"BEEFY" MEATBALLS AND EGG NOODLES



I try not to feed my family a lot of beef but my boys absolutely love it! They get tired of turkey sausage, turkey bacon, turkey burges and so on. So I made the meatballs with turkey burger and flavored it like beef. They were non the wiser!

1 lb turkey burger
1 egg
1/2 c breadcrumbs
1 beef bouillon, cube
1 can(s) cream of mushroom soup
1 jar(s) heinz beef gravy
3 Tbsp worcestershire sauce
1 pkg lipton's beefy onion soup mix
1 can(s) water
3 Tbsp very hot water
1 pkg egg noodles

Steps:

  • 1. Mix together, meat, egg, bread crumbs, Worcester sauce, and soup mix. Dilute the bouillon cube in the 3 TBS of hot water, and then add to meat mixture. Once mixed together make into 1" balls. A 1" cookie dough scooper works great for the balls. Sautee meatballs in a sprayed skillet on medium high until browned, turn to brown on all sides. Transfer the meatballs to crockpot and in the same skillet mix together gravy and mushroom soup with the 1 can of water until blended. Transfer gravy to crockpot and cook on medium for 3-4 hrs. Makes aprox. 2 dozen meatballs
  • 2. Cook noodles according to directions.

Among my memories of a reunion held on my farm are these savory meatballs a family member made. That's where I got this recipe that I now make for potlucks and get-togethers. It's so handy to transport and keep warm in a slow cooker, and it makes a great appetizer, too.

2 slices bread, torn
2 tablespoons milk
1 large egg, lightly beaten
3 tablespoons finely chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds ground beef
1 tablespoon butter
2 tablespoons all-purpose flour
1 can (10-1/2 ounces) beef consomme
2 cans (4 ounces each) mushroom stems and pieces, drained
1 tablespoon dried parsley flakes
1 teaspoon Worcestershire sauce
1 teaspoon beef bouillon granules
1/2 cup sour cream
Hot cooked noodles, optional
Minced fresh parsley

Steps:

  • In a large bowl, combine bread and milk. Add the egg, onion, salt and pepper. Crumble beef over mixture and mix well. , Shape into 1-in. balls. In a large skillet, brown meatballs in small batches over medium heat until no longer pink. Drain on paper towels. , In a large saucepan, melt butter. Stir in flour until smooth. Gradually add consomme. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add the mushrooms, parsley, Worcestershire sauce, bouillon and meatballs. Simmer, uncovered, for 30 minutes, stirring occasionally. , Remove from the heat; stir in sour cream. Serve with noodles if desired. Sprinkle with parsley.

2 (10.75 ounce) cans condensed cream of celery soup
2 (10.5 ounce) cans condensed French onion soup
1 (16 ounce) container sour cream
6 pounds frozen Italian-style meatballs
2 (16 ounce) packages uncooked egg noodles
½ cup butter

Steps:

  • In a large slow cooker, mix together the cream of celery soup, French onion soup, and sour cream. Stir in the meatballs. Cook on high heat for 3-4 hours.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. In a large bowl, toss the pasta with butter. Serve meatballs and sauce over the cooked pasta.

1 lb lean ground beef
8 ounces Velveeta cheese (I use about a half of loaf)
1/4 cup 2% low-fat milk
1 tablespoon chopped garlic
1 tablespoon Worcestershire sauce (to taste)
1 tablespoon onion powder (to taste)
salt and pepper
1 lb whole wheat noodles (ribbons)

Steps:

  • In a large skillet heated over medium heat brown beef until almost all of the pink is gone. Season to taste with salt, pepper and onion powder.
  • Cube the Velveeta cheese into small chunks and put them in a small sauce pan heated over medium low heat. Stirring constantly, add in garlic, Worcestershire sauce, milk, onion powder, salt and pepper to taste. Cook until creamy and smooth.
  • In a large pot boil water and cook noodles to directions on packaging.
  • Once meat is almost fully cooked add in Velveeta sauce. Drain the pasta and add to skillet. Stir and serve.
  • I like to serve this with green beans or carrots. Sometimes I add on a salad for myself. Very quick and uncomplicated. Hope you enjoy!

This is an easy recipe that is a base to do something interesting every time. The variations I like for this recipie includin a few dashes of Worcestershire, a few dashes of habenero hot sauce or to go another direction, a bit of soy sauce with ginger powder. Depends on if you want it hot or with an Asian twist. I have also added cumin, chili powder and some cayenne pepper. Just depends on your mood. You can go fresh or canned on the mushrooms too. (Oh and don't forget, the noodles should be based on your cuisine choice, and the cheese might not be so hot on all those variants.)
