Healthy rice krispie treats made with peanut butter, coconut oil, maple syrup and brown rice krispies. These vegan and gluten free peanut butter rice krispie treats are topped with dark chocolate and sea salt for an indulgent treat that tastes just like a crunchy peanut butter cup. Options to add a bit of protein powder to make these a great post workout treat!

For the treats:
3/4 cup natural creamy peanut butter
1/3 cup pure maple syrup
2 tablespoons virgin coconut oil
1 teaspoon vanilla extract
pinch of salt (if your peanut butter isn't already salted)
Optional: ½ cup Vital Proteins Collagen Peptides
2 1/2-3 cups crispy brown rice cereal (or rice krispies)*
For the chocolate topping:
3.5 oz 85% dark chocolate bar, broken up into pieces
To garnish:
Fancy sea salt, for sprinkling on top

Steps:

  • Line an 8x8 inch pan with parchment paper. Set aside.
  • Place a medium pot over low heat and add in peanut butter, coconut oil, maple syrup and vanilla extract. Mix until smooth and well combined, about 1 minute.
  • Next add in the protein powder (optional) and crispy brown rice cereal; stir until combined and cereal is completely coated. Pour into prepared pan, and use a spatula to flatten the top so it is even.
  • Next make the chocolate topping by adding chocolate to a microwave safe bowl. Microwave on high in 30 second intervals, stirring in-between, until chocolate is completely melted. You can also melt the chocolate in a small saucepan over very low heat if you prefer.
  • Pour melted chocolate over the bars and tilt your pan to spread out the chocolate evenly.
  • Place pan in the refrigerator for 30 minutes or until bars are completely cool and chocolate is hardened. Sprinkle bars with fancy sea salt, then cut into 16 bars. Enjoy!
  • Bars should be kept covered in the fridge and will stay good for up to 1 week. Take bars out 5 minutes before you are ready to serve to ensure they aren't too crunchy! They soften up at room temp.

This recipe was handed down from my great-grandmother. I'm not sure when traditional marshmallow krispie treats came on the scene, but this recipe could have preceded it! These are what I grew up on. I do not like marshmallows, so I find this recipe to be perfect. You can also top with melted chocolate if you like. Original recipe calls for 1 cup sugar, but I found it to be too sweet, so I cut it in half. You may wish to add more.

1/2 cup sugar
1 cup corn syrup (light or dark does not matter)
1 cup peanut butter
6 cups Rice Krispies

Steps:

  • Bring corn and sugar to a boil, and remove from heat.
  • Stir in peanut butter until smooth.
  • Add rice krispies and stir to incorporate.
  • Dump into a 9x13 pan and press down.
  • Cut into squares, and enjoy!

6 cups crisp rice cereal
1 cup white sugar
1 cup peanut butter
1 cup corn syrup
1 tablespoon butter

Steps:

  • In a medium sauce pan, mix together sugar, peanut butter, and corn syrup. Be careful not to let it burn, or it will ruin the recipe. Stir mixture until well melted. Remove pan from heat.
  • Combine warm peanut butter mixture with crisp rice cereal.
  • Grease well a 9 x 13 inch pan with butter or margarine. Spread mixture in pan. Allow to cool. When mixture is no longer sticky to the touch, cut into bars.

1 cup light corn syrup
1/2 cup granulated sugar
1/2 cup light brown sugar
1 1/2 cups salted peanut butter
2 teaspoons pure vanilla extract
4 cups Rice Krispies

Steps:

  • Line a 9 x 13-inch baking pan with wax paper or baking parchment. Place the corn syrup and sugars in a large saucepan over medium heat and stir to combine. Bring to a boil. Remove from the heat.
  • Stir in the peanut butter and mix well to combine. Quickly stir in the vanilla and Rice Krispies. Spread into the lined baking pan. Cool and slice into squares.
