Beer-Cheese Kielbasa with Tortellini image

1 package (9 oz) refrigerated three-cheese tortellini
3/4 cup water
1/3 cup all-purpose flour
1 cup light beer
1/3 cup sliced green onions with tops
3 tablespoons chili sauce
2 teaspoons ground mustard
1/2 teaspoon salt
1 package (14 oz) cooked kielbasa or other smoked sausage, cut diagonally into 1-inch-thick slices
1 1/2 cups shredded Cheddar cheese (6 oz)
2 tablespoons diced roasted red bell peppers (from a jar)

Steps:

  • Fill 12-inch nonstick skillet half full with water (about 6 cups). Heat to boiling. Add tortellini; cook uncovered minimum time as directed on bag, stirring occasionally. Drain.
  • In 1-cup measuring cup, stir 3/4 cup water and the flour with whisk until smooth; pour into same skillet. Stir in beer, green onions, chili sauce, mustard and salt. Heat to boiling. Reduce heat; simmer uncovered 1 minute, stirring constantly, until thickened.
  • Gently fold in tortellini and kielbasa. Cover; cook over medium-low heat about 5 minutes or until kielbasa is hot.
  • Fold in cheese, 1/2 cup at a time, until melted. Remove from heat; top with roasted peppers.

1 pkg family size tortellini
1 pkg turkey polska kielbasa or vegetarian sausage, sliced into half moon shape
3 clove chopped garlic
3 pinch dry oregano
3 pinch dry basil
3 pinch dry parsley
3 pinch dry thyme
2 pinch crushed red pepper
salt
fresh cracked pepper
olive oil, extra virgin
parmesan cheese

Steps:

  • 1. Kielbasa: In a large skillet heat up olive oil, place sausage in and brown..it is already cooked so you are just browning and heating through. Turn down heat, add garlic and spices.
  • 2. Pasta: Boil in salted water..I'm pretty sure directions say for 7 minutes..I normally only do it for 5 or 6..I HATE over cooked pasta and it cooks a little more once you mix it into skillet with kielbasa. Once cooked strain and add to skillet with sausage. Toss around on low heat for several minutes. Turn off heat and add cheese to taste. If it seems a little dry add a drizzle of olive oil.
