BEST WHITE BREAD (ABM)

Best White Bread (Abm) image

The base for this recipe was originally from Allrecipes but I've changed the recipe to suit my breadmaker and taste. When I made my first loaf of this I couldn't believe I had made something that looked and tasted like a commercially produced loaf. NOTE: My ABM is older and takes 2 1/2 hours to do a dough cycle. The times include rising time also.

Categories     Yeast Breads

Time 4h20m

Yield 1 medium loaf

Number Of Ingredients 6

2 teaspoons yeast (bread machine yeast)
3 1/4 cups flour
2 1/2 teaspoons gluten flour
1 1/3 teaspoons salt
1 1/3 tablespoons sugar
1 1/3 cups water (luke warm)

Steps:

  • Place the ingredients into your ABM in the order specified for your machine. Set it on the dough cycle.
  • When the dough cycle has beeped, LEAVE the dough in the machine for another 30 minutes. It will continue to rise again.
  • Preheat your oven to 190°C Grease a 9x5x3 loaf pan with butter.
  • Tip out your dough onto a lightly floured work area and roll into a long rectangle, making sure the width is no wider than 9 inches and about 1/2 inch thick. It doesn't matter about the length. You will hear all the air bubbles popping as you roll.
  • Once the air bubbles are gone, roll up, starting from one of the short ends. You may want to moisten the end of the dough to help seal it together.
  • Place roll of dough, seam side down, tucking ends under, in your loaf pan.
  • Leave to rise until doubled in size, approximately 30-40mins. Brush with melted butter.
  • Bake 190C for 30 minutes or until the loaf sounds hollow when tapped with the handle of a knife.
  • While loaf is hot brush with melted butter.
  • Remove loaf from pan onto a cooling rack.

BEST WHITE BREAD!

Tried lots of bread recipes. This one is the easiest and most forgiving for timing and mistakes :)

Categories     Breads

Time 2h10m

Number Of Ingredients 7

3/4 c warm water
1 pkg active dry yeast
1 tsp salt
2 Tbsp sugar
3 tsp butter, softened
1/2 c cream
3 c flour

Steps:

  • 1. In large bowl, add the warm water. Slowly stir in dry yeast. Continue to stir until yeast is dissolved. Add salt, sugar, butter, and cream to bowl. Stir. Mix in the first 2 cups of flour. If needed, begin adding more flour, one tablespoon at a time, until the dough chases the spoon around the bowl. You do not need to use up all the flour called for in this recipe, or you may need more flour than called for. The amounts vary depending on many factors, including weather, which is why most bread recipes only give an approximate amount of flour needed. Turn dough out onto floured board and knead, adding small spoonfuls of flour as needed, until the dough is soft and smooth, not sticky to the touch. Put dough in buttered bowl, turn dough over so that the top of dough is greased. Cover and let rise in warm spot for 1 hour. Punch down dough. Turn out onto floured board and knead. Preheat oven at 375 degrees F.
  • 2. Form dough into loaf and set in buttered bread pan. Cover and let rise for about 30 minutes. Score dough by cutting three slashes across the top with a sharp knife. Put in oven and bake for about 45 minutes or until golden brown. Turn out bread and let cool on a rack or clean dishtowel.

BEST SOFT WHITE BREAD EVER

Best Soft White Bread Ever image

This a homeade white bread that has the soft crust that you see on commercial (supermarket) bread. The secret is in the baking method. You need a pizza stone and one of those Aluminium Roasting pans that you buy at Thanksgiving to roast your turkey in. You can get one at any Supermarket. Buy the deepest one you can find and then push on the bottom to make it even deeper. Try not to distort the lip so that it will lay flat when it is inverted on the stone.

Time 4h30m

Yield 1 Loaf, 12-18 serving(s)

Number Of Ingredients 6

16 ounces bread flour
1 tablespoon sugar
2 teaspoons kosher salt
2 teaspoons yeast
1 1/2 ounces corn oil
9 1/2 ounces milk

Steps:

  • I use a Kitchenaid mixer with a dough hook but I am sure you could make the dough in a bread machine. Just follow your machines instructions.
  • Place all of the dry ingedients in the mixing bowl and turn the mixer on low to blend the ingredients.
  • Warm the liquids until to about 100 deg. F. and add to the mixer.
  • Mix until the dough pulls away from the sides of the mixing bowl. Then allow the mixer to run on the second lowest setting to knead the dough. This will take about 10 minutes. Dependng on the humidity, you may have to add another tablespoon of water (or two).
  • Remove the dough hook and form the dough into a ball, Slightly oil the dough ball and place it back into the bowl to rise. Depending on the temperature this may take 1 to 3 hours. I like to put it in a cool area to have this step to the longest time possible. Let the dough rise until doubled in volume.
  • Punch down the dough and shape in into the shape of your choice. I prefer a football shape with blunt ends. Place on parchment paper and put on a peel or a flat cookie sheet to facilitate putting it in the oven. Cover with plastic wrap and a towel and allow it to rise a second time. This will take 1 to 1.5 hours.
  • Preheat the oven and the pizza stone to 400 Deg F.
  • After the dough has almost doubled in size remove the towel and plastic wrap. With a sharp knife cut a slash along the top of the loaf.
  • Mist the loaf with a spray bottle of water and slide it off of the peel (or cookie sheet) onto the pizza stone and cover with the inverted Aluminium pan.
  • Bake for 15 to 20 minutes and remove the Aluminium pan, Bake for another 15 to 20 minutes or until the crust is the color you like, and the bottom sounds hollow when you tap it.
  • Allow to cool before you try to cut this bread.

BRENDA'S BEST WHITE BREAD

Brenda's Best White Bread image

This recipe is a combination of several I've tried. It's our family's favorite white bread. I use my stand mixer to make this near effortless. I hope you will enjoy it as well :)

Provided by Brenda.

Categories     Yeast Breads

Time 2h10m

Yield 1 loaf, 6-8 serving(s)

Number Of Ingredients 9

1 1/3 cups warm water (90-100 degrees)
2 1/2 teaspoons active dry yeast (1/4 ounce packet)
4 teaspoons sugar (1 tbsp plus 1 tsp)
1/4 cup oil (I use canola)
4 1/4 cups bread flour (Divided)
1 teaspoon wheat malt (Diastatic Malt Powder)
1/4 cup powdered milk
2 1/4 teaspoons salt
1/2 tablespoon butter, chilled

Steps:

  • Fit stand mixer with dough hook.
  • Pour warm water into the bowl of your stand mixer.
  • Sprinkle yeast and sugar over warm water.
  • Let sit 5-10 until mixture foams.
  • Add canola oil, 4 cups of flour (reserve 1/4 cup of flour to use if needed), diastatic malt powder, powdered milk, and salt.
  • Mix on low to thoroughly blend all ingredients. After flour is mostly incorporated, bring speed up to a low-med (2 on a KA P600, or 4 on a KA Artisan).
  • I like a little stickier dough, so often the 4 cups of bread flour is enough for me. If you need to add more flour, add the remaining 1/4 cup a tbsp at a time.
  • Knead with the dough hook on low-med (2 on a KA P600, or 4 on a KA Artisan) for 8 minutes.
  • Remove dough to a large bowl that has been oiled to prevent sticking. Flip over to oil other side as well.
  • Cover with plastic wrap and set in your oven with only the pilot light or oven light bulb on for a draft free rising with a little warmth.
  • Let rise for 1-1 1/2 hours. Dough should double or a little more.
  • I also place my empty bread pan in the oven during rising to warm a bit.
  • Remove dough from the bowl and pat gently into a narrow rectangle on a clean countertop. You want the width to be about the same as the length of your bread pan.
  • Starting at one of the short ends, roll the dough into a log. Tuck under the ends, and place into a lightly greased bread pan (I use a spritz of cooking spray).
  • Spray or lightly oil a piece of plastic wrap and drape loosely over loaf.
  • Place back in oven to rise another 20-30 minutes.
  • Remove pan from oven and set aside in a draft free place while you preheat your oven to 375 degrees.
  • Carefully remove plastic wrap and bake loaf for 25-30 minutes until a light golden brown.
  • Set pan on a cooling rack for about 2 minutes and then take the chilled butter and gently glide it all over the top of the loaf. You may not use the whole chip of butter. Just use enough to lightly coat the top and sides that rose above the pan.
  • Let cool in pan about another 3-5 minutes and then gently tip the loaf out onto the cooling rack to finish cooling. Cool at least 45 minutes before cutting for best results.
