BEEFY SOUTHWESTERN CORN PUDDING CASSEROLE

Ground beef, frozen corn, hot sauce, pimentos, and green chiles are combined with milk and eggs and corn bread mix creating this delightfully different main dish meal. A true winner in any weather!

8 corn tortillas, torn into 2-inch pieces
1 ½ pounds ground beef
½ cup salsa
½ teaspoon garlic salt
1 sweet yellow onion, quartered
1 (10 ounce) package frozen corn
2 cups milk
1 cup shredded Cheddar cheese, divided
1 (4 ounce) can diced green chile peppers
1 (4 ounce) jar chopped pimento peppers
2 large eggs
1 teaspoon hot sauce
1 teaspoon smoked paprika
½ teaspoon salt
1 (7.5 ounce) package corn bread mix (such as Jiffy®)
1 (6 ounce) can sliced black olives
2 green onions, thinly sliced, or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Arrange corn tortilla pieces in the bottom of prepared baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix ground beef with salsa and garlic salt in a bowl; spoon mixture over tortillas.
  • Place onion and corn in a food processor; pulse until onion is coarsely chopped. Add milk, 1/2 cup Cheddar cheese, green chile peppers, pimento peppers, eggs, hot sauce, paprika, and salt; pulse until just mixed. Add corn bread mix and pulse until just blended. Spoon corn bread mixture over beef.
  • Bake in the preheated oven until casserole is set in the middle, 45 to 50 minutes. Top casserole with remaining 1/2 cup Cheddar cheese, olives, and green onions. Let Cheddar cheese melt slightly before serving, about 5 minutes.

This recipe came straight from TOH Magazine. Great cold weather casserole. Just throw together a salad and you have a complete meal.

1 lb ground beef
1 small onion, chopped
2 -3 jalapeno peppers, seeded and chopped
1 (8 1/2 ounce) package cornbread mix
3/4 teaspoon salt
1/2 teaspoon baking soda
1 (14 3/4 ounce) can cream-style corn
1 cup milk
1/2 cup vegetable oil
2 eggs, beaten
3 cups shredded cheese, divided

Steps:

  • Preheat oven to 350°F.
  • In a large skillet, cook the beef, onion and peppers over medium heat until meat is no longer pink.
  • In separate bowl, mix corn bread mix, salt, baking soda, corn, milk, oil and eggs.
  • Pour 1/2 of the cornbread mix into a greased 13x9 casserole dish.
  • Layer 1/2 of the cheese next.
  • Layer all of the beef mix next.
  • Top with the remaining cornbread batter.
  • Bake uncovered for 30 minutes, place remaining cheese on top, then cook 10-20 minutes, depending on oven, or until toothpick inserted near the center comes out clean.

Addapted from Southern Living to be healthier. You can cook this in the oven if you like, 40 to 50 mins at 350. Great side with grilled meat, especially BBQ Chicken or Pork. I'm revising this for the size of pan needed.

1/4 cup sugar
3 tablespoons all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons salt
1/4 teaspoon ground cumin
1 1/2 cups egg substitute
2 cups fat-free half-and-half
1/4 cup butter, melted
6 cups fresh corn kernels (about 12 ears)
1 (4 1/2 ounce) canned diced green chiles
1 cup 2% cheddar cheese (shredded)

Steps:

  • Combine first 5 ingredients.
  • Whisk together eggs, whipping cream, and butter in a large bowl. Gradually add sugar mixture, whisking until smooth; stir in corn, green chiles, and cheese. Pour mixture into lightly greased 9x13 casserole dish.
  • Microwave on high about 10 to 15 minutes Stir every two minutes until mixture is set.
  • *6 cups frozen whole kernel corn or canned shoepeg corn, drained, may be substituted.
  • Note: If making 1/2 of recipe, use 8 x 8 dish.

1 (11 ounce) can cream-style corn
1 (10 ounce) can diced tomatoes with green chile peppers
1 (8.5 ounce) package dry corn muffin mix
1 (8 ounce) container sour cream
1 cup shredded Cheddar cheese
1 small onion, diced
1 large egg
2 teaspoons salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 13x9x2-inch baking pan or a large covered casserole dish.
  • Combine both types of corn, tomatoes, corn muffin mix, sour cream, Cheddar cheese, onion, egg, and salt in a very large bowl and mix well. Pour into the prepared pan.
  • Bake in the preheated oven until firm in the center, about 50 minutes.
