My grandmother is Scottish and her family made GREAT scones.... In search of the best scone recipe in the world I have adapted their recipe with my own touches and with the famous scone recipe from the world renowned Savoy hotel in London. I now believe I have adapted the BEST SCONE RECIPE IN THE WORLD!

1 ¾ cups all-purpose flour
4 teaspoons baking powder
¼ cup white sugar
⅛ teaspoon salt
5 tablespoons unsalted butter
½ cup dried currants or raisins
½ cup milk
¼ cup sour cream
1 egg
1 tablespoon milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Sift the flour, baking powder, sugar and salt into a large bowl. Cut in butter using a pastry blender or rubbing between your fingers until it is in pea sized lumps. Stir in the currants. Mix together 1/2 cup milk and sour cream in a measuring cup. Pour all at once into the dry ingredients, and stir gently until well blended. Overworking the dough results in terrible scones!
  • With floured hands, pat scone dough into balls 2 to 3 inches across, depending on what size you want. Place onto a greased baking sheet, and flatten lightly. Let the scones barely touch each other. Whisk together the egg and 1 tablespoon of milk. Brush the tops of the scones with the egg wash. Let them rest for about 10 minutes.
  • Bake for 10 to 15 minutes in the preheated oven, until the tops are golden brown, not deep brown. Break each scone apart, or slice in half. Serve with butter or clotted cream and a selection of jams - or even plain.

1 1/4 cup heavy cream, plus more for brushing
1 large egg, beaten
2 tablespoons dry low-fat milk powder
3 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/4 cup granulated sugar
1 tablespoon baking powder
2 teaspoons kosher salt
1 stick (8 tablespoons) cold unsalted butter, cut into pieces
Demerara or raw sugar, for sprinkling
Softened butter and jam, for serving

Steps:

  • Position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment paper.
  • Whisk the cream, egg and milk powder in a liquid measuring cup. Pulse the flour, granulated sugar, baking powder and salt in a food processor until combined. Add the butter and pulse only until pea-size pieces remain. Transfer to a large bowl and make a well in the center. Pour the wet ingredients into the well and mix with a fork, incorporating the dry ingredients a little at a time until a shaggy dough forms (it's okay if the dough looks a little dry, just don't overwork it). Lightly knead the dough in the bowl until it just comes together.
  • Turn the dough out onto a lightly floured surface and pat into a 1-inch-thick rectangle (about 9 by 7 inches). Cut in half lengthwise, then cut in half again crosswise; you should have 4 equal rectangles. Cut each piece in half from corner to corner making 8 triangular wedges. Transfer to the prepared baking sheet and freeze for 10 minutes.
  • Brush the tops with cream and sprinkle with demerara sugar. Bake the scones until golden brown, 20 to 25 minutes. Let them cool on the baking sheet for 10 minutes, and then transfer to a wire rack to cool for 15 more minutes. Serve warm with softened butter and jam.

1 lemon, zest of

2/3-3/4 cup milk
1/4 cup sliced almonds
icing sugar

Steps:

  • Preheat oven to 400 degrees F (205 degrees C) and place rack in middle of oven.
  • Butter or line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder and salt.
  • Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives. The mixture should look like coarse crumbs.
  • Stir in the cranberries and mixed fruit peel, making sure not to crush the berries.
  • Add the milk and stir until just combined. Do not over mix.
  • Knead the dough on a lightly floured surface. Roll or pat the dough into a circle that is 8 inches (20cm) round and about 11/2 inches (3.75 cm) thick.
  • Transfer to the prepared baking sheet and then brush the scone with milk. Using a sharp knife, score the top of the scone into eight triangles and then sprinkle with the sliced almonds.
  • Bake for 20 minutes or until lightly browned and a toothpick inserted into the center of the scone comes out clean.
  • Remove from oven and then turn your broiler on a high setting. Sift icing sugar over the top of the scone and place under the broiler.
  • Broil for just a few seconds, until the sugar has melted and turns golden brown. Make sure to watch the scone carefully as the sugar will burn very quickly!
  • Transfer to a wire rack to cool.
  • Enjoy!

Steps:

  • Preheat the oven to 400°F. Grease a large baking sheet (or line with parchment). Whisk together flour, sugar, baking powder, xanthan gum and salt. Work in the cold butter until the mixture is crumbly with pea-sized or just larger bits of butter remaining. Gently stir in the additions. Whisk together the eggs, milk, and vanilla until frothy.Add to the dry ingredients, stirring until well blended. The dough should be cohesive and very sticky. Place on a gf floured surface. 3 c all purpose flour
1/3 c sugar
1/4 c non fat dry milk
3/4 tsp salt
1 Tbsp orange zest, fresh (optional)
4 oz butter, cold (very cold), diced
2 eggs
1 tsp vanilla extract
1 Tbsp baking powder
1 c half and half (i have used 1/2 cup 2% milk with 1/2 cup heavy cream)
1 c blueberries
EGG WASH
1 egg
1/4 c heavy cream
coarse sugar (optional)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. NOTE: The first thing I do is to dice the butter and then I put it in the freezer while I prepare the other ingredients. I was told at the Cafe Louisa that this is the trick to a nice flakey scone.
  • 3. Combine the flour, sugar, dry milk, salt and baking powder in a bowl; add orange zest if desired.
  • 4. Cut diced butter into dry ingredients.
  • 5. Whisk together the eggs, vanilla and half and half; add to dry ingredients. Fold in blueberries. Work with hands to keep from crushing the blueberries. Pat into round pan; cut into six wedges; egg-wash. NOTE: I sprinkle a surface with flour and pat dough into a 9 to 10-inch circle and cut into 6 to 8 wedges. If you cut 6 wedges, they will be very large wedges. Bake for approximately 35 minutes.
  • 6. EGG WASH: Whisk together egg and cream and brush on top of scones. Sprinkle with sugar if desired

250 g pumpkin, peeled
2 cups self raising flour
1/2 teaspoon ground nutmeg
1/3 cup icing sugar, sifted
40 g butter, softened
1 egg yolk
milk, for glazing

Steps:

  • Preheat oven to 200°C Place pumpkin in a steamer over a saucepan of boiling water, cover and steam until tender (about 15 minutes), then transfer to an oven tray and bake for 10 minutes to dry out. Cool, then pass through a coarse sieve.
  • Sift flour, nutmeg and 1 tsp salt into a bowl. Using an electric mixer, beat icing sugar and butter until pale and fluffy, add egg yolk and beat to combine. Using a wooden spoon, stir in pumpkin, then half the flour mixture. Add remaining flour mixture and, using your hands, bring together to make a dough, then turn out onto a lightly floured surface and knead gently until smooth (dough should be a little sticky).
  • Roll out to 2cm thick and, using a 5.5cm-diameter cutter dipped in flour, cut rounds (without twisting cutter) from dough and transfer to a lightly greased oven tray. Re-roll scraps and repeat. 3 c all purpose flour
2/3 c granulated sugar
5 tsp baking powder (not soda)
1/2 lb (2 sticks) cold salted butter (you can use unsalted + pinch of salt)
1 premium bourbon vanilla bean
1 large egg
3/4 c heavy cream or heavy whipping cream
GLAZE
5 c confectioners sugar
1 premium bourbon vanilla bean
1/2 c milk
small pinch salt

Steps:

  • 1. Split the vanilla bean lengthwise and scrape out the caviar and mix into heavy cream. Drop in scraped vanilla bean too, for extra flavor. Refrigerate for 20 minutes. While waiting, preheat oven to 350 degrees and line two cookie sheets with parchment paper or non-stick baking mats (silpats).
  • 2. In a food processor, pre-mix the flour, sugar, and baking powder. Add cold butter and continue to pulse until the mixture resembles course crumbs. Remove the vanilla bean and mix the egg into the cream and add into flour/butter mixture while pulsing. Mix just until the dough comes together to form a ball. You can add an additional tablespoon or two of heavy cream if the mixture is too crumbly.
  • 3. Transfer the dough to a lightly floured bench and shape and flatten into a rectangle about 3/4 to 1 inch thick using flour-dusted hands. Cut the dough into 12 even rectangular bars. Then cut each bar diagonally, forming 2 triangles. You can use a rolling pin if you prefer.
  • 4. Place the scones on the baking sheets 2 inches apart and bake for 18 - 20 minutes or until light golden brown. Allow to cool in the pan for 15 minutes while you prepare the glaze.
  • 5. GLAZE: Scrape out the vanilla bean caviar and mix with sifted confectioners sugar, salt and milk in a deep bowl. You can add milk or more confectioners sugar for desired consistency. Dip entire scone and allow to set on a cooling rack or parchment paper.
  • 6. Store in an airtight container. Scones will be good for a few days...that is if they make it that long. Enjoy! *Premium Bourbon (aka Madagascar) Vanilla Beans can be found at your local grocery store or online. I purchase mine at Amazon at a fraction of the cost. **Don't throw away freshly scraped beans. Put it in a sealed jar with granulated sugar and allow to sit for a week or two. You'll have amazing vanilla sugar to use for your coffee and tea...or other baking needs.

Steps:

  • Preheat the oven to 400 degrees F Sift the flour, baking powder, sugar and salt into a large bowl. Cut in butter using a pastry blender or rubbing between your fingers until it is in pea sized lumps. Stir in the currants. Mix together 1/2 cup milk and sour cream in a measuring cup. Pour all at once into the dry ingredients, and stir gently until well blended. (Overworking the dough results in terrible scones!) With floured hands, pat scone dough into balls 2 to 3 inches across, depending on what size you want. Place onto a greased baking sheet, and flatten lightly. Let the scones barely touch each other. Whisk together the egg and 1 tablespoon of milk. Brush the tops of the scones with the egg wash. Let them rest for about 10 minutes. Bake for 10 to 15 minutes in the preheated oven, until the tops are golden brown, not deep brown. Break each scone apart, or slice in half. Serve with butter or clotted cream and a selection of jams - or even plain.

1/2 teaspoon baking soda, ONLY IF acidic liquids are used, such as buttermilk, yogurt, sour cream, or crème fraiche
1/2-1 teaspoon fine sea salt (1/2 teaspoon for sweet scones and 1 teaspoon for savory scones)
Butter
8 tablespoons very cold, unsalted butter, cut into 16 equal-size pieces
Liquid Ingredients (Keep everything cold until use, measure liquid and whisk in egg. Refrigerate until ready to use)
1 large, very cold egg (or 1/4 cup additional liquid)
3/4 cup very cold buttermilk, cream, or half of each (or thinned yogurt, sour cream or crème fraiche)
Additional Ingredients (choose one)
2 ounces grated cheese, optional

  • 1. Cut the butter into 1½ teaspoon size chunks (16 chunks per 1 stick butter). Add the dry ingredients to the work bowl of a stand mixer fitted with the paddle attachment.   • 1. Adjust oven rack to the middle position and heat the oven to 425 degrees. Line a baking sheet with parchment paper. 2. Freeze and then grate 8 T butter on the large holes of a box grater. Keep frozen until needed. Place the berries i the freezer until needed. Whisk the milk and sour cream together in a medium bowl and refrierate until needed. 3.
