1 pound ground beef
1 small onion, finely chopped
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
¼ teaspoon ground black pepper
¼ cup beer

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix the ground beef, onion, garlic, Worcestershire sauce, salt, and pepper in a bowl. Mix in the beer until absorbed by the meat mixture. Form into patties.
  • Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, about 5 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

1 1/2 lb lean (at least 80%) ground beef
1 small onion, finely chopped (1/4 cup)
1/4 cup regular or nonalcoholic beer
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped
6 rye or whole wheat hamburger buns, split
Ketchup, if desired
Pickle planks, if desired

Steps:

  • Heat gas or charcoal grill. In medium bowl, mix all ingredients except buns, ketchup and pickles. Shape mixture into 6 patties, about 3/4 inch thick.
  • Place patties on grill rack over medium heat. Cover grill; cook 10 to 15 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F. Add buns, cut sides down, for last 4 minutes of grilling or until toasted.
  • Top burgers with ketchup and pickle planks; serve on buns.

8 slices bacon, crisply cooked, drippings reserved
2 large sweet onions, thinly sliced (about 1 1/2 lb)
1 bottle (12 oz) pilsner style beer
1 1/2 lb lean (at least 80%) ground beef
1/2 teaspoon salt
1/4 teaspoon pepper
4 slices (about 3/4 oz each) Cheddar or American cheese
8 leaves red leaf lettuce or red romaine lettuce
4 slices tomato
4 kaiser rolls or crusty rolls, split

Steps:

  • In 10-inch skillet, heat 1 tablespoon bacon drippings over medium-high heat. Add onions; cook about 15 minutes, stirring frequently, until softened.
  • Reserve 1/2 cup of the beer. Stir remaining beer into onions. Heat to boiling; reduce heat to medium and simmer uncovered, stirring occasionally, until onions are golden and liquid has evaporated, about 30 minutes. Cool.
  • Meanwhile, roughly chop 4 slices of the cooked bacon; set aside. Roughly chop half of the onion mixture; stir into chopped bacon.
  • In medium bowl, stir chopped onion and bacon mixture into beef. Add salt and pepper. Shape beef mixture into 4 large patties, thinner at center and thicker at edges for even cooking.
  • In 10-inch skillet, heat remaining bacon drippings over medium-high heat. Add patties; cook 8 minutes for medium-rare, 10 minutes for medium, 12 minutes for medium-well, turning once. After turning, add reserved 1/2 cup beer to burgers, then top burgers with cheese. Cover skillet to melt cheese.
  • Place burgers on bun bottoms; top with lettuce leaves, tomato slices, and remaining caramelized onions. Cut remaining 4 slices bacon in half; crisscross 2 pieces on top of onions on each burger, and cover with tops of buns.

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/4 teaspoon mustard powder
3/4 cup beer
1/2 cup half-and-half
6 ounces grated sharp yellow cheddar cheese
1 tablespoon horseradish
1 1/2 pounds ground beef, preferably chuck
Kosher salt and freshly ground pepper
Vegetable oil, for the grill
4 poppy seed rolls, split
Tomato slices, for topping
2 tablespoons chopped fresh chives

Steps:

  • Preheat a grill to medium high. Melt the butter in a medium saucepan over medium heat. Add the flour and mustard powder and cook, stirring, 3 minutes. Whisk in the beer and bring to a simmer; whisk in the half-and-half until smooth. Return the sauce to a simmer and cook, whisking occasionally, until thickened, 3 to 4 minutes. Stir in the cheese and horseradish until smooth; keep warm.
  • Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. Remove the patties to a plate and let rest 5 minutes. Grill the rolls, cut-side down, until lightly toasted, about 1 minute.
  • Top the bun bottoms with the burger patties, cheese sauce, tomato and chives. Cover with the bun tops.

1/3 pound smoked Gouda cheese, diced into 1/4 to 1/2-inch cubes
1 medium onion or 1/2 large onion
2 teaspoons smoked sweet paprika, 2/3 palm full
1 teaspoon ground cumin, 1/3 palm full
Grill seasoning (recommended: Montreal Steak Seasoning)
Coarse salt and freshly ground black pepper
2 cloves garlic, grated or finely chopped
Generous handful finely chopped fresh flat-leaf parsley
1 tablespoon Worcestershire sauce
1/2 (12-ounce) bottle beer
Extra-virgin olive oil, for drizzling
1/2 cup spicy brown mustard
1/4 to 1/3 cup sour cream
2 to 3 tablespoons chopped fresh dill or 1 teaspoon dried dill
4 crusty Kaiser rolls, split and lightly toasted
Green or red leaf lettuce, for topping
Sliced sweet bread and butter pickles, for topping

Steps:

  • Preheat grill over medium-high heat.
  • Place the meat in a bowl and add the cheese. Peel the onion and halve it, if using the medium onion. Grate about 3 to 4 tablespoons of onion directly over the meat into the bowl. Finely chop the remaining onion and reserve for topping. Add spices to meat: paprika, cumin and about 1 tablespoon of grill seasoning and/or some salt and pepper. Add garlic, parsley and Worcestershire and beer then form 4 large patties making them a little thinner at the center than at edges. Burgers plump when you cook them so this will prevent burger bulge. Drizzle a little olive oil over the burgers then grill about 4 minutes on each side for medium rare, 5 minutes on each side for medium and 6 to 7 minutes on each side for well done.
  • Mix mustard and sour cream with dill.
  • Serve patties on bun bottoms and top with lettuce, pickles, chopped raw onion. Slather bun tops with sauce and serve.

500ml sunflower oil, for deep-frying
2 thick skinless fillets of cod pollock or haddock (100g-120g each)
2 soft rolls or burger buns
a few lettuce leaves (round lettuce works well)
1 small red onion, sliced into rings (not too thin)
1 tsp malt vinegar
1 small gherkin, chopped, plus 1 sliced gherkin to serve (optional), and a splash of the brine
small handful of dill sprigs, chopped
5 tbsp mayonnaise
50g self-raising flour, plus extra for dusting
20g cornflour
small pinch each of ground turmeric and cayenne pepper
100ml cold lager or fizzy water

Steps:

  • To quick-pickle the onions, mix them with a pinch of salt and the vinegar, then set aside. Mix all the ingredients for the tartar sauce, and set aside. Both can be made up to a day ahead and kept chilled.
  • To make the batter, tip the flours and spices into a small bowl with a pinch of salt, then pour over the beer or fizzy water. Mix quickly until it just comes together with the consistency of double cream - don't over-beat (a few lumps are fine). Keep chilled until needed.
  • Carefully heat the oil in a large wide pan like a wok, ensuring the pan is no more than two-thirds full, or heat a deep-fat fryer to 185C if you have a thermometer. The oil is hot enough when a drizzle of batter crisps in less than a minute.
  • Working quickly, season the fish with salt, then dust in flour before dredging through the batter. Hold the fillet above the bowl of batter to let the excess drip back into it, then carefully lower into the oil. Repeat with the second fillet. Fry the two fillets for about 4 mins, turning once, until deep golden and crisp. Carefully lift onto a plate lined with kitchen paper to drain for a minute.
  • To assemble, split each roll and spread both the top and bottom generously with the tartar sauce. Place lettuce on the bottom half, then add some pickled onions and a fish fillet. Top with gherkin slices, if you like, then serve straightaway.

1 cup bottled chili sauce
1/4 cup fresh lemon juice

1/2 teaspoon ground ginger

  • Bring to a boil over medium heat, stirring occasionally.

This recipe uses nearly a whole bottle of dark beer, such as stout, which gives these aromatic burgers a nice subtle carmel-like flavor and color. I like to use a Belgium strong beer for these. You can include a couple jalapeno peppers, seeded and diced, with the sautéing onion and garlic if you'd like to add some heat. From the show "Licence to Grill".

2 1/2 lbs ground beef
1 onion, diced
6 garlic cloves, chopped
2 teaspoons dried oregano
4 teaspoons dried thyme
1 egg
10 ounces dark beer
1/4 cup fresh parsley, chopped
1 teaspoon celery salt
1 teaspoon black pepper

Steps:

  • Sauté onion, garlic, thyme and oregano over medium heat until onion is translucent, about 3 minutes. Let this cool completely.
  • Add ground beef, onion mixture and egg together in a large bowl and mix until thoroughly blended. Slowly stir in stout beer, while mixing. You may want to add less beer than called for here if you find it is getting too thin, or more yet. Then add parsley, celery salt and black pepper and mix well. It's ideal to mix using your hands and you may want to wear rubber gloves for this.
  • Form into 6 patties and let sit in the fridge for 15 minutes to firm up a bit.
  • Preheat grill to 375°F.
  • Place patties onto the grill and cook until well-done (170°F internal temperature), turning once, about 8-10 minutes per side.

1 large onion, sliced thin
1 cup beer
1 teaspoon sugar
1/2 teaspoon salt
1 1/2 lbs ground chuck

1/4 teaspoon Worcestershire sauce
salt and pepper
4 hamburger buns
4 slices cheese (your choice)

Steps:

  • Onions: melt butter in saucepan over medium-high heat. Add onions and saute, stirring frequently, until tender, about 5-6 minutes. Add 3/4 cup beer, sugar, and salt. Cook until all the beer has been absorbed by the onions and they begin to brown slightly, about 18 minutes. Add the remaining 1/4 cup beer and bring to a simmer. Keep onions warm.
  • Burgers: In a large bowl, thoroughly combine the ground chuck, Tabasco sauce, Worcestershire sauce, and salt and pepper. Gently form into 4 patties, handling as little as possible so as not to make the burgers tough.
  • Grill burgers to your desired degree of doneness.
  • Toast buns on the grill.
  • Serve burgers on the toasted buns topped with the cheese, beer braised onions and ketchup.

Smoky Beer Burgers With Creamy Mustard Sauce image

Nice change of pace from regular burgers, they have their own rich and unique delicious flavor! Although I think it is best to shred the cheese in the burger, I have also just placed sliced cheese on the top of the burgers. Sharp cheddar cheese works great too. Because these burgers are so moist, gently put them on the grill and then don't touch until ready to flip. Make sure that the burgers are fully cooked on the first side prior to flipping. Feel free to add some dry bread crumbs if they look too moist, but mine firmed up just fine. Prep time does not include refrigeration time. Be sure you bring a good appetite, these burgers are huge! Tasty burgers that are super easy to make. I like to add a fried egg to the burger for extra goodness.

1 lb ground pork
1 tsp each coriander, sage, dry mustard, and salt
1/4 tsp each, dried rosemary, paprika, white pepper and nutmeg
1 Tbsp olive oil
1 large sweet onion
2 tsp worcestershire sauce
12 oz beer
4 slice cheese
4 buns

Steps:

  • 1. Heat olive oil in large skillet over medium high heat. Slice onions into rounds and separate. Add to oil and saute until caramelized about 10 minutes. Add the Worcestershire sauce and beer. Turn heat to medium and let cook until beer has evaporated and the onions are golden. Season with some salt.
  • 2. Mix the pork with the spices. Shape into patties and fry until done. Top with caramelized onions, cheese and serve on buns with favorite toppings.

1 1/2 lbs ground beef
1 small onion, minced
1/4 cup regular beer or 1/4 cup non-alcoholic beer
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, finely chopped
6 split hamburger buns
ketchup (optional)
sliced pickle (optional)

Steps:

  • Heat coals/ gas grill.
  • Combine all ingredients the except buns,ketchup and pickles.
  • Shape into 6 patties, about 3/4-inch thick.
  • Grill the patties, uncovered, about 4 inches from medium heat 10-15 minutes.
  • Turn once, until no longer pink in center and juice is clear.
  • Add the buns to grill, cut sides down, for the last 4 minutes of grilling or until toasted.
  • Top the burgers with ketchup and pickle; serve on the buns.

1 - onion, finely chopped
3 teaspoon(s) minced garlic
1 tablespoon(s) worcestershire sauce
1 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/4 cup(s) beer

Steps:

  • Oil grill grates and heat to med-high heat. In bowl, mix together beefn or turkey, onion, garlic, worcestershire sauce, salt & pepper.
  • Mix in beer until absorbed. Form mix into 4 patties. Grill patties about 5 min each side.
