1 pound ground beef
2 medium green peppers, cut into 1-inch chunks
1 medium onion, cut into chunks
2 garlic cloves, minced
5 to 6 cups water
2 cans (14-1/2 ounces each) Italian diced tomatoes, undrained
1 can (6 ounces) tomato paste
1 tablespoon brown sugar
2 to 3 teaspoons Italian seasoning
1 teaspoon salt
1/4 teaspoon pepper
2 cups uncooked spiral pasta
Croutons, optional

Steps:

  • In a Dutch oven, cook the beef, green peppers and onion over medium heat until meat is no longer pink. Add garlic, cook 1 minute longer. Drain. Add the water, tomatoes, tomato paste, brown sugar, Italian seasoning, salt and pepper. Bring to a boil. Add pasta. , Cook for 10-14 minutes or until pasta is tender, stirring occasionally. Serve with croutons if desired.

2 pounds lean ground beef
1 onion, chopped
2 stalks celery, chopped
1 (14.5 ounce) can diced tomatoes
2 cups water
2 cups tomato-vegetable juice cocktail
2 cups tomato juice
½ teaspoon garlic powder
salt and pepper to taste

Steps:

  • Place beef, onion, celery and diced tomatoes in a stock pot. Add water, bring to a boil and then simmer for 1 hour.
  • Add tomato-vegetable juice, tomato juice, garlic powder and season with salt and pepper. Bring to boil, simmer for 1 1/2 hours and then serve.

4 cups reduced-sodium tomato juice
3 cups water
3/4 cup uncooked elbow macaroni
1 envelope onion soup mix
1/4 teaspoon chili powder

Steps:

  • In a large saucepan, cook beef over medium heat until no longer pink; drain. Add the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until macaroni is tender.

3 cupsBeef Stock Or Beef Broth, Plus More As Needed
1 wholeYellow Bell Pepper, Seeded And Diced
1 wholeRed Bell Pepper, Seeded And Diced
1 wholeGreen Bell Pepper, Seeded And Diced
4 wholeCarrots, Peeled And Sliced On The Diagonal
5 wholeRed Potatoes, Cut Into Chunks
3 TablespoonsTomato Paste
1/2 teaspoonKosher Salt (more To Taste)
1/2 teaspoonBlack Pepper, More To Taste
2 teaspoonsDried Parsley Flakes

Steps:

  • In a large pot over medium-high heat, brown the meat with the onion, celery, and garlic.
  • Remove the pot from the heat and drain off as much fat as you can. (Discard the fat)
  • Return the pot to the heat and add the rest of the ingredients.
  • Stir to combine, then bring to a boil.
  • Reduce the heat, then cover the pot and simmer the soup for 15-20 more minutes, until potatoes are tender but not mushy. (Cook time depends largely on the size you cut the potatoes)
  • I like the soup to be thick, but if you'd like it to be more "soupy," add 1 to 2 cups more broth OR hot water and heat through.
  • Taste and adjust seasonings, adding more salt if needed.
