2 bottles crisp white wine
1 stalk lemongrass peeled and sliced the long way
1 large grapefruit, cut into sixths
1 large orange, cut into sixths
1 pear, cored and sliced
1 apple, cored and sliced
1 cup fruit puree
1 bunch fresh mint

Steps:

  • In a large glass pitcher combine all ingredients and adjust to desired taste with mint. Allow to sit at room temperature for at least 1 hour. Sangria gets better with age. If you are preparing the night before, refrigerate. Before serving add ice to the pitcher.

2 bottles rose wine
2 bottles Sauvignon Blanc
2 pints strawberries, halved
2 cups orange-flavored rum
2 cups orange-flavored vodka
1 cup halved red grapes
1 cup sugar
3 lemons, sliced
3 limes, sliced
3 small oranges, sliced
1 liter sparkling water

Steps:

  • Mix the rose, Sauvignon Blanc, strawberries, rum, vodka, grapes, sugar, lemons, limes, oranges and 1 cup water in a large container. Chill for 12 hours minimum.
  • Pour in the sparkling water just before serving.

Cavas, often blessed with notes of citrus and spring blossoms, are genial sparkling wines, all the more so because of their modest prices. They can be called on for many occasions, and are the ideal finishing touch for sangria, either red or white. The white sangria is unusual and strong, though white wine in place of manzanilla sherry will moderate the alcohol. The red is clearly classic. Both are more refreshing than sweet.

2 apples, cored and coarsely diced
2 pears, cored and coarsely diced
2 juice oranges, peeled, seeded and diced
1 cup gin
1/2 cup triple sec
3 bottles (500 milliliters each) manzanilla sherry or 2 bottles 750 milliliters each dry white wine
1/2 bottle cava 1 1/2 cups, chilled
1 bottle red wine, preferably garnacha
Juice of 1 1/2 oranges
Juice of 1 lemon
Juice of 1 lime
1/2 cup Spanish brandy
1/4 cup triple sec
1 apple, cored and sliced
1 pear, cored and sliced
1 cinnamon stick
1/2 bottle cava 1 1/2 cups, chilled

Steps:

  • Place all fruit in a bowl with gin and triple sec. Cover and refrigerate at least 4 hours, or overnight.
  • Transfer to a large pitcher and add manzanilla or white wine. Stir. Divide liquid and fruit into wine glasses, over ice if desired, until about 2/3 full. Top each with cava.
  • Combine wine, citrus juices, brandy, triple sec, sliced fruit and cinnamon in a 2-quart pitcher. Cover and refrigerate at least 4 hours, or overnight.
  • Add 2 cups ice and the cava. Pour into wine glasses with some fruit.

1/4 cup brandy
1/4 cup peach schnapps

1 to 2 apples, cut into chunks
1 to 2 peaches, cut into chunks

Steps:

  • In a large pitcher, combine the ingredients. Stir and let sit for at least 2 hours, refrigerated. Serve plain, over ice, or with soda water.

4 lemons, thinly sliced
4 limes, thinly sliced
1 ½ cups white sugar
½ cup tequila
2 trays ice cubes, or as needed
1 (750 milliliter) bottle dry white wine
1 (750 milliliter) bottle champagne
2 cups club soda

Steps:

  • Put orange slices, lemon slices, and lime slices in a large punch bowl. Pour sugar over the fruit; add tequila and mix gently with a wooden spoon. Let soak 6 hours to overnight.
  • Put plenty of ice in the punch bowl. Pour white wine, champagne, and club soda over the ice. Stir and serve immediately.
