MILLIONAIRE'S MEATLOAF



Millionaire's Meatloaf image

This meatloaf is formed on a bed of croutons then served with a jumbo chili seasoned shrimp on top, with mashed potatoes, if desired. Adapted from David Burke, culinary director of the Stadium Grill, a 250-seat restaurant in Bowlmor Lanes, Manhattan.

1 1/2 tablespoons olive oil
2 medium onions, finely chopped
6 garlic cloves, minced
2 lbs ground beef
2 large eggs
1/2 cup milk
1 cup fresh breadcrumb
1/4 cup Dijon mustard
1/4 cup barbecue sauce
1 tablespoon horseradish, well-drained
1/4 cup fresh parsley, finely chopped
kosher salt & freshly ground black pepper
1 teaspoon fresh thyme, minced
2 -3 cups croutons, bought (see note for instructions) or 2 -3 cups homemade croutons (see note for instructions)
1 1/2 teaspoons chili powder
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons paprika
1 1/2 tablespoons Wondra Flour
4 jumbo shrimp, peeled and deveined
1 teaspoon chili oil
mashed potatoes, for serving

Steps:

  • Preheat oven to 375 degrees F.
  • Heat a large skillet, over medium high, add oil, onions, and garlic; saute until onions are translucent, about 3 to 4 minutes, then set aside.
  • In a mixing bowl, combine ground beef, eggs and milk; add bread crumbs, mustard, barbecue sauce, horseradish, and cooked onion mixture and mix again.
  • Season with salt, a little heavy on the pepper, parsley, and thyme; combine thoroughly.
  • Spread the croutons on the bottom of an 8 inch square baking dish; top with meatloaf mixture (patting it down so that it is level).
  • Bake to an internal temperature 165 degrees F and the top browned, about 1 hour.
  • Meanwhile, prepare the chili shrimp by combining the chili powder, cayenne, paprika and flour in a small bowl; dredge the shrimp in the
  • mixture.
  • Heat a small skillet, over medium high heat, and add the chili oil; once hot, cook the shrimp, about 2 minutes per side.
  • To serve, cut the meatloaf into 4 slices and place each slice on a serving dish; top with a chili shrimp.
  • Serve with mashed potatoes, if desired.
  • NOTE: to make croutons, cube white bread and toss with a little olive oil, salt, and pepper; place in a 4oo degree F oven, stirring once or twice, until lightly browned, about 15 minutes.

BILL BLASS'S MEATLOAF

This homespun, bacon-wrapped version of the American classic is attributed to Bill Blass, the world-famous clothing designer of the 60s, 70s and 80s, who is perhaps best known for dressing First Lady Nancy Reagan and the upper echelons of New York society. While he became hugely successful - he reportedly sold his business for $50 million in 1999 - his culinary tastes remained firmly Midwestern. From his 2002 obituary in The Times: "A man of robust but simple tastes who would go out of his way for a hamburger, Mr. Blass would serve guests his own meatloaf recipe, followed perhaps by lemon meringue pie. He always maintained, only partly in jest, 'My claim to immortality will be my meatloaf.'" This is his recipe.

1 cup chopped celery
1 onion, chopped
3 tablespoons butter
2 pounds ground beef sirloin
1/2 pound ground veal
1/2 pound ground pork
1/2 cup chopped fresh parsley
1/3 cup sour cream
1/2 cup soft bread crumbs
1/4 teaspoon dried thyme
1/4 teaspoon dried marjoram
Kosher salt and freshly ground black pepper to taste
1 egg
1 tablespoon Worcestershire sauce
1 1/2 cups Heinz chili sauce
3 slices bacon

Steps:

  • Preheat the oven to 350 degrees. Oil an 8-by-4-inch loaf pan. In a heavy skillet over medium heat, saute the celery and onion in the butter until soft, about 5 minutes. Scrape into a large mixing bowl and cool.
  • When the onions are cool enough to handle, add the meats, parsley, sour cream, bread crumbs, thyme, marjoram and salt and pepper to the bowl. Whisk the egg with the Worcestershire sauce and add to the mixture. Using a wooden spoon or your hands, combine the mixture and mold into the shape of a loaf.
  • Place the meatloaf in the prepared pan. Top with the chili sauce and bacon slices. Bake until firm and nicely browned, about 1 hour.

This ultimate meatloaf recipe took rounds and rounds of testing to get just right. Our final version incorporates an ideal blend of seasoned ground beef and pork, aromatics, and breadcrumbs and bakes in a freeform loaf on a baking sheet instead of in a loaf pan for maximum browning. The result is a loaf that is savory, tender, and juicy, yet holds together well when sliced.

1 cup fine fresh breadcrumbs (from 6 slices firm white bread; see Cooks' Note below)
1/3 cup whole milk
1 medium onion, coarsely chopped
1 celery stalk, coarsely chopped
4 garlic cloves
2 tablespoons neutral vegetable oil, such as grapeseed
2 1/4 teaspoons kosher salt, divided
1 1/2 teaspoons freshly ground black pepper, divided
3 tablespoons Worcestershire sauce
1 1/2 pounds ground beef chuck, preferably 20% fat
1/2 pound ground pork
2 large eggs
1/2 cup ketchup, divided, plus more for serving

Steps:

  • Position rack in center of oven; preheat to 350°F. Line a rimmed baking sheet or 13x9" shallow baking dish with foil. Soak breadcrumbs in milk in a large bowl until ready to use.
  • Pulse onion, celery, and garlic in a food processor until finely chopped. (Alternatively, you can finely chop by hand.)
  • Heat oil in a large skillet over medium. Add onion mixture, 1 tsp. salt, and 1/2 tsp. pepper. Cook, stirring occasionally, until softened, 5-7 minutes. Remove from heat, stir in Worcestershire, and scrape into bowl with breadcrumb mixture. Add beef, pork, eggs, 1/4 cup ketchup, and remaining 1 1/4 tsp. salt and 1 tsp. pepper, then mix with your hands to combine.
  • Form meatloaf mixture into a long, well-packed, approximately 5"-wide loaf shape on prepared baking sheet. Brush top of loaf with 1/4 cup ketchup. Bake meatloaf until an instant-read thermometer inserted into the center registers 155°F, 60-75 minutes. Let rest 15 minutes before slicing. Serve with more ketchup alongside.

1 1/2 tablespoons olive oil
2 medium onions, finely chopped

2 pounds lean ground beef
2 large eggs
1/2 cup milk
1 cup fresh bread crumbs
1/4 cup Dijon mustard
1/4 cup barbecue sauce
1 tablespoon well-drained horseradish
1/4 cup finely chopped flat-leaf parsley
1 teaspoon salt
1 1/2 teaspoons freshly ground black pepper
1 teaspoon minced fresh thyme
2 to 3 cups croutons, bought or homemade (see note)
1 1/2 teaspoons mild or hot chili powder
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons paprika
1 1/2 tablespoons Wondra flour
4 jumbo shrimp, peeled and deveined
1 teaspoon chili oil

Steps:

  • For the meatloaf: Preheat oven to 375 degrees. Place a large skillet over medium heat, and add the olive oil, onions and garlic. Sauté until translucent and tender, 3 to 4 minutes. Remove from heat and set aside to cool.

Bake until the internal temperature reads 165 degrees on an instant-read thermometer and the top is nicely browned, about 1 hour. Toward the end of baking, prepare the chili shrimp.
  • For the chili shrimp: In a small mixing bowl, combine the chili powder, cayenne pepper, paprika and flour. Dredge the shrimp in the mixture until well coated. Place a small skillet over medium heat, and add the chili oil. When it is hot, add the shrimp and cook for 2 minutes a side.
  • To finish, cut the meatloaf into 4 slices. Place a slice on each of 4 plates, and top with a chili shrimp. If desired, serve with mashed potatoes.

  • In a large, heavy skillet over medium heat, saute the celery and onion in the butter until soft; remove from heat and set aside to cool for 5 minutes.
  • Add the meats, parsley, sour cream, bread crumbs and spices to the skillet.
  • Whisk the egg with the worcestershire sauce and add to mixture.
  • Using a wooden spoon or your hands, combine the mixture and mold into a loaf shape.
  • Place the meat loaf in the prepared pan; top with the chili sauce, then the bacon slices.
  • Place on a cookie sheet-- to catch any drips-- and bake until cooked through and browned, at least 1 hour.
