1 tablespoon canola oil
1 pound lean ground beef
1 medium-size yellow onion, chopped (about 1 ½ cups)
1 (14.5-oz.) can diced fire-roasted tomatoes, undrained
1 (15-oz.) can black beans, drained and rinsed
½ cup bottled chili sauce
1 tablespoon chili powder
1 ½ teaspoons kosher salt
2 large jalapeño chiles, divided
6 ounces sharp Cheddar cheese, shredded (about 1 ½ cups), divided
1 (8.5-oz.) pkg. corn muffin mix
½ cup whole milk
1 large egg

Steps:

  • Preheat oven to 425°F. Heat oil in a 10-inch cast-iron skillet over high. Add beef and onion; cook, stirring often, until beef is browned and crumbly, 5 to 7 minutes. Stir in tomatoes, beans, chili sauce, ¼ cup water, chili powder, salt, and 1 finely chopped and seeded jalapeño. Bring to a boil, and remove from heat. Sprinkle top with 1 cup of the cheese.
  • Whisk together corn muffin mix, milk, egg, and remaining ½ cup cheese. Pour batter over hot filling in skillet, spreading batter to edges of skillet. Thinly slice remaining jalapeño; sprinkle slices over top of batter.
  • Bake in preheated oven until cornbread is golden brown, 18 to 22 minutes.

1 pound lean ground beef
Salt & freshly ground black pepper (to taste)
1 tablespoon extra-virgin olive oil
2 large cloves garlic (minced)
1 tablespoon all-purpose flour
1/2 cup beef broth OR stock
1 (8-ounce) can tomato sauce
1 1/2 tablespoons chili powder
1 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
1/2 teaspoon dried Mexican oregano
1/4 teaspoon chipotle chile pepper powder (optional (more or less, to taste))
1 (4-ounce) can mild diced green chiles
1 1/2 cups (6 ounces) shredded Monterey jack cheese (DIVIDED)
2 cups masa harina flour
1 tablespoon baking powder
3/4 teaspoon salt
4 tablespoons (1/2 stick) butter (melted & cooled)
1 1/2 cups milk (at room temperature)
1 egg (at room temperature)
sour cream, salsa, pico de gallo, diced avocado, diced tomatoes, diced onion, chopped cilantro

Steps:

  • With rack in center position, preheat oven to 400°F. Grease a 2.5-quart baking dish (mine was 10.5- by 7.5-inches) or spray with nonstick cooking spray.
  • Set a large skillet, sauté pan, pot, or Dutch oven over medium-high heat. Add the ground beef and cook until no longer pink, breaking apart and stirring as the meat cooks. Drain grease and season with salt and pepper, to taste. Remove cooked beef to a separate plate or bowl and return the pot to the stove.
  • Reduce heat to medium. Add olive oil and minced garlic; stir for 30 seconds or until fragrant. Whisk in flour and stir continuously for 1 minute. Slowly whisk in beef broth and then tomato sauce, followed by chili powder, cumin, coriander, garlic salt, onion powder, dried oregano, and chipotle chile pepper powder (if using), to taste.
  • Bring the sauce to a simmer. Reduce to a low simmer, stirring occasionally, and cook for a couple minutes or until thickened. Turn off the heat.
  • Stir the cooked ground beef into the sauce as well as the diced green chiles and 1 CUP of the shredded cheese. Transfer the mixture to the prepared baking dish.
  • In a medium bowl, whisk together the masa harina, baking powder, and salt. Stir in the melted butter, milk, egg, and the remaining ½-cup of shredded cheese until all ingredients are just combined. The mixture will be extremely thick.
  • Dollop the masa mixture over the beef mixture in the baking dish and spread to the edges, covering completely. Bake, uncovered, for 25 to 35 minutes, or until the top is golden brown and tests done with a toothpick inserted in the center. Serve immediately, plain or topped with your favorite garnishes.

1 lb. ground beef
1/2 lb. fresh chorizo, casings removed
1 tsp. kosher salt
1/2 tsp. black pepper
1 onion, chopped
1 red bell pepper, chopped
3 garlic cloves, chopped
1 14.5-oz. can chopped tomatoes
1 19-oz. can kidney beans, drained and rinsed
1 tbsp. adobo sauce (from a can of chipotle chiles)
2 8.5-oz. boxes corn muffin mix (such as Jiffy), plus required ingredients
3 c. grated pepper jack cheese (about 8 ounces)

Steps:

  • Preheat the oven to 400˚. Heat the vegetable oil in a 12-inch cast-iron skillet over medium-high heat. Add the beef and chorizo and cook, breaking up the meat with a wooden spoon, until browned and cooked through, 4 to 6 minutes. Season with the salt and pepper.
  • Add the onion and bell pepper to the skillet and cook until the vegetables start to soften, about 3 minutes. Add the garlic and cook 1 minute. Add the tomatoes, beans and adobo sauce and stir to combine. Reduce the heat to low and let simmer.
  • Prepare the corn muffin batter according to the package directions. Stir in 2 cups of the cheese.
  • Remove the skillet from the heat and dollop the corn muffin batter over the meat mixture. Spread evenly, leaving a 1/2-inch border around the edges of the pan so it doesn't spill over in the oven. Sprinkle with the remaining cheese.
  • Place the skillet on a baking sheet and bake until the topping is golden brown and cooked through, and the cheese is melted and bubbly, 15 to 20 minutes. Let sit for a few minutes before serving.

This recipe came to The Times in a 2006 magazine article about the 75th anniversary edition of The Joy of Cooking, the soup-to-nuts cookbook found on practically every home cook's shelf since its first publication in 1931. Like many of the book's beloved recipes, this dish is a crowd-pleasing, homespun classic that is incredibly simple to put together. First, make a quick chili of beef, black beans, corn, green pepper and onion seasoned with chile power and cumin. Spread that in a baking dish, top with a simple cornbread batter and pop it into the oven. In about a half hour: tamale pie. Serve with hot sauce, a dollop of sour cream and a few slices of avocado. If you're trying to eat less red meat, ground turkey or chicken would make a fine substitute for the beef.
