This master cannellini beans recipe is the nutritious and inexpensive way to transform dried, shelf-stable white beans into the centerpiece of your healthy meal prep and batch cooking goals.

1/3 cup extra virgin olive oil
1/2 yellow onion (, chopped)
4 cloves garlic (, peeled and smashed)
1 pound dried cannellini beans (, rinsed, picked over, and soaked in water by 2 inches for 8 hours up to 24 hours)
4-6 cups water
1 cup chicken stock
1 bouquet garni (, or bay leaf and sprigs of thyme, parsley, rosemary, or marjoram)
1 tablespoon kosher salt

Steps:

  • In a large, heavy bottom pot, heat the olive oil over medium heat. Add the onion and garlic and cook for 5 minutes, stirring occasionally, until the garlic is fragrant and the onions soften. Add the cannellini beans with their water and the chicken stock. Add more water to cover the beans by 3 inches. Add the bouquet garni or herbs on their stems with the kosher salt. Bring to a boil. Skim off the foam and discard. Reduce the heat to medium low and cook at a gentle simmer for about 2 hours. Add more water if needed to keep the beans submerged.
  • Once the beans are cooked to your desired tenderness, remove them from the heat and discard the boquet garni (or herb stems). Taste for seasoning and add more salt if needed. Serve immediately or at room temperature, and refrigerate the leftover beans in their cooking liquid for up to 1 week.

3 Tbsp olive oil
1 medium onion chopped fine
1 large carrot chopped fine
1 stalk(s) celery chopped fine
salt and pepper to taste
12 oz ground beef (90/10)
3 clove garlic minced fine
1 Tbsp tomato paste
4 c low-sodium beef broth
28 oz can diced tomatoes
2-15 oz cans cannellini beans, rinsed and drained
3 bay leaves

Steps:

  • 1. In a large Dutch oven add olive oil and heat on medium, stir in onions, carrots, celery. stirring frequently until vegetables are soft.
  • 2. Add ground beef and garlic, cook until browned, breaking apart as it cooks.
  • 3. Stir in the tomato paste to combine.
  • 4. Add the broth, tomatoes, beans and bay leaves.
  • 5. Bring mixture to a boil, then reduce to a simmer and cook until liquid has reduced by half (about 30 min). Remove the bay leaves and discard. Salt and pepper to taste.
  • 6. Ladle into bowls and garnish with grated Parmesan cheese.

750 g rump steak, cubed
125 g pepperoni, sliced
2 tablespoons oil
1 large onion, sliced
240 g tomato paste
1 1/2 cups water
1 cup red wine
salt & pepper
620 g canned cannellini beans, drained

Steps:

  • Heat the oil in a pan and add the onion, beef & sausage, saute over high heat, stirring constantly until the beef juices run.
  • Pour in the tomato paste, water & wine & season with salt & pepper.
  • Bring to the boil & cover & simmer for 45 minutes.
  • Add the beans & cook uncovered for a further 15 minutes.

1 cup diced green bell pepper

¼ cup medium salsa (such as Pace®)
½ tablespoon Greek seasoning (such as Cavender's®)

Steps:
