The bee's knees is a classic cocktail made with gin, lemon and honey! This recipe is strong, refreshing and delicious. Recipe yields 1 cocktail; you can multiply the ingredients and make up to 3 cocktails at once in a standard cocktail shaker.

1/2 ounce honey syrup (see step 1)
1 ounce lemon juice (about 1/2 medium lemon)
2 ounces gin
Lemon twist, for garnish

Steps:

  • To make the honey syrup: Combine equal parts honey and water (say, 2 tablespoons each if you're only making a few cocktails) in a microwave-safe bowl or small saucepan. Warm in the microwave or over the stovetop just until you can completely stir the honey into the water. Set aside.
  • Before juicing your lemons, use a vegetable peeler or channel knife to peel off a strip(s) of zest for your twist.
  • To make the cocktail, fill a cocktail shaker with ice. Pour in the honey syrup, lemon juice and gin. Securely fasten the lid and shake until the mixture is very cold, about 30 seconds.
  • Strain the drink into a coupe or martini glass. Twist the lemon peel over the cocktail to release some of its oils, then drop it in. Enjoy while cold.

I love the sourness of lemon and the sweetness of honey in a Bees Knees cocktail. But the classic version of this gin-based beverage can sometimes be a bit too strong for me, and I'm left buzzing (pun intended) a bit more than I'd like! I decided to create a variation that cuts down the booze quotient a bit, adds some fizz and uses lavender honey for even more herbal flavor that really complements the juniper flavor of the gin. The sparkle of the soda and the depth of flavor in lavender honey will set your drink apart. This is my go-to cocktail for any season!

1 cup honey
2 tablespoons lavender flowers
Lavender Honey Syrup:
1/2 cup Lavender Honey, store-bought or homemade
1/2 cup water
2 tablespoons sugar
2 lemon wedges
Ice
2 ounces gin
1 ounce fresh lemon juice
1 ounce Lavender Honey Syrup
2 ounces club soda

Steps:

  • For the Lavender Honey (Makes 1 cup):
  • Heat the honey and lavender flowers in a small saucepan over high heat until boiling, 4 to 5 minutes. Allow the mixture to cool. Once cool, strain the mixture through a sieve, filtering out the lavender flowers.
  • For the Lavender Honey Syrup (Makes 1/2 cup):
  • Heat the lavender honey and water in a small saucepan or microwave until well combined. Allow to cool before adding to cocktails. If you are short on time, you can cool the syrup over an ice bath.
  • For the cocktail:
  • Put the sugar on a saucer or small plate. Glide 1 lemon wedge along the rim of the glass, then dip the rim in the sugar. Set aside.
  • Fill a cocktail shaker with ice. Add the gin, lemon juice and 1 ounce of the lavender honey syrup mixture and shake briskly.
  • Partially fill the sugar-rimmed glass with the drink and top with the club soda. Garnish with the remaining lemon wedge.

50ml dry gin
25ml lemon juice
ice
lemon zest strip, to serve

Steps:

  • Put the honey in a small jug or cup and add 1 tsp freshly boiled water. Stir well until smooth and the honey is nicely thinned down.
  • Pour the honey mixture into a cocktail shaker along with the gin, lemon juice and a large handful of ice. Shake until the outside of the shaker feels very cold.
  • Double strain into a cocktail glass or a coupe and garnish with a curled strip of lemon zest - you can do this by wrapping it tightly around a spoon handle.
