aside. Whisk together the sour cream, milk, vegetable oil, eggs, and almond extract in a bowl until evenly blended. Pour the sour cream mixture into the well, then stir in the flour mixture until just combined. Fold in the cherries and chocolate chips. Spoon into prepared muffin cups, filling half full.

We were very lucky to have once had a home with a cherry tree that produced an abundance of fresh baking cherries. I used to make these muffins a lot when I had fresh cherries on hand, and I kept bags of them in the freezer pre-measured for this recipe. These are not sweet eating cherries - these are baking cherries. The original recipe came from a flyer from the Cherry Marketing Institute.

2 1/2 cups frozen unsweetened tart red cherries, pitted,divided
1/2 cup sweet unsalted butter
1 cup sugar
2 eggs
1 teaspoon almond extract
1/2 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup half-and-half cream, whole milk or 1/2 cup light cream

Steps:

  • While cherries are still frozen, cut them into halves, then set aside to thaw and drain in a mesh colander over a bowl.
  • Cream butter and sugar using an electric mixer.
  • Add eggs, almond extract, and vanilla and beat well.
  • Crush 1/2 cup of the thawed cherries with a fork; add the mashed cherries to the batter.
  • Mix flour, baking powder, and salt in a separate bowl.
  • Fold half of the flour mixture into the butter mixture using a spatula; do not overmix.
  • Add half of the cream or milk, mixing just enough to combine.
  • Add remaining flour, then remaining milk; again avoid overmixing.
  • Fold in the remaining cherry halves.
  • Fill 12 paper-lined muffin tins with batter.
  • If desired, you may sprinkle the muffins with some extra sugar.
  • Bake in a preheated 375 F oven until golden brown, about 20-30 minutes.
