THE BEST MEATLOAF I'VE EVER MADE
When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
- In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
- Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
- In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

- Preheat oven to 375 degrees F (190 degrees C).
- Mix ground beef, bread crumbs, 1/2 can golden mushroom soup, egg, dried minced onion, and salt together in a bowl until smooth; shape into an 8x4-inch loaf and move to a baking dish.
- Bake in the preheated oven until no longer pink in the center, about 75 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Stir remaining soup with hot water in a saucepan; bring to a simmer. Ladle soup mixture over meatloaf.

MOM'S BEST EVER TURKEY MEATLOAF
This recipe was modified from one I found in a cookbook published by "The Turkey Store". My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

- Spray 9 x 5 loaf pan with cooking spray.
- Combine all ingredients except tomato sauce and 1 tbsp Worcestershire in large bowl and mix well.
- Add more egg if too dry, or add more oatmeal crumbs if too wet.
- Press turkey mixture into pan.
- Bake at 375°F for 45 minutes.
- Mix tomato sauce and remaining 1 tablespoon Worcestershire together in small bowl.
- Remove meatloaf from oven and pour tomato sauce mixture over meatloaf.
- Return to oven for an additional 15- 20 minutes.
- If using 99% Fat Free ground turkey breast meat, there is no need to drain fat before pouring tomato sauce on and returning to oven.
- If you use the regular ground turkey, which is about 7% fat you might want to drain the fat off before pouring the tomato sauce on the loaf.
BEST EVER ITALIAN-STYLE MEATLOAF
This is the only meatloaf recipe I use. The cheese makes the meatloaf very moist and tasty! The herbs impart a wonderful flavor as well! I freeze this after slicing in a container and reheat in the microwave for a quick dinner.

- Mix the first 7 ingredients in a bowl. Best to mix together with your fingers. Mix together last 3 ingredients for sauce in a separate small bowl.
- Add mixture to a non-stick loaf pan
- Make a small trough in the middle of the meatloaf to later allow the sauce to fill into.
- Bake covered with tin foil in oven for 1 hour at 350 degrees. After 1 hour drain meatloaf of any juice.
- Add sauce at this time, and cook for another 15 minutes uncovered.
- Best served with mashed potatoes.

- In a medium skillet, melt butter over medium heat. Add garlic, onion, and green pepper and saute until onions are soft.
- Preheat oven to 375 degrees F (190 degrees C).

I got this recipe 20+ yrs or so ago. It was presented on one of the cooking shows on PBS (before the Food Network.) I jotted it down (no home computer then.) I tweaked it to my taste, but it pretty much is the recipe shown on TV. You must be a mushroom lover to appreciate this one.

- 1. ~~MEATLOAF~~ Pre-heat oven to 350^. In large hot skillet add EVOO. Heat on med-hi heat till shimmery~add onions and bell peppers. Saute' for 2 min or until soft. Remove skillet from heat. In large bowl break up beef; add eggs, soup or bechamel sauce, worcestershire sauce, bread crumbs, salt & pepper, and saute'd onion/bell pepper mixture. Work the ingredients together with your hands~if this freaks you out, wear disposable vinyl gloves. Do not over work mixture or it will be tough. Spray your pan w/cooking spray of choice. Form into 13"x9" pan, leaving a 2" gap between meat and pan on all sides. Place on middle rack in oven. Bake for 1hr & 30minutes if using metal pan; bake 1hr & 10minutes if using non-stick or glass pan. While baking meatloaf, prepare gravy.
- 2. ~~GRAVY~~ In hot skillet, on med-hi, heat EVOO till shimmery. Add onions and saute' for 1&1/2 minutes or until translucent. Add garlic and mushrooms and saute' until mixture becomes brown and dry. Remove from heat. In large bowl pour in **Golden Mushroom Soup** and slowly add stock or broth , whisking all the while till smooth. Now stir into mushroom mixture in the skillet and s&p. Set aside. About 10 minutes before meatloaf is done, put gravy on med-hi heat till it comes to a slow boil. Remove from heat. Take meatloaf out of oven and drain if there is fat in the baking pan. Pour hot gravy over meatloaf. Return to oven 10-15 minutes. Serve with mashed potatoes and veggies of choice. ~~ENJOY~~

BEST MEATLOAF RECIPE EVER (AND EASIEST!)
I don't remember where I found this recipe, on the internet somewhere maybe, but, basically, it's not mine. Definitely not low fat/low carb, but it's the best and easiest meatloaf I've ever had. I make it all the time for my family and they love it. My brother in law always requests that I make two, so he has leftovers the next day. You can substitute a ground meat mixture, or ground turkey for the ground beef.

- Preheat oven to 400°F.
- Put meat, french fried onions, and stuffing in bowl. Mix eggs, ketchup, and ranch dressing together separately (easier this way), then dump over other ingredients (meat, stuffing, onions). Mix all together. Shape into loaf (or whatever shape you want) and put on a cookie sheet. (Helps to line cookie sheet with tin foil first- easier clean up). Cover loosely with tin foil and bake 50-60 minutes. Remove foil and top with ketchup, or any topping sauce you like, for the last ten minutes.
- Let cool for at least 10 minutes before cutting.
- **I just want to note that in most ovens, the bottom of this loaf burns. I don't know why, I've tried and tried to keep it from happening to no avail. However, it doesn't matter, I just cut burnt part off, doesn't effect the rest of the loaf. Also, I don't use a loaf pan for this one, because it will be too greasy.

- Pre heat over to about 350 degrees.
- I think the only way to make meatloaf is with your hands. Using a mixer or other stirring implement always seemed to make the meatloaf tough.
- So throw everything into a great big bowl and mix it all up with your hands. I like to push the breadcrumbs into the meat and make sure they kind of break up a bit.
- in a separate bowl mix together the last 3 ingredients - remaining tomato paste, brown sugar and BBQ sauce.
- Throw the whole crazy meatloaf mess into a pan and spread the topping across the entire top.
- Bake in the over for about an hour or until the center is done.

- In a blender or food processor, puree eggs, garlic, 1 onion, Italian seasoning, salt and pepper.
- In a large mixing bowl using gloves, mix beef, sausage, ketchup, mustard, horseradish, chopped bell pepper, rest of onion, and cheese blend and soy/Worcestershire sauces.
- Mix in pureed mixture to meat mixture using hands (gloves).
