CHICKEN WITH TIGER SAUCE WITH SUGAR SNAP PEAS AND RICE

This dish has ALL THE SAUCES, which is why it's so heavenly. The original Tiger Sauce is a piquant blend of more than 20 ingredients and a cayenne pepper base. We make our version with a blend of ponzu and sambal sauces mixed with mirin, miso, honey, and ginger. It makes a sweet and spicy glaze that is just lovely on chicken with a side of sugar snap peas.

13 oz. Boneless Skinless Chicken Breasts
5½ fl. oz. Tomato Juice
¾ cup Jasmine Rice
4 oz. Stringless Sugar Snap Peas
1 fl. oz. Mirin
2 Green Onions
Info 1 fl. oz. Ponzu with Lime
½ fl. oz. Honey
1 Tbsp. Sambal
Info 2 tsp. White Miso Paste
1 tsp. Minced Ginger

  • Before You Cook If using any fresh produce, thoroughly rinse and pat dry Ingredient(s) used more than once: ginger, green onions Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Start Rice and Prepare Ingredients Bring a small pot with jasmine rice and 11/2 cup water to a boil.Reduce to a simmer, cover, and cook until rice is tender, 18-20 minutes.Remove from burner and set aside.While rice cooks, trim and thinly slice green onions on an angle.Pull strings from sugar snap peas like a zipper.Pat chicken dry and, on a separate cutting board, cut into 1" pieces. Season chicken pieces on all sides with a pinch of pepper 2 Sear the Chicken Heat a medium non-stick pan over medium-high heat.Add 2 tsp. olive oil and chicken to hot pan and cook until chicken pieces are browned, 3-4 minutes.Remove chicken to a plate. Add 1 tsp. olive oil, remaining ginger, and half the green onions to hot pan and cook 30 seconds.Add tomato juice, miso, honey, mirin, and ponzu and cook 3-4 minutes.Return chicken and any accumulated juices to pan and bring to a light boil. Reduce to a strong simmer and cook until a glaze forms and chicken reaches a minimum internal temperature of 165 degrees, 4-7 minutes.Add half the sambal (it's spicy!), taste, and add remaining if desired. 5 Plate the Dish Plate dish as pictured on front of card, garnishing with green portions of green onions Bon appétit!

Chicken in a creamy, mild curry sauce. From my Grandma's recipe box, I grew up with this and had no idea it was so easy until my late 20's. I get many compliments on it, notably from those who claim they do not like "indian" food.

4 boneless skinless chicken breasts
1 (10 ounce) can cream of chicken soup
1 cup Hellmann's mayonnaise
1 tablespoon curry powder
2 tablespoons lemon juice
1/2 cup grated parmesan cheese
1/2 cup Pepperidge Farm herb dressing

Steps:

  • Preheat oven to 350*F.
  • Combine condensed soup, mayonnaise, curry, lemon juice, and half of the grated parmesan cheese together.
  • Pour over chicken in a shallow baking dish.
  • Mix remaining parmesan cheese with the dressing and spread evenly over top of casserole. Note: It is meant to be a kind of light, crunchy topping, not a soft one.
  • Bake for one hour or until chicken is cooked through.
  • I always end up doubling this recipe for my family *except* for one thing: the mayo. I do not double the mayo, I use 1 and 1/2 c in my double recipe.
  • The sauce is marvelous over jasmine rice. This is one of my favorite leftover dishes, it is almost better the next day! Enjoy!

20 rounded cups high-gluten flour
5 ounces slow-rise yeast
1-ounce salt
1 to 2 tablespoons olive oil
8 ounces fresh basil, leaves only
1/4 cup fresh cilantro, leaves only
4 cloves garlic
Salt and freshly ground black pepper
Olive oil, for blending
About 2 cups shredded mozzarella pizza cheese
About 2 cups shredded provolone pizza cheese
2 cups cooked tandoori chicken
1 cup real crabmeat
One 4-inch piece hearts of palm, thinly sliced
1/4 cup finely chopped fresh cilantro leaves

Steps:

  • For the dough: Mix the flour, yeast, salt and 2 cups of body temperature water until well combined, 3 to 4 minutes. Add the Olive Oil and roll it into the dough. Place the dough in a pot, cover loosely with plastic and refrigerate for 8 hours. Remove the dough from the pot and roll into 18-ounce balls, place on a tray and let rise 6 to 8 more hours.
  • For the green sauce: Blend the basil, cilantro, garlic, salt and pepper in a blender, slowly adding enough Olive Oil so the consistency becomes slightly thinner than peanut butter.
  • For the pizza: Preheat the oven to 550 degrees F. Roll and toss 1 ball of dough until it's 18-to-20 inches around. Reserve the remaining dough for another use or for other pizzas. Place the round on a pizza pan and cover with the green sauce; keep any leftovers in the refrigerator for up to 3 days. Top with a blend of mozzarella and provolone pizza cheese. Add the tandoori chicken, real crabmeat and hearts of palm. Bake until the crust is golden brown, about 15 minutes. Remove from oven and top with the fresh cilantro.

This dish is a true Bangkok creation because of its intense flavors. The chiles must be hot enough to make one howl like a tiger but, at the same time, balanced with a blend of sweet-salty flavors to lessen the fire. Fresh peppercorns give a lingering sense of warmth.

2 teaspoons dried green peppercorns
1 tablespoon Big Four Paste
10 cloves garlic, 5 minced, 5 unpeeled, lightly crushed
3 to 20 fresh bird chiles or 2 to 15 serrano chiles, minced
1 pound boneless, skinless large chicken breasts, rinsed and patted dry
1/4 cup vegetable oil
1 teaspoon fish sauce (namm pla)
1 tablespoon sugar
Water as needed
2 tablespoons crispy pork rinds, crushed to the consistency of coarse cornmeal
20 sprigs cilantro, coarsely chopped

Steps:

  • In a small skillet, dry-roast the green peppercorns over medium heat until fragrant, about 2 minutes. Set aside to cool.
  • Put the Big Four Paste and the minced garlic in a mortar and pound until blended into a paste. Add the unpeeled garlic cloves and pound until the garlic and peels are blended into the paste. Do not worry if the membrane is separated from the cloves. (You may want to remove the peel; I encourage you to try it the authentic Thai way. It may seem unusual, but the reward is the wonderful texture and added taste of crispy garlic peel.) Add the chiles and continue pounding. Add the green peppercorns and, instead of pounding, crush them by pressing them against the side of the mortar in a circular motion. Transfer the paste to a small bowl and set aside. The paste will keep well in a jar with a tight-fitting lid in the refrigerator for a couple of weeks.
  • Trim any fat from the chicken breast. Cut the breast in half. Working with one half breast at a time, slice horizontally almost but not quite in half. Open the meat up into a butterfly shape. Put your hand firmly on top of the meat and press down on it to flatten it. Using a very sharp knife, held at a 75-degree angle to the work surface, slice thinly against the grain into 2 to 3 long pieces. Try to keep the pieces the same size and thickness. Set aside on a plate.
  • Arrange the ingredients near the stove in the order they will go into the skillet: oil, chile paste, chicken, fish sauce, sugar, and a small cup of water.
  • Heat a 12-inch skillet over high heat for 2 minutes, or until when you put your hand an inch or so above it, you can feel the heat. Add the oil, then add the chile paste, stirring it quickly, until it turns slightly brown and fragrant, 2 to 3 minutes. Add the chicken, lower the heat to medium, and sprinkle a bit of water into the pan to prevent the paste from burning. Try to keep the chicken pieces flat as you saute them to ensure even cooking. When the chicken is browned, push it to one side of the skillet and add the fish sauce and sugar to the center of the skillet. Stir and blend until the mixture bubbles, then push the chicken pieces into it while you continue to stir until the chicken is coated. If needed, sprinkle a bit more water to prevent sticking. Transfer the chicken to a serving platter, garnish with the crushed pork rind and cilantro, and serve hot.

1 tablespoon fenugreek seeds
1/2 teaspoon onion seeds
1/2 teaspoon salt
1 teaspoon garam masala
1/2 teaspoon turmeric powder

1/2 teaspoon coriander powder
1/2 teaspoon cumin powder
1/4 teaspoon chili powder
1 1/2 teaspoons paprika
4 garlic cloves, peeled and cleaned
2 tablespoons vegetable oil
fresh ginger (1 thumb-sized piece)
2 jalapeno peppers (seeds and all)
1 bunch fresh cilantro (washed, long stems cut off)
1/4 cup lemon juice
1 cup plain yogurt (An unthickened type of yogurt works best)

Steps:

  • Roast the fenugreek and onion seeds first by heating and tossing in a sauté pan for several minutes. Grind them together using a mortar and pestle or spice grinder.
  • In a food processor, blend fenugreek and onion seeds with the salt, garam masala, turmeric, curry powder, coriander powder, cumin, chili powder, paprika, garlic, vegetable oil, ginger, jalapeños, cilantro and lemon juice until all the ingredients become a smooth paste.
  • Spoon the mixture into a large mixing bowl and stir in the yogurt.
  • Marinate meat or fish for eight hours (or bathe first in white distilled vinegar for shorter marination time). Tofu, vegetables or paneer can be tossed into the marinade just before grilling. Use the marinade to baste over the grill.

Serve this spiced chicken in an aromatic masala for a starter at a family feast. Packed with flavour, it's a popular Bengali dish - one you're sure to cook time and time again

4-6 bone-in chicken thighs or drumsticks, flesh scored
1 tsp mild curry powder
1 tsp turmeric
1 tsp ground coriander
2 tbsp Greek yogurt
5 tbsp ghee or oil
3 bay leaves
2 large cinnamon sticks
3 cardamom pods
2 large onions, finely sliced
6 garlic cloves, finely sliced
1 tsp grated ginger
2 tsp mild curry powder
1 tsp ground cumin
1 tsp ground coriander
1 tsp turmeric
½ tsp chilli powder
5 green chillies, sliced, to serve
chopped coriander, to serve

Steps:

  • Put the chicken in a bowl, add the marinade spices and yogurt with ½ tsp salt and mix well. The chicken can be left to marinate for a few hours, or cooked straight away - leaving it to marinate will make it more tender.
  • Melt the ghee in a non-stick frying pan. Fry the chicken for 5 mins on each side until golden. Remove from the pan and transfer to the bowl, leaving the ghee in the pan.
  • Keep the pan on the heat and scrape it to release any caramelised bits stuck to the bottom. Add the bay leaves, cinnamon and cardamom pods and fry until they start to smell aromatic. Add the onions and garlic, followed by the ginger and 1-1½ tsp salt. Stir, cover and cook until soft and translucent, about 8-10 mins.
  • Stir in the rest of the spices and fry over a low heat for 5-8 mins. Add 200ml water, cover and cook for a further 3-4 mins, or until the ghee separates from the masala (it should be bubbling around the edges of the pan).
  • Add the chicken back to the pan, including any meat juices. Spoon some of the masala over the chicken and cover. Cook for a futher 10-15 mins or until the chicken is cooked through. Stir through the sliced green chillies and chopped coriander and serve immediately.
