12 tablespoons unsalted butter, 1 1/2 sticks, melted
1 cup granulated sugar
½ cup brown sugar
3 large eggs
¾ teaspoon vanilla extract
1 ½ cups all purpose flour
¼ cup unsweetened cocoa powder
1 teaspoon salt
½ cup semi-sweet chocolate chips
3 cups soft caramel candy
1 ½ cups soft caramel candy
¼ cup heavy cream
flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 350°F (180°C). Grease an 8x8-inch (20x20-cm) baking pan and line with parchment paper.
  • Make the brownies: in a large bowl, whisk together the melted butter, granulated sugar, and brown sugar. Add eggs and vanilla extract. Whisk until thoroughly combined. Sift in the flour, cocoa powder, and salt, and fold to incorporate. Fold in the chocolate chips.
  • Pour half of the batter into the baking pan and spread to cover the bottom. Arrange the caramel candies in a single layer over the batter. Pour the rest of the batter over the caramel candies and spread to cover.
  • Bake for 35 minutes or until center is cooked through. Remove the brownies from the oven and let cool.
  • Make the topping: combine the caramel candies and heavy cream in a medium heat-proof bowl. Microwave for 1 minute in 30-second intervals, stirring between each until the mixture is thick and velvety.
  • Pour the caramel topping over the brownies. Let set for 10 minutes. Sprinkle with sea salt.
  • Slice and serve.

This is an easy recipe to make for those unexpected needs that arise. I always keep the ingredients on hand. Everyone always requests this recipe.

14 ounces caramels, wrappers removed
1/2 cup evaporated milk
1 (18 1/4 ounce) box German chocolate cake mix
1/4 cup evaporated milk
1/2 cup butter, melted
1 cup chocolate chips
1/2 cup nuts, chopped (optional)

Steps:

  • Mix (by hand) cake mix with 1/4 cup evaporated milk and 1/2 cup melted butter; add nuts if using.
  • Batter will be stiff.
  • Press half of batter into bottom of 9 x 13-inch pan. I use wax paper and a small rolling pin to make this process easier.
  • Bake at 350° for 8 minutes.
  • Meanwhile, melt caramels with 1/2 cup evaporated milk in microwave or in double boiler.
  • Remove bottom layer from oven and sprinkle with chocolate chips, then drizzle with caramel.
  • Top with remaining batter by rubbing batter between fingers and dropping evenly (will not cover completely).
  • Bake 18- 20 minutes.
  • Let cool before cutting.

1 cup (2 sticks) butter
4 1-oz. squares of dark chocolate
2 cups sugar
4 eggs
1 tsp. vanilla extract
1 cup all-purpose flour
1/2 tsp. salt
1/4 cup caramel topping (this is my favorite)
1 tsp. good quality sea salt

Steps:

  • What to do: Preheat oven to 350 degrees F and grease a 9x13 inch baking pan. In a 3-quart saucepan over very low heat, melt butter and chocolate, stirring the mixture constantly. Remove from heat, and stir the sugar into the chocolate. Allow the mixture to cool slightly. Beat in the eggs one at a time, mixing well after each, then stir in the vanilla. Combine the flour and 1/2 tsp. salt in a separate bowl, then stir into the chocolate mixture. Spread the batter evenly into the prepared pan. Drizzle the caramel atop the batter, and use a knife to swirl over the surface. Sprinkle sea salt over the caramel. Bake for 30 to 35 minutes. Brownies are done when a toothpick inserted into the center come out clean. Cool in pan on wire rack.

1 cup chopped nuts (optional)
1 cup evaporated milk, divided
1/2 cup (1 stick) butter or margarine, melted
35 (10-oz. pkg.) caramels, unwrapped
2 cups (12-oz. pkg.) Chocolate Chips

Steps:

  • Heat oven to 350° F. Combine cake mix and nuts in large bowl. Stir in 2/3 cup evaporated milk and melted butter (batter will be thick). Spread half of batter into ungreased 13 x 9-inch baking pan. Bake for 15 minutes. While bottom layer is baking, heat caramels and remaining evaporated milk on top of a double boiler, stirring constantly, until caramels are melted. While bottom layer is still hot, sprinkle chocolate chips over brownie; drizzle with caramel mixture. DROP remaining batter by heaping teaspoon over caramel mixture. BAKE for 20-25 minutes or until center is set. Cool in pan on wire rack. Cut into 24 squares.

1/2 cup(s) butter
3/4 cup(s) brown sugar
3/4 cup(s) white sugar
1/2 teaspoon(s) salt
1 teaspoon(s) vanilla extract

1/4 cup(s) melted caramel candies

Steps:

  • Preheat oven to 325 degrees F. Grease a 9x12 baking dish, then line with foil, then grease the foil; set aside.
  • In a large bowl, add the flour and the salt; set aside.
  • Over medium-low heat, melt the chocolate chips and butter.
  • Remove from heat, add the sugars to the chocolate, stirring to combine, then let cool slightly.
  • To the chocolate mixture, beat in the vanilla and the eggs one at a time.
  • Transfer chocolate mixture to flour bowl and combine.
  • Pour mixture into baking dish.
  • Pour melted caramel on top, and use a fork to swirl the caramel into the top.
  • Bake for 45 minutes, or until a toothpick from the center comes out clean.
  • Remove and let cool on cooling rack.
  • When ready, remove the foil from the dish and place on cutting board. Pull back the foil from the edges, and cut into 1 inch squares. (Trust me, you don't want bigger than that, these are rich)
  • Serve with caution.....they are dangerously delicious.
