2 pounds spicy smoked sausage
1 (8-ounces) can crushed pineapple
1 cup brown sugar, packed
2 tablespoon creole mustard

Steps:

  • Cut the sausage into bite sized pieces. In a large skillet add a small amount of oil and brown the sausage in two batches. Remove the sausage from the pan with a slotted spoon and place into a chafing dish or crock pot. In a small sauce pan combine the crushed pineapple, brown sugar, and creole mustard. Bring to a boil; boil just until the sugar is dissolved. Pour over the sausage and stir to coat the sausage. Keep warm in chafing dish or crock pot for serving.

1 lb Eckrich smoked sausage, sliced (or your favorite brand)
1 bell pepper, chopped
1 purple onion, chopped
1 (16 ounce) can pineapple chunks, drained
1 (8 ounce) jar sweet and sour sauce
1 tablespoon Tabasco sauce (may add more, to taste)
fresh jalapeno

Steps:

  • Place smoked sausage, bell pepper, purple onion, pineapple chunks, sweet and sour sauce, Tabasco sauce, and jalapeno in the slow cooker.
  • Cook on HIGH for 1-1 1/2 hours or on LOW for 3 to 4 hours, or until bell pepper and onion are tender.
  • Serve on top of a bed of rice, or by itself with a salad.

1 lb smoked sausage, cut into bite-size chunks
3 jalapeno peppers, sliced
1 green belll pepper, cut into bite-size chunks
1 medium sweet onion, cut into bite-size chunks
1 foil cooking bag
1/4 c tabasco sauce
1 jar(s) (10 oz) sweet & sour sauce

Steps:

  • 1. Place sausage, peppers and onion in foil bag.
  • 2. In a small bowl, mix the Tabasco and sweet & sour sauce and pour over mixture in foil bag.
  • 3. Fold the edge tightly to seal.
  • 4. Place the foil bag on the grill and cook for 45 minutes. Turn every 15 minutes to ensure even cooking.
  • 5. Slit open and serve out of the bag.
