PETE'S "CUT-UP" BEER BRINED APPLE SMOKED TURKEY

13 pounds fresh turkey, cut up like a chicken, giblets removed
750 milliliters Belgian ale
4 tablespoons sea salt
3 tablespoons mixed peppercorns, (white, green, black and red)
1 tablespoon allspice berries
6 bay leaves
4 cup cold water
15 pounds charcoal, with 5 pounds in reserve, if necessary
5 pounds bag Apple wood "chunks"
Several sprigs fresh rosemary

Steps:

  • Rinse the turkey pieces off and towel dry. In a large saucepan over a medium-high flame heat the ale to a simmer. In a mortar and pestle bruise the peppercorns and allspice and add to simmering ale. Add the salt and stir to dissolve, about 3 to 4 minutes. Add the bay leaves and simmer some more. Shut off heat and continue to stir, adding the water to cool slightly. Arrange the turkey pieces in a large plastic or glass, (non-reactive), bowl and pour the cooled brine over the meat. Turn the meat once to completely coat with brine, cover and refrigerate for 12 hours. Turn the meat over once after 6 hours in the brine.
  • I use a large converted oil drum BBQ with a chimney vent. For a kettle BBQ you should use a smaller turkey. Make a pile of charcoal on the left side of the BBQ, nearest the bottom vent and arrange the grill racks on the opposite side. Insert the metal probe for the digital thermometer so that it is suspended over the area where the meat will be smoking. Place a large heavy-duty aluminum hotel pan filled with water directly under the grill racks. Light the coals and get them plenty hot. Meantime, put the wood chunks on to soak, along with the rosemary sprigs.
  • When the coals are good and white spread them out flat, rearranging any black coals on top of the white ones. Add about 1/2 of the wood chunks to the coals being careful not to put the fire out! Place the rosemary sprigs on top of the wood chunks. Blow on the coals to get the smoke going, close the lid and open up the flue and chimney vent. When the temperature inside of the BBQ reaches 200 degrees F, open the top and arrange the turkey pieces on the grill rack. Close the top and start the smoking process. Do not open the top unless absolutely necessary for at least 45 minutes. Add more fresh coals and the other half of the wood after 45 minutes of smoking.
  • Turn the turkey pieces over to get smoked on both sides. You should only have to smoke the turkey about 45 to 55 minutes more. Use an instant-read thermometer to check for doneness. About 155 to 160 degrees F for the breasts, and 145 to 150 degrees F for all the other pieces should do the trick. Remove the turkey to a cutting board and tent with heavy duty foil for 10 minutes before carving. Serve with a homemade cranberry sauce.

2 quarts apple cider or juice
1-1/2 cups kosher salt
1-1/2 cups packed brown sugar
3 tablespoons whole peppercorns
2 cinnamon sticks (3 inches)
4 bay leaves
1 tablespoon Juniper berries, optional
1 teaspoon whole cloves
6 bottles (12 ounces each) dark beer, chilled
6 cups cold water
1 turkey (14 to 16 pounds)
2 turkey-size oven roasting bags
1 large onion, chopped
2 medium carrots, chopped
2 celery ribs, chopped
6 garlic cloves, minced
1 cup reduced-sodium chicken broth
1/2 cup butter, melted
1 tablespoon rotisserie chicken seasoning
GRAVY:
3 cups reduced-sodium chicken broth, divided
1 tablespoon olive oil
1 tablespoon butter
1/4 cup all-purpose flour
1/2 cup white wine or chicken broth
2 tablespoons fresh sage or 2 teaspoons dried sage leaves

Steps:

  • In a large kettle, combine the first eight ingredients. Bring to a boil; cook and stir until salt and brown sugar are dissolved. Remove from the heat. Add cold beer and water to cool the marinade to room temperature., Remove giblets from turkey; cover and refrigerate for gravy. Place a turkey-size oven roasting bag inside a second roasting bag; add turkey. Carefully pour cooled marinade into bag. Squeeze out as much air as possible; seal bags and turn to coat. Place in a roasting pan. Refrigerate for 18-24 hours, turning several times., Drain and discard brine. Rinse turkey under cold water; pat dry. Place the onion, carrots, celery and garlic in both cavities. Skewer turkey openings; tie drumsticks together. In a small bowl, combine the broth, butter and chicken seasoning., Place turkey breast side up on a rack in a roasting pan. Bake, uncovered, at 325° for 3-1/2 to 4 hours or until a thermometer reads 180°, basting occasionally with broth mixture. (Cover loosely with foil if turkey browns too quickly.) Cover and let stand for 15 minutes before carving; discard vegetables or save for another use., For gravy, add 1 cup broth to the pan, scraping to loosen browned bits. Skim and discard fat, reserving 1-1/2 cups pan drippings; pour into a small saucepan., Chop giblets. In a large saucepan, cook giblets in oil and butter until browned. Add 1-1/4 cup pan drippings; cook and stir for 5 minutes. Combine flour and remaining drippings until smooth. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened., Add the wine, sage and remaining chicken broth. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until liquid is reduced by half. Serve with turkey.

I had a beer-brined turkey at my pastor's home last year, and it was as tasty and moist as I've tasted. This version is courtesy of The Beeroness, a wonderful chef and craft beer aficionado.

12-16 lb turkey, thawed (try to find a fresh, never frozen turkey if possible)
10 cups water
2 1/2 cups kosher salt
5 garlic cloves, quartered
1/4 cup allspice berry
1 tablespoon whole cloves
2 onions, quartered
2 (22 ounce) bottles of brown ale such as rogue hazelnut ale (about 5 1/2 cups)
2 cups ice
3 celery ribs, cut in half
1/4 cup olive oil
1 teaspoon salt
2 cups chicken broth, plus 4-6 cups water if needed

Steps:

  • •In a large pot, add the water, salt, garlic, allspice, cloves, and one of the onions. Bring to just barely boiling and remove from heat, stiring occasionally to dissolve the salt. Add the ice, the the beer.
  • •Rinse the thawed turkey.
  • •Place turkey in the oven bags. Remove as much air as possible and seal tightly, and place in a roasting pan in the refrigerator.
  • •Brine for 16-18 hours rotating the turkey every 6-8 hours to insure an even brine.
  • •Remove the turkey from the brine and rinse well, inside and out.
  • •Place turkey on a roasting rack inside a roasting pan in the fridge, uncovered, for 12-18 hours to dry the skin.
  • •Preheat your oven to 400.
  • •Truss your turkey if desired.
  • •Brush your entire turkey with olive oil, sprinkle with salt.
  • •Stuff the other quartered onion, and the celery stalks inside the cavity of the bird.
  • •Place the turkey on a roasting rack inside a roasting pan. Add the broth to the bottom of the roasting pan. If the pan starts to dry out during the cooking, add the additional water to the bottom of the roasting pan. Do not allow the broth/water in the roasting pan to touch the turkey.
  • •Cook until your turkey reachs about 160 degrees (it will continue to cook once out of the oven to meet the 165 degree temperature). Allow to rest for 10 minutes before carving.

Glaze:
2/3 cup barley malt syrup
1/4 cup malt vinegar or apple cider vinegar
6 fresh sage sprigs
4 fresh thyme sprigs
1/2 teaspoon ground black pepper
2 tablespoons (1/4 stick) unsalted butter
Brine, turkey, and aromatics:
4 quarts water
2 cups Diamond Crystal coarse kosher salt or 1 1/2 cups Morton coarse kosher salt
3 12-ounce bottles stout beer (such as Guinness)
1 1/2 cups barley malt syrup
1 14- to 16-pound turkey
2 teaspoons ground black pepper
2 peeled onions, quartered
2 celery stalks, cut into chunks
1 bunch fresh sage
1 bunch fresh thyme
1 unpeeled head of garlic, cut crosswise in half
3 tablespoons extra-virgin olive oil
2 cups (or more) water
Mixed-Mushroom and Tarragon Gravy
Turkey lacing pins
Charcoal chimney (if grilling)
13 x 9 x 2-inch disposable aluminum baking pan (to catch drips; if grilling)
Ingredient info: Barley malt syrup has a flavor similar to molasses. Look for it at natural foods stores or buy it from edenfoods.com.

Steps:

  • For glaze:
  • Bring malt syrup, vinegar, herbs, and pepper to boil in small saucepan, stirring occasionally. Reduce heat to low and simmer until glaze coats spoon, 4 to 5 minutes. Mix in butter. DO AHEAD: Can be made 1 day ahead. Cover; chill. Rewarm before using.
  • For brine, turkey, and aromatics:
  • Pour 4 quarts water into 16-quart nonreactive bowl or pot. Add salt; stir to dissolve. Mix in beer and malt syrup. Insert 1 oven bag into second bag; place in large bowl. Rinse turkey inside and out. Slide turkey, breast side down, into doubled bag. Pour brine into bag. Press out any air; seal bags. Chill turkey in brine (still in bowl) 16 to 18 hours.
  • Remove turkey from brine. Pat very dry, inside and out, with paper towels. Sprinkle main cavity with 2 teaspoons pepper; fill with onions, celery, sage, thyme, and garlic. Close cavity with turkey lacing pins. Tuck wing tips under; brush all over with oil.
  • To roast turkey:
  • Set oven rack at lowest position; preheat to 350°F. Place turkey on rack in roasting pan; add 2 cups water.
  • Roast turkey 2 hours. Brush with glaze; add water if pan is dry. Roast 30 minutes. Brush with glaze. Tent with foil if browning too quickly. Roast until thermometer inserted into thickest part of thigh registers 165°F, 30 to 45 minutes. Brush with more glaze. Transfer to platter; let rest 30 minutes (temperature will rise 5 to 10 degrees).
  • To grill turkey:
  • Prepare barbecue (medium heat). Remove top grill rack. If using charcoal, light briquettes in chimney. When briquettes are covered with white ash, push to opposite sides of bottom grill rack, leaving center empty. Place disposable aluminum pan in center of rack (you will need to light additional briquettes, checking every 30 minutes during grilling time). Replace top grill rack. If using 3-burner gas grill, light burners on left and right sides, leaving center burner off. If using 2-burner gas grill, light burner on 1 side; place disposable pan over unlit side.
  • Place turkey, breast side up, on grill rack over disposable pan. Cover barbecue. Insert instant-read thermometer into hole in hood. Maintain temperature as close as possible to 350°F on charcoal grill by opening vents to increase temperature and closing vents to reduce temperature or adjusting temperature on gas grill with controls. Cook turkey 2 hours, tenting loosely with foil if browning too quickly. Brush turkey with glaze. Cover grill; cook 30 minutes longer. Brush again with glaze. Cook until thermometer inserted into thickest part of thigh registers 165°F, about 30 minutes longer. Transfer turkey to platter. Brush with glaze. Let rest 30 minutes (temperature will rise 5 to 10 degrees).
