BETH'S HASH-BROWN POTATO CASSEROLE

2 pounds large red potatoes, peeled
2 cups sour cream
10 ounces Cheddar cheese, shredded
1 10-ounce can cream of mushroom soup
1 small onion, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
2 cups crushed Ritz crackers
1/2 cup (1 stick) butter, melted

Steps:

  • Preheat the oven to 350°F. Grease a 9 × 13 × 2-inch casserole dish.
  • Use the large holes of a box grater or the grating blade of a food processor to shred the potatoes into a large bowl. Add the sour cream, cheese, soup, onion, salt, and pepper. Turn the mixture into the prepared baking dish and sprinkle with the crushed crackers. Pour the melted butter over the top of the casserole. Cover with foil and bake for 45 minutes, then uncover and bake for 20 minutes more, or until lightly browned on top.

  • If you're in a hurry, substitute a 2-pound bag of frozen hash browns, thawed, for the red potatoes.

2 tablespoons butter
2 large green chiles, diced
2 jalapenos, finely diced
1 poblano chile, diced
2 onions, diced
4 pounds diced frozen hash brown potatoes (2 bags)
Salt and ground pepper
2 cups grated sharp Cheddar
2 cups grated Monterey Jack
8 slices bacon, fried and chopped

Steps:

  • Preheat the oven to 375 degrees F.
  • Melt the butter in a large skillet and saute the chiles and onions until browned, almost blackened. Add the frozen hash browns, some salt and pepper and toss together. Tip into a buttered baking dish and top with the cheese and bacon. Bake until hot and bubbly, about 30 minutes.

10 ounces cream of chicken soup
2 cups cheddar cheese, shredded
1/2 cup butter, melted
1/4 teaspoon pepper
1/2 cup onion, chopped
1 pint sour cream
2 cups corn flakes (cereal)
1/4 cup butter, melted

Steps:

  • Combine first 7 ingredients.
  • Pour into greased 11x9 baking dish.
  • Combine crushed cornflakes with 1/4 cups melted butter. Spread over top. Bake at 350 for 45 minutes.

2 cups shredded Cheddar cheese
1 (10.75 ounce) can condensed cream of chicken soup
1 (30 ounce) package frozen shredded hash brown potatoes, thawed
2 cups corn flakes cereal
¼ cup salted butter, melted
1 pinch salt to taste

Steps:

  • Grease a 9x13-inch baking pan.
  • Mix sour cream, Cheddar cheese, and condensed soup together in a very large bowl. Fold in hash browns and mix thoroughly. Put mixture into the prepared baking pan.
