AIR FRYER BEIGNETS



Air Fryer Beignets image

These beignets take on a wholesome aspect as they're cooked in an air fryer. You will need a silicone egg-bite mold, available through retailers like Amazon®.

cooking spray
½ cup all-purpose flour
¼ cup white sugar
⅛ cup water
1 large egg, separated
1 ½ teaspoons melted butter
½ teaspoon baking powder
½ teaspoon vanilla extract
1 pinch salt
2 tablespoons confectioners' sugar, or to taste

Steps:

  • Preheat air fryer to 370 degrees F (185 degrees C). Spray a silicone egg-bite mold with nonstick cooking spray.
  • Whisk flour, sugar, water, egg yolk, butter, baking powder, vanilla extract, and salt together in a large bowl. Stir to combine.
  • Beat egg white in a small bowl using an electric hand mixer on medium speed until soft peaks form. Fold into batter. Add batter to the prepared mold using a small hinged ice cream scoop.
  • Place filled silicone mold into the basket of the air fryer.
  • Fry in the preheated air fryer for 10 minutes. Remove mold from the basket carefully; pop beignets out and flip over onto a parchment paper round.
  • Place parchment round with beignets back into the air fryer basket. Cook for an additional 4 minutes. Remove beignets from the air fryer basket and dust with confectioners' sugar.

2 ¼ teaspoons active dry yeast
1 ½ cups warm water (110 degrees F/45 degrees C)
½ cup white sugar
1 teaspoon salt
2 eggs
1 cup evaporated milk
7 cups all-purpose flour
¼ cup shortening
1 quart vegetable oil for frying
¼ cup confectioners' sugar

Steps:

  • In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, evaporated milk, and blend well. Mix in 4 cups of the flour and beat until smooth. Add the shortening, and then the remaining 3 cups of flour. Cover and chill for up to 24 hours.
  • Roll out dough 1/8 inch thick. Cut into 2 1/2 inch squares. Fry in 360 degree F (180 degrees C) hot oil. If beignets do not pop up, oil is not hot enough. Drain onto paper towels.
  • Shake confectioners' sugar on hot beignets. Serve warm.

These Beignets remind me of Carnaval (Mardi-Gras) and good times. In Haiti during the Carnaval and Mardi-Gras, families, relatives and friends gather together to enjoy the festivities and this delectable casual desert made with bananas.

1 c all-purpose flour
1/4 tsp baking soda
1 pinch cinnamon (optional)
1 c mashed bananas (2 to 3 medium well ripened bananas)
1/4 c whole milk or
2 Tbsp whole milk plus
2 Tbsp dark haitian rum
1/4 c granulated sugar
granulated or powdered sugar for dusting

Steps:

  • 1. Mix flour with baking soda, cinnamon, and salt. Set aside
  • 2. In a large bowl, mix mashed bananas with milk and sugar until smooth. Combine with flour mixture and stir until smooth.
  • 3. Heat oil in a medium pan over medium High heat setting. Drop the batter by tablespoons in hot oil. Do not overload. Fry until golden, about 1 minute for each side. Use a slotted spoon to remove them from pan. Squeeze the oil out by gently pressing them on the slotted spoon with the back of a tablespoon.
  • 4. Drain on paper towels.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup evaporated milk
1/2 cup canola oil
1/4 cup sugar
1 large egg, room temperature
4-1/2 cups self-rising flour
Oil for deep-fat frying
Confectioners' sugar

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, oil, sugar, egg and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Do not knead. Cover and refrigerate overnight. , Punch down dough. Turn onto a floured surface; roll into a 16x12-in. rectangle. Cut into 2-in. squares. , In a deep cast-iron or electric skillet, heat 1 inch oil to 375°. Fry squares, in batches, until golden brown on both sides. Drain on paper towels. Roll warm beignets in confectioners' sugar.

1 1/2 tablespoons active dry yeast
4 cups all-purpose flour
3 large eggs
1/2 teaspoon salt
1/4 cup granulated sugar
7 tablespoons unsalted butter or pareve margarine, at room temperature
Vegetable oil for frying
Confectioners' sugar

Steps:

  • Dissolve the yeast in 1/2 cup warm water in the bowl of an electric mixer fitted with the dough hook. Stir in the flour, eggs, salt, granulated sugar, and the butter or margarine, and knead until you have the consistency of a smooth dough. Turn it out, clean and grease the bowl, and put dough back in. Allow dough to rest, covered, for 1 1/2 to 2 hours, or until doubled in volume. Punch down, and knead again.
  • Roll out the dough with a rolling pin to a thickness of about 1/4 inch. With a sharp knife, cut the dough into roughly equal 2-inch triangles or rectangles. Allow to rise for 45 minutes.
  • Heat about 2 inches of the oil to 375 degrees in a deep pan or a wok. Lower three or four pieces of the dough at a time into the hot oil, and fry until they are golden on both sides. Extract them with a slotted spoon, and drain on paper towels. Repeat with the rest of the dough. Sprinkle with confectioners' sugar before serving.
