A delicious side dish that's quick and easy to prepare and makes a great accompaniment to meat, poultry or fish.

4 pounds broccoli
4 garlic cloves (peeled and sliced *See the notes section before starting)
Good olive oil (or for Keto - butter flavor coconut oil)
1½ teaspoons kosher salt
½ teaspoon freshly ground black pepper
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
⅓ cup freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 400°F/200°C.
  • Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets.
  • Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper.
  • Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
  • Remove the broccoli from the oven and immediately toss with 1½ tablespoons olive oil, the lemon zest, lemon juice, and Parmesan. Serve hot.

This is a delightful, cool, and crisp salad with healthy fruits, vegetables, and nuts that is a great accompaniment to any entree. It's a real favorite with anyone who tries it. This is a fun recipe as you can get creative with it. I have even made it with out the sunflower seeds, and it was still delicious.

1 cup mayonnaise
3 tablespoons cider vinegar
3 tablespoons white sugar
2 crowns broccoli, cut into bite-size pieces
1 cup seedless red grapes, halved
¾ cup chopped walnuts
¼ red onion, finely chopped
¼ cup sunflower seed kernels
½ cup sweetened dried cranberries (such as Craisins®)
¼ cup bacon bits

Steps:

  • Whisk mayonnaise, cider vinegar, and sugar together in a small bowl until sugar dissolves and the dressing is smooth.
  • Toss broccoli, grapes, walnuts, red onion, sunflower seeds, cranberries, and bacon bits together in a large bowl. Drizzle dressing over the salad and gently fold so ingredients are evenly coated.
  • Cover bowl with plastic wrap and refrigerate 3 to 4 hours. Stir before serving.

For years I have sought out a broccoli recipe that would wow my taste buds - then one day I threw together 3 different broccoli versions from family members and came up with this winner!

1 head broccoli
1/4 cup red wine vinegar
1/2 cup extra-sharp cheddar cheese
1/2 cup walnuts

Steps:

  • Cut the broccoli.
  • Steam the broccoli for 4 minutes.
  • Strain the broccoli.
  • Sprinkle vinegar over broccoli.
  • Grate cheddar over broccoli.
  • Sprinkle walnuts on top.
  • Cover with a lid to melt the cheese.
  • Serve immediately!

Number Of Ingredients 9

Put the broccoli on a cookie sheet. Toss with:
Take 4 to 5 pounds of broccoli (I just got two large bunches),
cut into florets (but relatively big ones.)
dry them THOROUGHLY. That is, if you wash them.
5 T olive oil,
salt and pepper
1 1/2 tsps kosher salt,
1/2 tsp fresh ground pepper
add 4 garlic cloves that are peeled and sliced and toss them in too.

Steps:

  • Preheat oven to 425* Roast in the oven 20 to 25 minutes, until "crisp-tender and the tips of some of the florets are browned." When it's done, take it out of the oven-and here's where it gets really good-zest a lemon over the broccoli, squeeze the lemon juice over the broccoli, add 1.5 Tbs more olive oil, 3 Tbs toasted pine nuts (I left those out 1/3 cup of freshly grated Parmesan cheese.
