This tastes very much like an apple pie only in cake form. It's absolutely my favorite apple cake recipe ever. Delicious served with ice cream or whipped topping.

4 medium golden delicious apples, peeled, cored, and cut into 1/2-inch pieces
5 tablespoons granulated sugar
2 1/2 cups granulated sugar
2 teaspoons ground cinnamon
4 large eggs
1 cup vegetable oil
1/4 cup orange juice
1 tablespoon orange zest, grated
1 teaspoon vanilla extract
3 cups all-purpose flour
3 1/2 teaspoons baking powder
1/2 teaspoon salt
confectioners' sugar, for dusting cake

Steps:

  • Preheat oven to 350°F
  • Grease and flour a 12-cup bundt pan.
  • Mix the apples, 5 tablespoons sugar and ground cinnamon in a large bowl.
  • Combine 2 1/2 cups sugar, eggs, vegetable oil, orange juice, orange peel and vanilla extract in another large bowl; whisk to blend.
  • Stir flour, baking powder and salt into egg mixture.
  • Spoon 1 1/2 cups batter into prepared bundt pan.
  • Top with half of apple mixture.
  • Cover with 1 1/2 cups batter.
  • Top with remaining apples, then with remaining batter.
  • Bake cake in preheated oven until top is golden brown and tester inserted near center comes out with moist crumbs attached, about 1 hour 30 minutes.
  • Cool cake in pan on wire rack for 15 minutes.
  • Run knife around sides of pan and center tube to loosen.
  • Turn cake out onto rack.
  • Cool for 1 hour.
  • Dust cake with confectioners' sugar.
  • Serve slightly warm or at room temperature with a scoop of vanilla ice cream, non-dairy whipped topping or whipped cream.
  • Store any leftover cake covered at room temperature.

I had this at a party I attended, and could not get over how moist and delicious it was. No way was I leaving without the recipe!

1 (18 ounce) package yellow cake mix
3 eggs
1 1/4 cups apple juice
1/3 cup vegetable oil
1 teaspoon cinnamon
2 cups grated peeled apples
1/2 cup all-purpose flour
1 cup pecans (optional)
3 tablespoons margarine
3 tablespoons brown sugar
3 tablespoons white sugar
3 tablespoons heavy whipping cream
1/2 cup confectioners' sugar
1/4 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350.
  • Grease or spray 10 inch tube pan and flour.
  • For cake, combine cake mix, flour, eggs, apple juice, oil and cinnamon in large bowl.
  • Fold apples and pecans into batter.
  • Pour into prepared pan.
  • Bake 45 minutes or until toothpick inserted in center comes out clean.
  • Cool in pan for 25 minutes.
  • Invert onto serving plate; cool completely.
  • For frosting, combine margarine, brown sugar, white sugar ,and whipping cream in saucepan. Bring to a boil over medium heat; boil one minute. Remove from heat.
  • Cool for 20 minutes. Add confectioner sugar and vanilla extract. Blend with wooden spoon until smooth and thick.
  • Spread frosting on cake.
  • Garnish with pecans, if desired.

3/4 c pecans, chopped
3 c flour, all-purpose
2 c sugar
2 tsp ground cinnamon
4 large baking apples, peeled, cored, sliced
1 Tbsp baking powder
1 tsp salt
4 large eggs
1/2 c vegetable oil
1 stick butter, unsalted, melted (1/2 c.)
1/4 c orange juice
2 tsp vanilla extract

Steps:

  • 1. Heat oven 350. Spray 10" removable-bottom tube pan with nonstick spray. Sprinkle pecans on bottom of pan
  • 2. In large bowl, mix 2 Tbsp. of the flour, 1/4 c. of sugar, and all cinnamon. Add apples and toss to combine.
  • 3. In another large bowl, mix remaining flour, remaining sugar, baking powder, and salt. Add eggs, oil, butter, orange juice, and vanilla extract. Beat until batter is smooth.
  • 4. Pour half of the batter into prepared pan. Top with half of apple mixture, Spoon remaining batter over apples and top with remaining apples, placing them 1/4" in from the tube and the border of the cake.
  • 5. Bake 1 hour and 20 minutes, or until a toothpick inserted in the center of the cake comes out clean. Let cake cool in pan on wire rack for 30 minutes. Run a paring knife around the sides and center of cake and turn cake out onto wire rack. Invert cake onto another rack to cool, apple side up.

The Best Apple Yogurt Cake Ever image

Oh, this is a wonderful apple cake ... there are so many layers of flavor in it! The cake itself is dense, yet very moist. The crunchy sugar butter topping just makes the cake. This smells amazing while it bakes and no one will ever guess this is gluten-free. Drizzling the glaze on top is a nice final touch, but a slice alone with the crunchy topping was tasty too.

WET INGREDIENTS
1 cup(s) vegetable oil
2 cup(s) sugar
2 cup(s) plain yogurt
4 - eggs
2 cup(s) peeled and finely chopped apple
1 teaspoon(s) vanilla extract
DRY INGREDIENTS
2 1/2 cup(s) King Arthur gluten-free baking flour
2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1 teaspoon(s) baking soda
2 teaspoon(s) cinnamon
pinch - nutmeg
pinch - allspice, ground
TOPPING
1 stick(s) butter
1/2 cup(s) sugar
1/2 cup(s) dark brown sugar
1/2 teaspoon(s) cinnamon
GLAZE/FROSTING
1/2 cup(s) half and half or heavy cream
1 tablespoon(s) maple extract
1 1/2 cup(s) powdered sugar

Steps:

  • Preheat oven to 350* and lightly grease 13in by 9in pan. Mix all wet ingredients together.
  • Mix all dry ingredients together.
  • Mix wet and dry ingredient mixes together.
  • Pour into the pre-greased pan. Pan will seem really full but I have never had it overflow.
  • Bake in preheated oven for 45 min -1 hour until middle is not jiggly anymore and a toothpick comes out kinda clean.
  • For the last 15-20 minutes, you'll add a topping to the cake. The cake will just be firm enough to spread it on and this should make a nice crispy top. Melt butter for topping and mix in sugars and cinnamon.
  • Spread on top of the cake.
  • Finish baking for the last 15-20 minutes.
  • If the sugar topping is not all melted and bubbly by the time the cake is done some times I turn on the broiler for just a few minutes, just till topping is bubbly.
  • For the glaze, mix cream, sugar, and maple extract together till smooth. You can add less or more cream for your desired consistency. I like mine just thin enough for a slow thick pouring consistency,
  • I like to serve it almost straight out of the oven when it is still very warm and it melts the glaze and vanilla ice cream. I serve the glaze on the side so it does not make the topping soggy. Enjoy!
