This is a family recipe that has been developed only over the last 5 years. In this short time it's made me famous in our close circle, but until now I've never shared it with anyone.

⅓ cup soy sauce
½ cup olive oil
⅓ cup fresh lemon juice
¼ cup Worcestershire sauce
1 ½ tablespoons garlic powder
3 tablespoons dried basil
1 ½ tablespoons dried parsley flakes
1 teaspoon ground white pepper
¼ teaspoon hot pepper sauce
1 teaspoon dried minced garlic

Steps:

  • Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.
  • Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.

Steps:

  • In a small bowl, whisk together soy sauce, lemon juice, olive oil, Worcestershire sauce, minced garlic, Italian seasoning, pepper, salt, and a pinch of red pepper. Add steaks to a resealable zip lock bag or large bowl and pour the marinade on top. Marinate for 2 hours or overnight.
  • Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium-high. Cook the steaks to the desired doneness. Mine took about 10 minutes flipping 3 times to get a medium well.
  • Top with butter and garnish with fresh parsley if desired

You will never use another after trying this marinade. For steak sauces-use a combo of whatever you have on hand. We usually use worchestershire, Heinz 57 & A-1 but it does not matter. I just grab & pour whatever is handy.

Adolph's meat tenderizer
1 cup vegetable oil

Best of Both Worlds, 2 in One Flank Steak Marinade image

I had two marinade recipies that we 'kinda' liked, but they both lacked a little something although we liked elements of both. So, I combined and tweaked until we had our now 'favorite' marinade. It is a bit spicy and tangy and full of flavor! This is the one my husband asks for over and over. We like it best on flank steak but you could use it on any beef cut or even pork.

3-4 pound(s) beef flank steaks
- salt and pepper
6 tablespoon(s) hot sauce such as tabasco
6 tablespoon(s) worcestershire sauce
2 tablespoon(s) garlic salt
2 tablespoon(s) ground pepper
6 ounce(s) pineapple juice
1/3 cup(s) lime juice
1/4 cup(s) steak sauce

Steps:

  • Score flank steaks by making shallow diagonal cuts on one side at 1-inch intervals in a diamond pattern. Repeat on other side. This is optional, but it makes a beautiful presentation and helps the marinade flavor the meat more deeply.
  • Sprinkle with salt and pepper. Place meat in plastic bag set in shallow dish.
  • Combine all remaining ingredients for marinade into plastic bag with meat. Seal bag and store in refrigerator 4 to 24 hours, turning occasionally.
  • Drain meat, discarding marinade. Grill meat on grill over medium heat (or broil on medium-high)until desired doneness, turning once (about 12-14 minutes for medium). Allow steaks to cool for 3-5 minutes after removing from grill before slicing.
  • Slice flank steaks thinly across grain. An electric knife helps to slice very thinly if available. Serve with a garish of fresh parsley or cilantro and sliced fresh pineapple if desired.

3 tablespoon(s) worcestershire sauce (in use lea & perrins)
1 tablespoon(s) granulated garlic
3 clove(s) minced garlic
2 tablespoon(s) olive oil
- mccormick grill mates montreal steak seasoning
3 pound(s) any steak you want (even cheap cut is fine)
- large zip lock baggie

  • OK so here is where it gets tricky..Take the meat you have chosen and rinse it in cold water. Then take any anger you may have out on the steak..lol. That's right take a meat mallet and beat the living daylight out of the steak. I use a metal abalone mallet on the flat side not the pokie side. Now this is going to sound funny (more then it already does)if you don't have a metal mallet you can use a sanitized hammer, just be careful ! The idea is to break up the muscle but not flatted the meat.
  • Now that you feel better...put the meat in the zip lock baggie. Sprinkle the olive oil to coat each side.Fallow with the worcestershire sauce.Plop the minced garlic in lil on both sides of bag as to have some on both sides of steak.Follow with the granulated garlic.
  • The steak seasoning is last. Now the reason there is no amount is because this is up to your taste buds. It tends to lend itself to the peppery side,so use accordingly. I use about 2 TBS on each side. Just give it a few shakes and live a little !! LOL
  • Now push all the air out of bag and seal. Make sure you got it sealed or you will be real upset with me ! Now goosh it all together in the bag ! Rubbing it all over mixing it well and spreading it all over the steak.
  • Leave in frig at LEAST 3 days flipping the bag over every day and eve. About every 12 hours if you can.
  • Then HAPPY Grilling !!!! If I use a 1 1/2 inch thick tri tip steak I grill it for 7 minutes each side on med/high for medium rare.
  • 7th step...mouth water !! Have fun !
