5-Ingredient Fix Contest Entry. An easy and elegant breakfast or brunch recipe of baked hashbrowns, eggs, cheese and ham.

12 ounces cooked turkey (preferably pepper turkey, sliced not too thin, otherwise you will need more)
20 ounces Simply Potatoes® Shredded Hash Browns
3 cups egg whites
12 tablespoons of crystal farms monterey jack cheese
cooking spray

Steps:

  • Heat oven to 350.
  • Spray a 12 inch non-stick skillet with cooking spray and heat to medium-high. Add hash browns, spread out and press down so flat. Heat till brown on bottom(about 6 min) ad flip lowering heat to medium nd cooking till golden brown ( about another 6 min). Once done remove potatoes. Seperate about 12 spoon fills into a bowl and cover remaining potatoes and keep warm.
  • Spray 12 muffin cup pan with cooking spray. Line each cup with I slice of Deli meat so it makes a little cup/basket (if meat is very thin and tearing use 2 slices offing one over the other). Add 1 spoon of potatoes to each cup. Then pour 1/4 cup of either All Whites or Better'n Egg into each cup (3 cups total).top off each cup with 1 spoon of your Favorite shredded Crystal Farms Cheese (I recommend Pepper Jack or Colby Jack). Bake at 350 for 18-22 min or until egg cups golden brown and no egg liquid visible.
  • Remove from pan and serve with remaining hash browns and your favorite condiments. If you are serving brunch a light salad also pairs great as well as soe hot sauce!

3 large russet potatoes, peeled
1/2 stick unsalted butter, melted
Kosher salt and freshly cracked black pepper
Nonstick cooking spray
6 slices prosciutto, about 2 1/2 ounces, chopped
2 tablespoons maple syrup
6 eggs
3/4 cup shredded provolone

Steps:

  • Special equipment: jumbo sized 6-cup muffin tin
  • Heat the oven to 350 degrees F.
  • In a food processor fitted with the grater attachment, push chunks of the potato through the chute to grate. Once all the potatoes are grated, put them into a piece of cheesecloth or a clean kitchen towel and squeeze to remove the moisture. Add the potatoes to a large bowl, stir in the melted butter and season well with salt and pepper, to taste.
  • Spray the muffin tin lightly with nonstick cooking spray. Press the grated potatoes evenly into the muffin cups being sure the potatoes go up the sides and a thin layer and covers the bottom. Bake until the top edges turn light golden brown and the potatoes are cooked through, about 35 to 40 minutes.
  • Meanwhile, in a small bowl toss together the prosciutto with maple syrup and a few grinds of freshly ground black pepper. Set aside.
  • Remove the potatoes from the oven and gently crack an egg into each cup. Bake until the egg whites set but the yolk remains runny, about 6 to 8 minutes.
  • Remove from the oven and set the oven to broil. Top the eggs with grated cheese and put the maple prosciutto on another sheet tray. Broil both until cheese melts, and prosciutto crisps slightly, about 1 minute.
  • Top the eggs with crispy prosciutto and serve immediately.

2 (20 ounce) bags Simply Potatoes® Shredded Hash Browns
1 (8 ounce) package cream cheese
1/2 lb cooked sliced deli ham
12 slices bacon
3 cups shredded cheddar cheese

Steps:

  • Using a Large nonstick muffin tin press shredded potatoes into a large size muffin tin on the bottom and up the sides. Preheat oven 350 degrees place in oven for 10 minutes. Remove and let cool.
  • Crack 12 eggs whisk add 1 brick of softened cream cheese, 3 cups shredded cheddar cheese & 1/2 lb finely diced cooked deli ham, . Pour egg mixture into all 12 simply potato baskets & bake at 350 degrees for 30 minutes until eggs are done. Using a tooth pick test when it comes out dry they are ready to serve.
  • While baskets are cooking cook 12 strips of bacon place on papertowel pat dry then hang over a rack to bend into basket handles. When your Easter Egg Baskets are done remove from oven place 1 piece of bacon on each basket to look like a handle to a basket. Now just serve and enjoy! Yummy!

3 large potatoes, peeled and grated
¼ cup butter, melted
kosher salt and ground black pepper to taste
6 eggs
¾ cup shredded provolone cheese
6 slices prosciutto
2 teaspoons maple syrup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a large 6-cup muffin tin with cooking spray.
  • Mix potatoes, melted butter, salt, and pepper together in a large bowl.
  • Divide potato mixture among muffin cups. Press to create a thin crust over the bottom and up the sides of each cup.
  • Bake in the preheated oven until edges are a light golden brown and potatoes are tender, about 30 minutes. Crack an egg gently into each cup. Continue cooking until egg whites are set and yolk is runny, about 6 minutes. Remove from the oven; cover eggs with provolone cheese.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Toss prosciutto with maple syrup and pepper in a small bowl. Spread out on a small baking sheet lined with aluminum foil.
  • Place muffin tin and baking sheet under the preheated broiler. Broil until cheese is melted and prosciutto is crisp, about 1 minute.
  • Transfer egg baskets to a serving plate. Chop prosciutto and sprinkle on top.
