These are so addictive! I gave this recipe to some folks who now make 2 batches a week! This was given to me by Joyce, a co-worker. Note : Please use the large pretzels broken into pieces, these absorb the oil and flavor better then nuggets, or small twists. added: 10/29/08

1 ounce ranch dressing mix, hidden valley original Ranch dressing
16 hard pretzels, broken into pieces (1 whole bag)
3/4 cup oil, I use olive
1 tablespoon dried dill weed or 1 sprig fresh dill weed
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon kosher salt (optional)

Steps:

  • Preheat oven to 275°F.
  • Mix oil, garlic salt, onion salt, Hidden Valley dressing in a bowl with pretzels to coat pretzels.
  • Bake for 15-25 minutes at 250°F stirring several times.
  • Remove from oven to cool, stirring frequently until cool and well coated with the dressing.
  • I sometimes add extra kosher salt to this as well as some cayenne pepper for added zing.

These fries are similar to delicious fries that are served in the pubs. The nice thing about these are that they are baked and not deep fried!!! Everyone enjoys these along with a variety of meals or on their own for a great snack. Serve with ketchup or ranch dressing.........MMMMMMM!!!!

6 potatoes
1/2 teaspoon thyme
1/2 teaspoon basil
1/2 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 teaspoons paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon chili powder
1 1/2 cups flour
1 egg
1/3 cup milk
1/4 cup oil

Steps:

  • Preheat oven to 450.
  • Cut potatoes into wedges.
  • Mix the seasonings into the flour.
  • Mix the egg with the milk.
  • Dip potato wedges into milk and then dip into seasoned flour.
  • Place on greased baking pan.
  • Drizzle with oil.
  • Bake in oven 20-25 minutes until browned and tender. Serve hot.

These tender, melt in your mouth biscuits are so addictive, bet you can't eat just one. I've been making these for years and depending what I'm serving them with, I sometimes mix a butter and garlic salt mixture and brush the tops a few minutes before finished....so darn good! Enjoy!

2 c flour
2 tsp baking powder
1/2 - 3/4 tsp dried thyme
1/4 tsp baking soda
1/2 tsp salt
1/4 c cold butter - cut into chunks
1 c buttermilk - dont substitute
1 c fresh shredded cheddar cheese

Steps:

  • 1. In a large bowl, whisk together the flour, salt, thyme, baking powder and soda. Using a pastry blender, cut in the butter until the mixture resembles cornmeal.
  • 2. Preheat oven to 450 degree F. Add to this the milk and cheese and stir with a spoon for 25 - 30 seconds.
  • 3. Drop 1 1/2 inch apart but heaping tablespoonfuls on an ungreased baking sheet. Sprinkle with remaining cheese and bake for 12 - 13 minutes or until golden.
  • 4. Melt in your mouth good! Best served straight from the oven.

1 small onion, finely chopped

1 garlic clove, minced

6 hamburger buns, split
Buffalo Burger Topping, optional

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Shape into six patties. , Grill, covered, over medium heat 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on buns. Top with buffalo burger topping if desired.

1 1/2 lbs shrimp, peeled and deveined
1/4 cup fresh parsley, finely chopped
1/4 cup onion, finely chopped
1 cup celery, finely chopped
1/4 cup tarragon vinegar
1/4 cup white wine vinegar
1/2 cup olive oil
3 tablespoons Dijon mustard
2 teaspoons crushed red pepper flakes (1 tsp for wimps)
2 teaspoons salt
2 teaspoons pepper

Steps:

  • Place the shrimp in a pot of boiling salted water and cook only until they begin to curl into a "c" shape; drain and place in a large bowl that has a tight-fitting lid.
  • Combine the parsley, onion, celery, vinegars, olive oil, mustard, red pepper flakes, salt and pepper in a medium-size bowl and mix well. Pour over the shrimp.
  • Cover the shrimp and refrigerate for at least 24 hours. Stir the mixture every several hours.
  • Drain off the marinade and serve the shrimp in a shallow dish, accompanied by cocktail forks or toothpicks.

1 packages almonds

Steps:

  • Lay graham crackers out on a single layer on a cookie sheet
  • Take butter and sugar and bring to a boil for 3 minutes (you will see the difference in the look). Pour this over the graham crackers and spread if needed. Cover with sliced almonds.
  • Bake for 15 minutes at 250 degrees F. Put out on foil to cool.

The Longmeadow Farm was buzzing with activity today! Corn cribs were being filled to their full capacity, and tons of dust with particles were flying high over the top of the yellow barn. The alfalfa and timothy grass fields were being rolled in the distant fields by Bubba. Everyone was in a buzz to make sure everything was working and progressing along. Such is the case this particular Saturday, and to be honest here; not everything was progressing as normal. Chains broke, wheels flew off tractors as if taking flight, and the farm truck hose broke, hissing and spitting like a wild snake run amok. Ahhhhh, a typical Saturday on the farm. These are the kinda of days that makes my Dad steam like a "train whistle". In fact; my Dad, really doesn't always adhere to the old saying, "patience is virtue". Along about 12:30 or so in the early afternoon; after the old mower didn't start despite Jerry trying to stuff a rag on the miserly 2nd hand spark plug.......and so much ether was being sprayed around the workshop to start the mower, I am sure we could of put all of the neighboring folks asleep right where they stood. My dad calmly took off his hat, scratched his head, threw his hammer down in the dirt so hard it almost bounced back and hit him in the leg, while he implored and stated at the same time, "I've had enough"! Although my father tends towards obtaining a bit of an angry flair from time to time from all the mishaps on that happened during any particular Saturday; he does however, perk up when he knows we are having hamburgers for our "Saturday Lunch at the Farm". These are so easy to throw together, and with the addition of Worcestershire sauce, a great taste and fun too. Heck I even have vegan Worcestershire sauce and vegan crumbles to make this great, simple burger, for my sons, Bryan and Mike. I sure hope your day goes better then ours did........ if not--go make your own burger...... and you can even bet the farm on it. I did!

1/2 teaspoon garlic powder
1/4 course ground pepper (optional)
1/2 teaspoon kosher salt (works best- optional for taste only)
2 tablespoons butter
2 tablespoons Worcestershire sauce

Steps:

  • Combine beef, Worcestershire and garlic powder, salt, and pepper; shape into 4 burgers.
  • GRILL over medium heat for 15 minute or until no longer pink in center, turning once.
  • Serve burgers on rolls, with a large white onion, mayonnaise and tomato.
  • Note: You can baste burgers with 2 tablespoons each Worcestershire Sauce and melted butter during grilling.
