CASHEW SHRIMP WITH WATER CHESTNUTS

1 pound shrimp, shelled
1/2 cup water chestnuts, diced
1/2 cup carrots, diced
1 cup celery, diced
2 cups vegetable oil
1 cup cashews
1 teaspoon garlic, minced
Rice wine
1 tablespoon oyster sauce
1 teaspoon soy sauce
1 teaspoon sesame oil
1/2 cup chicken broth
1 tablespoon cornstarch

Steps:

  • In a medium bowl, place 2 cups warm water and add 1 teaspoon salt; stir to dissolve. Place the shrimp in the salt water and swirl. Leave the shrimp in salt water for 5 minutes, then rinse with cold water, drain and pat dry with paper towels. Using a sharp knife, cut the shrimp into 3/4 inch diced pieces.
  • Mix all sauce ingredients together in a small bowl.
  • Bring a saucepan of water to a boil. Place the celery and carrots in boiling water for 1 minute. Remove from heat and rinse with cold water until cooled. Set aside.
  • Heat the oil to 325 degrees F.
  • Fry cashews until light brown (watch carefully as they burn easily). Drain on paper towel.
  • Add the diced shrimp to the oil and blanch for 5 seconds. Remove shrimp with a slotted spoon from oil and remove oil from the wok.
  • Reheat wok until hot and add minced garlic and all the diced vegetables. Add the diced shrimp, sprinkle with the rice wine and stir-fry for 10 seconds. Add the sauce mixture and stir until the sauce thickens, about 1 minute. Remove to platter and sprinkle cashews over top. Serve.

1 1/2 pounds medium shrimp, peeled and deveined Kosher salt and freshly ground pepper
1 tablespoon cornstarch
2 tablespoons oyster sauce, such as Lee Kum Kee
2 tablespoons safflower oil
4 celery stalks, cut on a sharp bias 1/4 inch thick (2 1/2 cups), plus celery leaves for serving
1 teaspoon finely grated garlic (from 2 cloves)
1 tablespoon finely grated ginger (from a 2-inch piece)
Pinch of red-pepper flakes, plus more for serving
1/2 cup roasted cashews
Steamed white rice, for serving

Steps:

  • Pat shrimp dry with paper towels; toss with 1/2 teaspoon salt and 1/4 teaspoon pepper. In a small bowl, whisk together cornstarch, oyster sauce, and 3/4 cup water.
  • Heat a large skillet (preferably cast-iron) over high. Swirl in oil, then add shrimp in a single layer; cook, undisturbed, 1 minute. Continue to cook, stirring occasionally, until almost cooked through, 1 to 2 minutes more. Add celery, garlic, ginger, and red-pepper flakes; cook, still stirring, 1 minute. Add cornstarch mixture; stir until sauce thickens and coats shrimp and vegetables, about 1 minute more. Stir in cashews; serve over rice, topped with celery leaves and more red-pepper flakes.

1/4 cup low-fat mayonnaise
1/4 cup low-fat sour cream
1 tablespoon lemon juice
1 teaspoon dry dill weed
1 1/2 cups cashew nuts, roasted
4 cups peas, frozen petite size (thawed and drained)
1 cup green onion, thin slice including tops
2 stalks celery, thinly sliced diagonally
3/4 lb cooked shrimp
salt
pepper

Steps:

  • Dressing: Mix first four ingredients and set aside.
  • Set aside 1/4 cup of cashews for garnish.
  • Combine the remaining cashews, peas, green onions, celery and shrimp.
  • Add dressing and toss gently to coat.
  • Season with salt and pepper. Sprinkle reserved cashews over top.

1 pound medium shrimp, peeled and deveined
4 teaspoons salt
1 egg white
1 teaspoon salt
2 teaspoons cornstarch
1/2 cup peanut oil
2 teaspoons finely chopped peeled fresh ginger
2 tablespoons finely chopped scallions
1/2 cup unsalted cashew nuts, roasted
1/2 teaspoon salt
1 tablespoon Hoisin sauce
1 tablespoon rice wine
6 tablespoons chicken stock, preferably homemade
1/2 teaspoon cornstarch mixed with 1/2 teaspoon water
1 teaspoon sesame oil

Steps:

  • Peel the shrimp, reserving the shells, and sprinkle them with salt. Rinse thoroughly, drain and repeat the process two more times. Blot dry with paper towels.
  • Combine the shrimp with the coating ingredients in a medium-size bowl. Mix well and refrigerate for about 20 minutes.
  • Heat a wok or large skillet until it is hot and add the peanut oil. When the oil is just warm, quickly add the shrimp, stir to separate and turn off the heat. Allow the shrimp to sit in the warm oil for about 2 minutes. Drain in a colander set inside a stainless steel bowl, retaining some of the oil.
  • Wipe the wok clean, return 1 1/2 tablespoons of the drained oil to the wok. And add the ginger and scallions, stir-frying for 30 seconds. Stir in the cashew nuts and salt, and continue to stir-fry for another 30 seconds. Return the shrimp to the wok with the remaining ingredients and stir-fry for another 2 minutes. Turn out on a platter and serve at once.

1/4 cup cornstarch
2 egg whites
1/4 teaspoon salt
1 pound uncooked large shrimp, peeled, deveined
3 tablespoons peanut oil
1 1/2 tablespoons chopped garlic
1 1/2 tablespoons chopped peeled fresh ginger
1 1/2 bunches broccoli, cut into florets
2 carrots, thinly sliced on diagonal
1/4 cup cashews
1/4 cup purchased teriyaki sauce
3 tablespoons dry Sherry
1/4 teaspoon (or more) dried crushed red pepper
1 1/2 cups long-grain rice, cooked

Steps:

  • Whisk cornstarch, egg whites and salt in large bowl until smooth. Add shrimp; toss to coat. Let shrimp stand at room temperature 20 minutes.
  • Heat 2 tablespoons oil in large wok or heavy large skillet over medium-high heat. Add shrimp, garlic and ginger and stir-fry until shrimp is cooked through, about 2 minutes. Using slotted spoon, transfer shrimp to plate. Add remaining 1 tablespoon oil to wok. Add broccoli and carrots and stir-fry until vegetables are crisp-tender, about 4 minutes. Add cashews, teriyaki sauce, Sherry and 1/4 teaspoon crushed red pepper and cook 1 minute. Return shrimp to wok and stir-fry until coated with sauce and heated through, about 1 minute. Season with salt and additional crushed red pepper, if desired.
  • Spoon shrimp and vegetable mixture onto platter. Spoon cooked rice around edge of platter and serve.

10 dried red chili peppers
1/3 cup green onion, sliced
1/2 teaspoon garlic, minced
1/2 cup onion, chopped
1/4 cup sweet red pepper, diced
2 lbs shrimp, peeled and deveined
1 cup green peas (fresh or frozen and defrosted)
1 cup chicken broth
1 teaspoon salt
2 tablespoons fresh ginger, freshly grated
1/2 teaspoon ground ginger
1/4 cup soy sauce
1 tablespoon red wine vinegar
3/4 cup cashews
4 teaspoons cornstarch

Steps:

  • Combine peanut and sesame oils in a large skillet; heat on med; add and brown dried red chili pepper.
  • Add green onion and minced garlic and saute for 30 seconds.
  • Add chopped onion and red bell pepper; cook, stirring on med-low heat for 3 minutes, or until vegetables are crisp-tender; remove 10 red chili peppers.
  • Add shrimp and cook until almost pink, about 3 minutes.
  • Add peas, broth, salt, freshly grated ginger, ground ginger.
  • Bring to a boil, reduce heat, cover and simmer for 5 minutes.
  • In a bowl, mix soy sauce, red wine vinegar and cornstarch; stir into shrimp; cook and stir for 1 minute.
